
COVID 5 Years Later: For North Country schools, pandemic was lesson in adaptation
The sudden transition introduced a wave of mass uncertainty for students and their families, teachers and administrators.
Five years later, school districts continue to adapt and learn from the experience, which was a first for many.
Superintendents from across the North Country have reflected on the struggles endured and the progress made toward restoring a sense of normalcy in the last five years.
UNCERTAINTY
For James Knight, Jr., superintendent of the Northern Adirondack Central School District, the most difficult part of the pandemic was the overwhelming uncertainty.
'Frankly, the biggest challenge was all of the unknowns,' Knight said.
Knight said schools had to rely heavily on health departments for protocols, student aid and directives and this limited their ability to plan as 'independently,' as they were 'used to.'
'The controls we normally had were kind of taken away from us,' he said.
'It made it hard for us to find out what we could or couldn't do.'
Tara Celotti, superintendent of Crown Point Central School District, said there were challenges outside the classroom as well.
'Preparing how to educate our students and how to get them fed with free or reduced lunch, which a majority of our students receive, was the biggest hurdle,' she said.
Through the local Backpack Program, students were delivered pantry boxes throughout the week including breakfast, lunches and snacks.
'We transported breakfast, lunch, and snacks via the transport route every two to three days,' Celotti said.
Joshua Meyer, superintendent of Bouquet Valley Central School District, emphasized the difficulties of the transition to remote learning.
'In a district like mine, we're not one-to-one. We did not have the infrastructure for that and we were forced to transition to that very quickly,' he said.
Meyer's district worked with local internet providers to set up hotspots and provide digital resources.
School districts were tasked with rethinking education almost overnight.
Keene Central School District, led by Superintendent Dan Mayberry, was already one-to-one with technology, meaning every student had access to a device.
REMOTE LEARNING
However, remote engagement still posed challenges.
'Engaging with students remotely was the biggest challenge,' Mayberry reflected.
'In the building, you can walk around from classroom to classroom. It's harder to connect with the students on a screen. I think students and families felt a greater appreciation for person-to-person contact when we shut down, they missed that.'
For districts without one-to-one technology, the situation was even more difficult. Northern Adirondack Central School District delivered paper packets to students via bus.
'We were dropping off packets every week via bus and sending them back,' Knight said.
'And this was back when we didn't know how long to wait before touching things, so the packets would sit in the gym for a couple days before the teachers got them back. It was a long process.'
Despite the difficulties, there were some silver linings: schools became more flexible and learned how to adapt quickly.
'Schools, in general, are not so flexible with their regulations and procedures. Until COVID,' Meyer said.
The pandemic required schools to adopt digital platforms, increase technological literacy and find new ways to engage students remotely.
In May 2021, former Gov. Andrew Cuomo announced all New York state schools would reopen for in-person classes in September for the 2021-2022 school year.
Many superintendents reported that this shift was a welcome return, but not without its challenges.
'Now we're fully in person, students are engaged in group work. The wheels of progress continue to turn,' Knight said.
'We are in a pretty good place,' Mayberry said.
'Our students, faculty, and staff have all come back for focused learning. We are working on leadership opportunities for students — they are interacting.'
CLASS SIZES
According to Knight, smaller in-person class sizes during the pandemic might have given students an 'academic advantage,' over fully remote schedules.
'They continue to talk about how students are behind, but we are proud that Northern Adirondack students are in good shape,' he said.
'K-5 students had smaller classes, allowing the teacher to give more attention to each student. So they might be at an academic advantage. But some people were on a two or three-day schedule. They might have lost out on some of that time.'
One of the long-term post-pandemic challenges districts are facing has been attendance.
'Before COVID, we harped on how important attendance is,' Meyer said.
'But now we tell them 'if you are sick, do not come,' and we are still struggling.'
According to Celotti, attendance rates of their pre-K through 12 classes have not returned to pre-pandemic numbers.
'Probably out of fear. We tell them if you feel sick, you need to be out X amount of days — there are regulations. We instilled change in them, and they are still following the status quo,' she said.
MENTAL HEALTH
According to Meyer, the most significant and lasting effect of the pandemic is the mental health crisis it 'exposed.'
'The single biggest thing coming out of the pandemic was mental health,' Meyer said.
'COVID exposed all the inequities in mental health and care. Seeing that coming out of COVID and having a lot of candid conversations about mental health. It's a great thing. More students who need help are able to find the resources they need. That is one of the things we are very proud of.'
