Physicists find key to perfect pasta – but not how Mamma used to make it

It may be only pasta, pecorino and black pepper, but cacio e pepe is not nearly as easy to make as some would imagine.
However, researchers have come up with a scientific recipe that avoids a lumpy sauce every single time – but it all gets a lot more complicated.
Cacio e pepe is made by cooking pasta and using the resulting starchy water to create a sauce with grated cheese and pepper.
Now researchers recommend that the perfect recipe for two involves dissolving 5g of powdered starch in 50g of water rather than using the reserved pasta water – as traditional recipes do. Then, heat the mixture gently until it thickens and turns clear.
Next, add 100g of water to cool the mixture, before blending it with 200g of cheese and adding toasted black pepper.
The resulting sauce should then be mixed with 300g of pasta that has been cooked in slightly salted water until it is al dente, drained and allowed to cool slightly.
This step helps prevent the excessive heat from destabilising the sauce. Finally, they say a little reserved starchy water can be used to adjust the consistency as needed.
'A true Italian grandmother or a skilled home chef from Rome would never need a scientific recipe for cacio e pepe, relying instead on instinct and years of experience,' the researchers write. 'For everyone else, this guide offers a practical way to master the dish.'
Dr Ivan Di Terlizzi, one of the co-authors of the research, said the team consumed about 6kg of cheese for the study, with 'most of it eaten with bread'.
'Although we are still not tired of this delicious dish, one of the authors had blood tests showing very high cholesterol levels,' he added. 'It's the price of science!'
'When heated, cheese proteins change their configuration and, therefore, aggregate,' said Dr Daniel Busiello, another co-author of the study from Max Planck Institute for the Physics of Complex Systems in Germany. Starch, he said, mitigates this effect by binding to the cheese proteins, reducing their direct interactions and hence their formation of clumps.
To explore the secret to a smooth and creamy sauce, researchers carried out a number of experiments using a fixed cheese-to-water ratio, but with varying concentrations of starch. The latter was controlled by dissolving known quantities of dry corn starch in the water.
The results revealed fewer clumps occurred at lower temperatures, regardless of starch concentration, with the team adding that the proteins did not start to clump below 65C. As temperatures increased, higher concentrations of starch were needed to avoid clumps forming and prevent the 'mozzarella phase' – where huge wads of cheese appear.
'At higher starch concentrations, temperature becomes less of a concern, as the sauce remains smooth even with less precise heat control,' said Busiello.
Busiello added pasta water alone contains too little starch to reliably prevent clumping, only producing a smooth sauce with careful temperature control.
'Our recommended scientific approach uses a starch to cheese ratio between 2% and 3% by weight, allowing home cooks to reliably create a smooth sauce without worrying too much about temperature,' he said.

The Italian Health Ministry announced on Thursday (24 July) that, alongside the two deaths, 32 other cases of the virus, mainly in the Lazio Region, have been confirmed in 2025 so far. West Nile virus (WNV) is typically found in birds. It is commonly transmitted to humans through the bites of bird-biting mosquitoes. In May, the UK Health Security Agency (UKHSA) detected signs of the West Nile virus in mosquitoes within the UK for the first time, prompting increased disease surveillance. Although the risk to the UK remains 'very low', here's everything travellers need to know to protect against West Nile virus. What is West Nile virus? West Nile virus is a virus that can be transmitted to humans via bites from infected mosquitoes. Mosquitoes get WNV by feeding on infected birds, but people and animals can also get the virus if they come into contact with infected animal blood or tissues. The World Health Organisation (WHO) says that around 1 in 150 people who are infected will develop a severe illness that 'can be life threatening' such as encephalitis (inflammation of the brain) or meningitis. Where is West Nile Virus found? The virus – from the same family as dengue and yellow fever – was first detected in the West Nile district of Uganda in 1937. Since then, various regions across the globe, such as Europe, Africa, the Middle East, West and Central Asia, and North America, as well as South America, the USA and Australia, have reported cases. Since a 1996 outbreak in Romania, cases have been identified in European countries including France, Italy and Portugal, says UKHSA. Transmission levels of West Nile virus are at their highest in summer when mosquito activity is high. Is West Nile virus in the UK? In May, fragments of West Nile virus genetic material were collected in mosquitoes in Britain for the first time. However, there have been no locally acquired human cases of WNV reported in the UK aside from seven travel-associated reports since 2000, says UKHSA advice. The health agency added that the probability of a human outbreak in the UK is considered 'very low'. Dr Arran Folly, arbovirologist at APHA and lead of the Vector-Borne RADAR project, said: 'The detection of West Nile virus in the UK is part of a wider changing landscape, where, in the wake of climate change, mosquito-borne diseases are expanding to new areas.' What are the symptoms of West Nile virus? Most people who are infected with the West Nile virus will not show any symptoms. However, the WHO says that 20 per cent of people will develop a fever with other symptoms, including: Headache High fever Neck stiffness Disorientation Nausea and vomiting Muscle weakness Advice from UKHSA says: 'Those aged over 50 years old, or with underlying medical conditions (such as cancer, diabetes, hypertension and kidney disease) are at greatest risk of severe disease.' Is there a vaccine? There is currently no vaccine or specific medicine available for human use against the West Nile virus. According to the WHO, any treatment 'focuses on relieving symptoms and supportive care'. If infected, the health organisation recommends: In severe cases, patients are hospitalised to receive IV fluids and pain medication. How can I protect myself from West Nile virus? Taking the usual package of precautions against mosquito bites will lower the risk of WNV for travellers. WHO advice says this includes wearing light, long clothing, using window screens and mosquito repellents, alongside sleeping in an air-conditioned room. Further preventative steps to prevent mosquitoes breeding around your home include the removal of stagnant water and regularly cleaning water storage containers.

