Our best tray bakes for busy nights

There are so many things to love about dinners that bake on a tray or two.
There's hardly any prep, very little washing up, and best of all: time to do anything else while dinner's in the oven.
Here are some of our most popular tray bakes, including vegetarian options.
This hearty dinner can be assembled in 10 minutes. It's a complete meal with tinned chickpeas and cherry tomatoes baking beneath the chicken Marylands, with chorizo adding a hint of smokiness.
Pork sausages bake on top of thinly sliced potato and tinned tomatoes in this tray bake that's finished with fresh herbs. The potatoes are parboiled for 15 minutes before everything's combined on a tray and baked.
Chicken thighs, tinned lentils and spices combine in this recipe that requites only 10 minutes of prep time. The lentils bake in cream, adding some decadence to this weeknight meal that's served with lemon wedges, herbs and bread.
A few packets of gnocchi go straight onto a baking tray with broccoli, fennel seeds and lemon slices in this easy weeknight dinner. Add a generous amount of cheese and a squeeze of lemon juice and dinner is ready.
This tray bake takes inspiration from a stir-fry, but everything is baked, except for the rice. You'll need two trays for the recipe, one to bake the tofu and eggplant and a second to gently steam some veggies before everything's combined in a hot honey sauce with soy.
Turn potatoes into a meal in this one-tray recipe, in which thick slices of haloumi are added part-way through the bake. Stir through some leafy greens and chopped mint and enjoy this warm, cheesy salad.

Drive and dine: Where your luxury car can come to dinner

Positioned between the ocean and the village heart of Rose Bay the crowning penthouse in the Villia collection is ready for its first owner. The luxury residence has its own private indoor pool plus its own outdoor spa, more than 360sq m of internal space, a glass garage visible from the living area and views from the harbour to the ocean. From the street Villia, at 1/131 Victoria Rd, Bellevue Hill, looks like a majestic home set behind ornate wrought-iron gates. But behind those gates are very private and bespoke homes poised on a hill where each residence has its own lift, pool and sauna. Pub baron's lavish lifestyle while owing $1bn criticised Highland Double Bay Malouf director David Malouf said the market had never seen anything like this level of luxury living, the penthouse has just been unveiled and buyers were wowed. 'The level of craftsmanship and luxury finishes at this scale has taken prestige living to another level,' he said. The four-bedroom, five-bathroom residence with double parking has a $17.5m price guide in an expressions of interest campaign. The property promises privacy, timeless architectural style and impeccable detailing all within moments of harbour beaches, village cafes and prestigious schools. A lot of thought, imagination and craftsmanship has gone into this tri-level villa which has a huge sense of scale and a subtle nod to European architecture. Developer Travis Su, of Skyland, has spoken of his desire to create timeless design without compromising on space and with families and downsizers in mind. Su talks about a home being a place for celebration and entertaining as well as rest. The Villia has been inspired by romantic memories of European travel. There are soft curves in the architecture, lots of light and even handmade glass especially for this project. There is also an emphasis on wellness at home with the pool, spa, sauna and northeast facing terrace and therapeutic view. Plus there is an entertainment level with 10m of bar joinery with a Subzero wine fridge. The living areas have heated natural stone floors, Venetian plastered ceilings and custom-made joinery with integrated real flame gas fireplace. There are multiple living spaces including lounge, family and a flexible living space with timber flooring that could be used as a home office, studio or cinema. The main bedroom suite has its own private stone balcony, a designer dressing station and a pair of walk-in wardrobes. Again there is underfloor heating in the ensuite, dual vanities, a freestanding bath and beautiful brass detailing. Each of the other three bedrooms have their own ensuite. And the spacious terrace with the stone-clad spa has a custom-designed barbecue. Other features include smart home automation, ducted reverse cycle airconditioning, skylights and even the laundry has stone finishes and brass tapware. Floor to ceiling Vitrocsa glass doors frame the view from inside and the interiors connect seamlessly. Finally, car lovers will appreciate the glass garage that sits above the dining area with a switch to convert the glass from clear to opaque. Quite stunning.

Wedding venue The Lussh finds new Gold Coast home after devastating fire

Dissh fashion founder Maree Henry and daughter Grace Henry-Hicks have secured a lush new events space, after losing another property to a devastating fire last year. The duo, who belong to the family of retailers also behind City Beach, splashed $9m on the sprawling Gold Coast hinterland estate. Operating as Austinvilla Estate, the wedding and events venue was sold in an off-market deal handled by Cohen Handler agents, Luke Serhan and Tom Osborn. Ms Henry launched the popular women's wear brand Dissh, handing the reigns to eldest daughter Lucy Henry-Hicks in 2019. She pivoted to The Lussh, an upscale wedding and events business run from a historic Woolloongabba building which was gutted by fire in September 2024. After months scrambling to re-arrange wedding bookings, The Lussh will rise from the ashes at 31 Austinville Rd, Austinville. Records show the sale settled last month, with the property held by a company directed by Ms Henry and Grace, who hosts 'immersive retreats grounded in wellbeing and personal growth' under the banner Holding Space with Grace. A statement on The Lussh website stated the business continued to offer its services after losing its venue. 'The original Lussh headquarters may be gone, but The Lussh is stronger than ever. We are bringing our signature style and services to venues from Brisbane to the Gold Coast.' Mr Serhan said the businesswomen's brief was 'highly specific'. 'Few properties in the country offer this amount of luxury accommodation, natural beauty, and full-scale event infrastructure. 'This transaction underscores the increasing demand for high-function, lifestyle-driven estates with commercial potential,' he said. The secluded 46.79ha property was set amid soaring gums and preserved subtropical forest, just 15 minutes from the beach. Features included accommodation for up to 92 guests across cabins, suites and lodges along with purpose-built indoor and outdoor event spaces. Ninja Warrior takes on gravity-defying container home The 20 suburbs homeowners never want to leave The property was listed for sale via an expressions of interest campaign in 2022 amid the post-Covid wedding boom, but a buyer was not secured at that time, and it was taken off the market. The buyers agents presented their offer 'following an extensive and tightly managed search'. 'Purpose-built as a premium events venue and retreat space, Austinvilla Estate represents one of the most unique acquisitions in the region: a grand, established estate combining large-scale accommodation, immersive nature, and a complete suite of facilities designed for weddings, retreats, and luxury experiences,' Mr Serhan said. Records show the land last changed hands for $1.2m in 2015 and had since been sub-divided or amalgamated.
