Owner of popular Sydney cafe MLK deli defends herself from social media backlash after not serving famous sandwich
The popular Risky Brisket sandwich, which catapulted them into the Instagram and TikTok foodie spotlight, became a hit thanks to its 170-180 gram portion of grass-fed brisket.
Ms Karakelle however had to take the sandwich off the menu at the weekend after the meal wasn't served, something she says was a choice based on quality.
'The brisket came out of the oven and didn't meet our quality standards,' she says. 'We had used a different supplier due to current beef supply issues, and it just wasn't tender enough,' she told news.com.au
She admitted that they could have used the beef, but rather than taking a shortcut, she opted to not sell it, leading to an online backlash.
When fans came to the counter disappointed, some quickly took to the internet to vent.
'My phone was blowing up, people were spamming us, and we were getting all these one-star reviews,' she recalls. 'I thought, 'You've got to be kidding me' – it broke my heart' she said.
She took to TikTok to explain the situation, and commentors were supportive.
'You actually chose to be a responsible business and not serve a bad product?! Please don't apologise! You did the right thing!' read one comment.
Another added, 'I'd much rather that than be served something rubbish! Good on you for taking pride in what you serve'.
The sandwich is served with a side of pickles and salt and vinegar crisps.

However, Martelletti – the pub's former lessee who operated the Gasometer until it closed in March – has blasted the landlord over the sale of the lease to Pickett. 'Probably a little easier to establish a business when you start by stiffing the previous owners out of around $250k,' he posted on Instagram on Wednesday night on The Gasometer's Instagram account, which he still has control of. Loading 'Landlords being greedy landlords they decided to refuse our perfectly reasonable offer for another party to take over the business with the name and other business assets which lead to us losing the sale price, paying for liquidation and having to make our staff redundant,' he wrote. 'This is no longer the Gaso, this is a cheap shady imitation who have decided to shit on its legacy instead of support it. Stolen not saved.' Martelletti said he did not own any trademarks around the Gasometer, just the trading name the Gasometer Hotel, and said he likely had no legal recourse but wanted to 'shame them for attempting to steal our goodwill off us with zero compensation'.

'Loss of a pioneer': Former Melbourne Storm player and construction CEO Tye Alroe dies suddenly at Gold Coast gym aged 39
Gold Coast property developer Tye Alroe has suddenly passed away at the age of 39. The founder and CEO of Alroe Constructions suffered a heart attack when he was exercising at a Burleigh Heads gym on Tuesday afternoon. He collapsed after feeling unwell and was unable to be revived by emergency services. Mr Alroe is survived by his partner Nikki, daughter Poppy, his parents Vicki and John, and sister Courtney. The developer focused on chasing his building and construction career in 2002, despite having a brief stint at the age of 19 with NRL side Melbourne Storm, where he never made his debut. The 39-year-old began his construction business before founding development company Alroe in 2012. The business specialises in projects across south-east Queensland and northern New South Wales. 'My first job in construction taught me the importance of hard work, resilience and immersing myself in every aspect of the construction process – I learned quite quickly the significance of having a strong work ethic,' he told Ocean Road Magazine earlier this year. 'I am really grateful for where I am today. Alroe has grown into a strong, trusted company, and I'm really proud of the work we're doing.' Tributes flowed through within the Gold Coast construction industry on Instagram following his death. "The loss of a pioneer, someone that never quits, never takes no as an answer! You will never be forgotten," Capra Build Co said. "Unfortunately, we have lost one of the better people in this world," said Callum Smith of Bluewater Interiors. "I'm sure you will be missed by many. You have made a positive impact on so many people and will no doubt be remembered."