Celotti also emphasized the change noting both students and teachers in her district continue to struggle.
'A large percentage of staff have anxiety. There is a high rate of turnover and burnout,' she said.
The pandemic also led to significant staffing shortages throughout the system across school districts.
Many teachers who were close to, or thinking about retirement, chose to leave earlier than they might have otherwise.
'The pandemic made it very easy for anyone on the fence about retiring to retire,' Meyer said.
'Pre-pandemic, they maybe would have stayed three to five more years.'
In addition to teacher shortages, bus drivers, administrators and other essential staff left their positions.
'We had a bus driver shortage and had to ask the community for assistance, encouraging carpooling, and double bus rounds,' Knight said.
'That meant students would arrive late, but we had to make do.'
Despite these challenges, some districts have been able to look at it positively.
'We have been able to hire some really great staff,' Meyer said.
ATHLETICS
Athletics and extracurricular activities, which were severely impacted or entirely suspended by the pandemic, have largely returned to normal.
'We were the only district to cancel fall sports the first semester back,' Knight said.
'Numbers are still down, but will hopefully rebound.'
Meyer was relieved that students were able to participate in athletics, even if seasons weren't at full capacity.
'I was happy. All of our athletic teams had some type of season, not equal to normal and full, but something,' he said.
Field trips and other activities, such as science fairs, have also since resumed, allowing students to reconnect with each other and engage with the learning experience.
While most schools have resumed normal operations, superintendents acknowledge that challenges remain.
'I think it's a yes, but kind of situation,' Meyer said when asked if he feels his district has returned to normalcy.
'Certainly, I think most students and staff would say yes; however, there are a few points. Attendance, and there is definitely some learning loss to make up for.'
Celotti estimates that her district rates at a 7.5 or 8 out of 10 for normalcy, acknowledging the work is not over.
'There is still work to do, and we are making strides,' she said.
One of the more positive outcomes of the pandemic has been a shift in how schools use technology.
'We used to be a paper classroom, but now we are one-to-one,' Meyer said.
Though some classes still use textbooks, the integration of digital tools has become permanent in aiding students to adapt for the future.
Despite the struggles, superintendents remain optimistic about the future.
'We are doing a great job as a school, as a community, and as a state,' Celotti said.
'We are doing what we can to get through this.'

During the COVID-19 lockdown, I worked at the Hollywood Food Coalition, a nonprofit organization that serves as both a food kitchen and a food rescue service. Because all the food is donated to the kitchen, you really don't know what you are going to get day-to-day. Sometimes, the work is easy. Produce like tomatoes and strawberries can be sliced and diced with ease. My favorite fruit to cut is a watermelon. They may look daunting because they are so big, but they are fun to peel and extremely easy to cube. But there are other ingredients that still give me nightmares. Try peeling and dicing 60 butternut squash in a row. It's hell. Even worse is processing hundreds of pounds of jicama — a large Mexican turnip that's as hard as a rock and will make your hands bleed. By far, the worst fruit or vegetable to cut? Onions, and it's for the exact reason you think it is. Sure, cutting one onion at home shouldn't be too much of a problem. But have you ever experienced an Onion Day, where you and your coworkers spend an hour dicing 50-pound bags of onions for the head chef? Five minutes in, and the pain is unbearable. It doesn't matter how fast your knife skills are. It doesn't matter if you try all the 'hacks' like chilling the onions before cutting them or putting a piece of bread in your mouth. When you're working with this kind of volume, they're gonna get ya. Unless, of course, you invest in some high-quality goggles. One important thing to remember: I am not a professional. At all. I didn't go to culinary school and was just thrown into a commercial kitchen and picked up little tips along the way. Recently, I came across this viral TikTok of Chef Grant Sato cutting onions that absolutely floored me and made me wish I had seen something like it years ago. The standard julienne cut creates 1/8-inch slices that are approximately two inches long. Seems simple, right? Well, Chef Sato really breaks it down in a way that helps understand not only this technique but also many more tips and tricks needed for onion preparation of any kind. He begins by cutting off both the root end and the tunic end of the onion. He then cuts the onion in half and removes the dry skin layers. He also keeps all the skins and ends in a bag; these can be used later to make onion powder, soup stock, dyes, and they make excellent compost. Now, Chef Sato really peels back the proverbial layers of proper onion preparation. Looking at a peeled