Katie, 47, who first sparked worry over her shrinking appearance at the start of the year, recently hit out at critics on Snapchat as she zoomed in on a set of scales.
But she put the criticism behind her for her Middle Eastern holiday and shared snaps of herself on the boat.
She wore a floral bikini top, matched with white linen shorts as she smiled and gave a peace sign over her head.
"I took over a boat in Dubai and became Captain Pricey, and they never had a captain like me before," she captioned the photo which she shared to her Snapchat and Instagram accounts.
Katie has been showing off her body while on holiday in Dubai, including in a bright orange bikini.
But fans have been hounding her about her weight loss and in attempt to put their minds at ease, Katie showed them exactly how much she weighed.
The TV personality, believed to be around 5ft 4in tall, showed her weight as 7st 12lb.
In an attempt to put fears to rest Katie, said in the video: "Everyone is so obsessed with my weight. This is what I weigh. That. That is what I weigh."
The podcaster previously tried to shut down fears over her weight loss, saying she decided to slim down after a long-standing foot injury and attempts at IVF made her put on weight.
Speaking on her Snapchat in May, Katie said: "Yes I've lost weight.
"Yes that what I've wanted to do, I've wanted to lose weight.
"Because the past three, four years ago when I broke my feet and I was in a wheelchair for 10 months because they said I'd never walk again, and obviously you put weight on being in a wheelchair.
"And then I did all the IVF stuff, that also puts on weight.
"So yeah I did put on weight and I hated it, I felt uncomfortable and it wasn't me."
She then explained how, after finishing her failed IVF treatment, she became more active with healthy eating.
"Everyone is talking about it - it's driving me mad," she said. "I'm healthy and I do eat.
"If you look at old old pictures of me in the Jordan days, I was always skinny.
"But today where I have lost weight, I feel, my butt looks like a deflated balloon."

And on Wednesday, the fitness influencer, 31, revealed one of the highlights of her trip. Tammy posted a video to social media after swinging on the world's largest swing in between the mountains. She described the experience as 'therapy' after also bungy jumping in Queenstown. Many followers flocked to the comments to praise the brave mother-of-three for conquering the thrilling adventure. 'Love a queen who is healing and livin!' one person wrote. 'Girl you nearly gave me a cardiac arrest lol so happy to see you doing you as you should,' a second commented. 'I hope any sad feelings you have, have dropped as fast as you did here,' another said. It comes after Tammy revealed her heart is still 'aching' following her split from husband Matt as she mends her wounds in New Zealand. Tammy fled Australia with her three children - Wolf, nine, Saskia, seven, and Posy, three - after news broke of their separation. Earlier on Tuesday, she shared a gallery of images which revealed her post-breakup weight loss as she stays at the idyllic Lake Hayes Cottages in Queenstown. 'The most beautiful stay at @qtcottages,' she wrote in her caption as she posed in front of a private hot tub in her $995-per-night lakeside cottage. 'A blissful escape in the most stunning setting. Not without moments that ache... but healing is never linear and I'm so grateful to be here with my babiesss.' Tammy has spent much of the last week documenting her stay in New Zealand following her split from former Love Island star Matt. On Monday, she shared some photos from her trip to Queenstown and revealed visiting the area would become a new family tradition. 'Something so cosy and comforting about this place,' she wrote in her caption on Instagram. 'I think we're going to have to make this a yearly tradition. The start of something new.' Matt and Tammy are now headed for divorce after just seven months of marriage, with the influencer jetting off to the South Island to recuperate in the wake of their split. Tammy announced her shock split from Matt last month in an emotional video. The former reality star also revealed the couple's separation in a sombre Instagram Story, telling fans the decision was not taken lightly. 'It's with a heavy heart I share that Tammy and I have decided to separate,' Matt began. 'Both of us have struggled with making this decision; however we need to do what is right for ourselves and her three children. 'This wasn't a decision we took lightly. Our time together will always be cherished and never forgotten,' he added, before thanking fans for their support. Despite their short-lived marriage, both parties have asked for privacy as they adjust to life post-breakup. 'We appreciate everyone's support and space at this time as we navigate the split,' Matt concluded in his emotional post.
