Lab-grown chicken ‘nuggets' hailed as ‘transformative step' for cultured meat

Researchers are claiming a breakthrough in lab-grown meat after producing nugget-sized chunks of chicken in a device that mimics the blood vessels that make up the circulatory system.
The approach uses fine hollow fibres to deliver oxygen and nutrients to chicken muscle cells suspended in a gel, an advance that allowed scientists to grow lumps of meat up to 2cm long and 1cm thick.
The hollow fibre bioreactor paves the way for whole cuts of chicken, beef, pork and fish to be grown in the lab, researchers believe. The same technology has the potential to produce functional organs, too.
'This looks like a transformative step, it's a really elegant solution,' said Prof Derek Stewart at the James Hutton Institute in Dundee. 'They've created something of a size and scale that people are hardwired to eat: it's the chicken nugget model.'
A major hurdle to growing meat in the lab is the difficulty in getting enough nutrients and oxygen to muscle cells in thick sections of tissue. Without them, the cells die off. As such, many projects focus on growing tiny pieces of meat akin to mince.
To solve the size problem, Prof Shoji Takeuchi, at the University of Tokyo, built a bioreactor that holds living cells in a gel and feeds them with oxygen and nutrients through fine, semi-permeable fibres that pass through the material.
'One of the key challenges in growing thick tissue is that cells in the centre can struggle to receive enough oxygen and nutrients, which may lead to cell death,' Takeuchi said. 'Our system helped address this by providing internal perfusion, allowing us to support the growth of thicker, more consistent tissue.'
Writing in Trends in Biotechnology, Takeuchi and his team describe how they grew an 11g chunk of chicken from a gel that had more than 1,000 hollow fibres running through it. A culture medium rich in nutrients and oxygen was pumped down the fibres to nourish the cells.
Growing meat in larger, more structured pieces could help researchers replicate the texture and appearance of meat such as chicken breast or thigh, Takeuchi said. 'While small-scale or minced cultured meat is easier to produce, it may not fully capture the fibrous structure and mouth-feel that consumers associate with conventional cuts,' he added.
For now, the hollow fibres of the artificial circulatory system must be removed by hand once the meat has grown. But the scientists are aiming to replace them with edible cellulose fibres that can be left in and used to vary the texture of the meat.
Edible fibres may open up other possibilities, too, Stewart said. Meats could be fortified by adding zinc and selenium to the culture medium, helping to boost the immune systems of older people, he suggested. He also wondered if masala sauce could be passed down the tubes to create a nugget version of chicken tikka masala. 'I'd give it a go,' he said.
Takeuchi said future versions of the bioreactor may need artificial blood that carries more oxygen to the cells, to allow the growth of larger lumps of meat. With sufficient funding, he believes products based on the approach could be available in five- to 10 years.
'At first, it will likely be more expensive than conventional chicken, mainly due to material and production costs,' he said. 'However, we are actively developing food-grade, scalable systems, and if successful, we expect the cost to decrease substantially over time.'

Growers are "really excited" about the berry's creation. Scientists have created the first blueberry specifically designed to flourish in Scotland's climate. The discovery has left researchers "really excited". ‌ The unique blueberry has been named by its creators as the 'Highland Charm'. The fruit is the result of around 10 years of research. ‌ The Highland Charm was created as part of a programme at The James Hutton Institute. The institute's breeding site at Invergowrie saw the making of more than 300 unique blueberry crosses. ‌ Every blueberry was investigated to find a selection bred from the native north American species that can flourish in the Scottish climate. The resulting berry has been described as "a real standout". According to blueberry breeder Susan McCallum, the development of the Highland Charm has been met with enthusiasm. She stated that growers are "really excited" about its creation. McCallum commented: "This cultivar is a real standout. It combines high yields, excellent fruit size, outstanding flavour, with a balanced sugar-acid profile and a satisfying bite, and an impressive shelf life. ‌ "It is reliable and has performed well in our trials year after year, with consistent yield, size and taste." The new berry has been successfully trialled in the UK and the EU. It has consistently performed well across multiple seasons and diverse conditions. ‌ UK consumers purchase approximately 60,000 tonnes of blueberries per year. However, 90 per cent of these are imported from overseas. As part of efforts to tackle the problem, researchers are investigating how the cultivar responds under different growing conditions, as well as with reduced input systems, aligning with the industry's goals of sustainability and efficiency. McCallum hopes the new berry will inspire consumers to buy in-season and local fruit. ‌ She continued: "They are fresher with higher health benefits than imported berries that take six weeks to get from the field to the shelves. The imported fruit is often picked slightly too early and while its colour continues to develop, its flavour does not. "I guarantee people will taste the difference with in-season, local fruit and will want to go back for more." Highland Charm is currently going through the licensing process that will declare it to be a "novel and unique blueberry". It is believed that the berry will land on supermarket shelves in between two to three years. According to scientists at the James Hutton Institute, Scotland's fertile soils, abundance of clean water, and milder summer temperatures create optimal conditions for producing high-quality berries. Cooler summers extend the ripening period of soft fruit and allow for greater accumulation of sugars and acids, resulting in "a more intense, well-balanced flavour" compared to berries that ripen rapidly in hotter climates. The Hutton is an internationally renowned research centre whose breeding programme supports the entire fruit supply chain from growers to marketing organisations and retailers.

