Corvette C8 Turned Food Truck Is About to Set a Guinness World Record

There's a Guinness World Record for just about every achievement you can imagine, plus many you've likely never thought about. One of the more obscure records is for the world's fastest food truck, and an entrepreneur from New Jersey hopes to set it with an International-Harvester Metro van. 'That's way too slow,' you say? Not necessarily: This van is pretty much a C8-gen Corvette underneath.
New Jersey native LJ Koch built the truck, which he calls the Vettro, from the ground up, according to NorthJersey.com . He started the project by buying a 1950s Metro van that he found sitting behind a building in Pine Brook, NJ, and paid $400 for in July 2018. His original plan wasn't to build a race car; he simply wanted to restore it while preserving as much of the patina as possible and use it as a vehicle for his catering business. The project was completed a little over a year later, and the reborn Metro made its maiden voyage in September 2019.
The van's fate took an unexpected turn when Koch ended up with a Corvette donor car. Fast-forward to 2025, and the Metro and the 'Vette have become one. The van's patina is complemented by LED headlights, wheel arch flares, custom-made side skirts, and a rear spoiler large enough to use as a dinner table. The five-spoke wheels tell the rest of the story: There's a Corvette chassis under the toaster-shaped body.
We've seen and written about a lot of custom-built, body-swapped cars, but this is the first time we've stumbled upon a vehicle with both a mid-mounted, 6.2-liter V8 engine and beer taps. The van's interior isn't used for food prep, as the small block takes up a bit too much space, but its rear side panels open to reveal taps on one side (out of a Snap-On tool chest, no less) and a warming area on the other. We'd have to guess that the V8's heat helps keep those trays toasty. Regardless, the Vettro accelerates and sounds like a Corvette. It certainly looks like the world's fastest food truck.
Time will tell whether it earns a spot in the Guinness Book of World Records. Koch will promote the record attempt by taking the Vettro to the Indy 500 over Memorial Day weekend, and the van's first timed run will take place on July 27 on the Indianapolis Motor Speedway ahead of the Brickyard 400 NASCAR Cup Series race. There's currently no record for the world's fastest food truck. Guinness created the category specifically for Koch, so a bone-stock Chevy Corvair Greenbrier running on half of its cylinders could, in theory, claim the honors.
Koch explained that his van will need to hit at least 130 mph in order to set a record and redefine the term 'fast food.' That's well short of the Corvette Stingray's advertised top speed of 194 mph, but the Metro doesn't exactly excel in the aerodynamics department.

The 2007 SSC Ultimate Aero, which set a Guinness-verified production car speed record in 2007 by reaching 256.14 mph, was destroyed during the 'Thunder at the Mountain' monster truck rally in West Richland, Washington. The act was reportedly carried out at the behest of its owner, who instructed organizers that the car must not survive the event intact. The car was crushed by multiple monster trucks, then torn apart by a mechanical 'dragon' wrecker and finally torched by a flamethrower, leaving little more than carbon-fiber shards and charred remains. The move stunned members of the automotive community, including SSC North America founder Jerod Shelby, who called the destruction 'a shameful loss of automotive history.' 'There are only 24 of these cars in existence, and this one set a world record that dethroned Bugatti,' Shelby said in a statement to media. 'It was a symbol of American engineering.' Launched in 2007, the SSC Ultimate Aero was powered by a twin-turbocharged 6.3-liter V8 that produced 1,180 horsepower. In September of that year, the car overtook the Bugatti Veyron's top speed record on a closed stretch of road in Washington State. Chuck Bigelow, then 72, piloted the run without a helmet, backed by a small team of engineers. Though the engine had been removed before the rally stunt, the car's body and provenance remained intact. The destruction appears to stem from a personal dispute between the car's anonymous owner and the manufacturer, although specific details have not been disclosed. With the car now gone, only 23 Ultimate Aeros remain. Automotive historians say the loss erases a tangible piece of modern American racing heritage. The Chevrolet Corvette ZR1 carries the honor of being the most powerful Corvette ever... at least until the ZR1X hits production later this year. Customers are finally starting to receive their cars, so it was only a matter of time before a ZR1 showed up at a dyno for a run. The results are even more impressive than we expected. Paragon Performance in Waukee, Iowa, managed to secure a totally stock ZR1 for a run on its floor-mounted dyno to see exactly how much power the supercar-killing 'Vette throws to the wheels. As a reminder, the twin-turbo 5.5-liter V-8 is officially quoted at 1,064 horsepower and 828 pound-feet of torque at the crank. If you know how cars work, you'll know there's inevitably some power loss as torque travels from the crank, through the transmission, through the differential, and to the wheels. In theory, we should expect a noticeable loss in power in the dyno readings. Except that doesn't happen. In the last dyno run, the ZR1 puts up a reading of 1,028 hp and 839 lb-ft of torque to the wheels. If you factor in drivetrain losses of around 10 percent, this means the ZR1 is actually making closer to 1,180 hp and 920 lb-ft of torque at the crank. That means Chevy is heavily underrating the twin-turbo V-8's real performance. In all likelihood, the factory rating applies to the engine in the most grueling scenarios, like driving through Death Valley or being pushed to its limits on a race track. That means at worst, the engine will at least make 1,064 hp, no matter what. But if you're in a nice, cool dyno room with lots of clean air and no load, you'll make closer to 1,200 horsepower.