If you've always wanted to see the Leaning Tower of Pisa, all you'll need to do is look up next week. An asteroid roughly the size of the famous Italian landmark is currently hurtling towards Earth at 46,908 miles per hour. The space rock, 2025 OW, will drift past our planet next Monday at a distance of 393,000 miles – about 1.6 times the distance to the Moon. Space officials estimate the rock is about 220 feet across, making it larger than the Leaning Tower of Pisa at 185 feet. 2025 OW is one of five 'planet-sized' asteroids getting up, close and personal with our planet over the next few days, Nasa says. The space agency's Asteroid Watch Dashboard says that 2025 OK1, which is estimated to be about 100 feet across, will fly past us today at a distance of 1,360,000 miles. Another airplane-sized asteroid, 2025-OZ, is also doing a drive-by visit of our home today. As you read this, it's about 3,340,000 miles away. On Saturday, two more giant asteroids will pass by Earth on Saturday: the 110-foot-wide 2025 OX will be 2,810,000 miles above your head. While 2025 OU1, about 140 feet across, will be slightly closer at 1,660,000 miles. But none of these rocks are anything to lose sleep over, astrophysicist, science journalist Alfredo Carpineti told Metro. 'There are over 13,000 near-Earth objects of comparative size that occasionally get near our planet,' the senior writer for IFLScience said. 'They could be dangerous if they hit Earth, but fortunately, these five will all fly well beyond the movement of the Moon.' Asteroids are lumps of rock, dust and metal left behind from the formation of our star system 4.6billion years ago. Most do laps around the Sun between Mars and Jupiter in the asteroid belt, some as small as rubble, and others hundreds of miles in diameter. Earth will be slammed by an asteroid about 300 feet once a decade, while one 10 times the size impacts us every 700,000 years. A space rock measuring just 160 feet in diameter can easily devastate the local area and pockmark the Earth, unleashing a force similar to a nuclear bomb – these happen once a millennium. The so-called 'city-killer' asteroid, 2024 YR4, which officials briefly feared had a 3.1% chance of colliding with Earth, is suspected to be 300 feet across. Our planetary defence options include intentionally smashing a satellite into it to nudge it off course or detonating a nuclear bomb near it. NASA's Jet Propulsion Laboratory in California and the Near-Earth Object Coordination Centre in Italy keep an eye on all these rocks whizzing about. They calculate the odds of an asteroid impact as they plot out the possible orbits, which get more accurate as they observe them more. More Trending This is exactly the case with 2025 OW, with scientists being able to predict its orbit for the next century. As of July, Nasa has discovered more than 38,600 near-Earth asteroids, of which 872 are larger than a kilometre. At least seven wandered close to Earth last month alone, with Nasa keeping an eye on 1,798 near-Earth objects on its 'risk list', though all have next to no chance of striking Earth. 'Still,' continued Carpineti, 'it's important we keep tracking them to know we will stay safe in the future.'