Ladies – if you want to impress on a first date, or get your partner to help with the housework, there could be an easy trick to use. Experts have discovered that your body odour changes throughout the month to coincide with your menstrual cycle. A new study has found that men are more attracted to the smell of women when they are ovulating – the time at which they are most fertile. So influencing their behaviour could all be down to a matter of timing. 'These results suggest that body odour may in some way contribute to communication between men and women,' the researchers explained. For their study, the team from the University of Tokyo recruited 21 women and monitored them for a month. They were asked to wear absorbent pads underneath their arms at the four different stages of their menstrual cycle. Using gas chromatography–mass spectrometry, the researchers were able to work out three particular aroma compounds that increased when women were ovulating – which usually occurs on day 14 of a monthly cycle, when a woman is most likely to get pregnant. These included (E)–geranylacetone, which has a fresh, floral and slightly sweet scent and tetradecanoic acid, which has a waxy, soapy–like smell. The scientists then asked men to smell a 'control' odour, collected when a woman was not ovulating, and compare it to the same smell but with these aroma compounds manually added. Analysis revealed that men rated the 'fertile' odours as more pleasant, and ranked the faces associated with the samples as more attractive and more feminine. The scent also seemed to reduce stress, they found, and men found these odours more comforting. 'We identified three body odour components that increased during women's ovulatory periods,' Professor Kazushige Touhara said. 'When men sniffed a mix of those compounds and a model armpit odour, they reported those samples as less unpleasant, and accompanying images of women as more attractive and more feminine. 'Furthermore, these compounds were found to relax the male subjects, compared to a control, and even suppressed the increase in the amount of amylase – a stress biomarker – in their saliva.' Writing in the journal iScience, the team said it has previously been proposed that men find female body odours more attractive during the ovulatory phase. 'We identified three ovulatory phase increasing compounds that mitigate the basal unpleasant axillary odour, resulting in the ovulatory–phase body odour being perceived as the most pleasant by males,' they said. 'Additionally, these compounds alleviated hostility and stress…leading to relaxation in males and an enhanced positive impression of female facial images.' The researchers said changes to odour compounds throughout the menstrual cycle could be linked to fluctuations in hormone concentrations. Previous studies have also found that women's voices during their ovulatory period sound more attractive to men, and that photos of female faces during this time are perceives as more desirable. What are the different stages of the menstrual cycle? The menstrual cycle has four main phases – menstruation, the follicular phase, ovulation and the luteal phase. These phases involve changes in hormone levels and the uterine lining, preparing the body for potential pregnancy. Menstruation: The time when a woman has a period and sheds the lining of her uterus. The average length of a period is 3 to 7 days. Follicular phase: Starts on the first day of a period and lasts for 13 to 14 days. Changing hormone levels cause the uterus lining to thicken and follicles to grow on the surface of the ovaries. Usually only one follicle will mature into an egg. Ovulation: When a mature egg is released from an ovary. This usually happens once a month, about 2 weeks before the next period. This is the time a woman is most fertile. Luteal phase: After ovulation, the egg travels through the fallopian tubes to the uterus. The uterus lining continues to thicken in preparation for pregnancy.

Instead, the ten years of research that went into the creation of the Highland Charm – the first capable of flourishing in Scotland's climate – should mean that, in about three years' time, we'll be able to have in-season, local fruit that's tastier and healthier than imports which can take weeks to reach supermarket shelves after being picked.