onion, you can see fiber lines that run along the outside. For julienne onions, it's vital that you cut the same way the fiber lines go and not across them. This serves two essential purposes. Hey, you! First, cutting against the fibers breaks more of the cells in the onion, releasing a lot of its internal juices that hold all that good flavor. So, when you go to cook them, they not only lose that flavor, but also their texture is destroyed. Or, as Chef Sato describes it, they turn to 'mush.' And when you're trying to caramelize onions, the last thing you want is mush. Here's where he gives the perfect onion-cutting tip: For cooking onions, always cut along the fiber. For raw onions, always cut against the fiber. It's a simple rule to remember and will always result in the best flavor and texture. The second purpose for cutting along the fibers would have helped me a lot on Onion Day. When you cut an onion along its fibers and break fewer cells, you are decreasing your chances of irritating your eyes. Cutting an onion creates a sulfurous compound from enzymes and amino acids stored in its cells. This compound immediately gets into the air and irritates the glands in your eyes, which produce tears. Think of it like a stink bug's scent or a squid's ink; it's a natural defense mechanism to stop animals from eating it. And we humans are one of those animals. Chef Sato goes further with the julienne technique. He suggests squaring off the onion halves to create uniformity in each cut. Doing it this way allows you to julienne the ends evenly so that they match the middle section cuts. After watching this TikTok, I cried. These were not onion tears but tears of joy, knowing that the next time onions are on the menu, I won't look like I just watched the ending of the movie My Girl. Thank you, Chef Sato. Harsh Gupta, a 19-year-old boy from Kalyan, has achieved what many only dream of—he has secured admission to IIT Roorkee, one of India's top engineering colleges. But what makes his story truly special is the path he took to get there. Harsh's father sells pani puri on the roadside. His family of six lives in a small two-room chawl in Thane district. Potatoes and a smile are the secret to a long life, woman says before 114th birthday
What's older than a blender, penicillin, and the U.S. moon landing? A Michigan woman celebrating her 114th birthday on July 4. Bonita Gibson, a resident at Waltonwood Carriage Park just outside of Detroit, is believed to be the oldest living person in Michigan, according to a Waltonwood representative. Gibson is part of a small population of supercentenarians in the United States, or someone who is at least 110 years old. Other supercentenarians across the country include 114-year-old Naomi Whitehead of Pennsylvania, 114-year-old Mary Harris of Tennessee, and 113-year-old Winnie Felps of Texas, according to the Gerontology Research Group. Gibson became the oldest known living person in Michigan after the death of 114-year-old Irene Dunham on May 1, 2022. The Gerontology Research Group validated her age the following year on May 4, 2023, two months shy of her 112th birthday. Michigan woman flew for the first time at 100 years old Gibson drove until she was 99 years old, and took her first plane ride at the age of 100, flying to San Diego, a lifelong dream of hers, Waltonwood said. Gibson told USA TODAY some of the keys to her living such a long life include: Michigan woman survived multiple historical events, spent great deal of her life in Idaho Gibson was born on July 4, 1911 in a northwestern Kansas city called Hoxie, according to the Gerontology Research Group. She grew up in rural Missouri, and lived through the Spanish Flu Pandemic. As a child, she survived the mumps, measles, and whooping cough, said a representative for Waltonwood Carriage Park. Most recently, she survived COVID-19 in 2020, making her one of the oldest known survivors of the disease, according to the research group. Gibson married Kenneth Gibson, her high school sweetheart, in April 1930 in Oregon, Missouri; the pair married during the Great Depression. The couple lived on a farm at the time. "We had chickens and a huge garden and all kinds of fruit trees,' Gibson told CBS Detroit in July 2023. 'We had plenty to eat. We just didn't have any money to spend.' They eventually moved to Idaho, where her husband's relative had a farm. The move is what introduced them to the potato industry. "He said Kenny can help me in the field and you can be the cook,' Gibson told CBS Detroit. 'I hadn't cooked a thing in my life." After seven years of marriage, the pair had a son, Kenneth Richard, in January 1937. After that, the couple moved to Newdale, Idaho and later, Idaho Falls as her husband worked as a potato farmer. He later worked as a potato broker until he retired in 1977. He died in 2003. After decades in Idaho, a move to Michigan At the age of 102, she began living in a nursing home in Canton, Michigan, where her grandson lives. As her grandson was moving her to Michigan, Gibson had a request for him, Waltonwood Executive Director Angie Hanson told McKnight's Senior Living. 'She wanted to ride on the back of his Harley, but he wouldn't let her,' Hanson said. Gibson still speaks to her son, 88-year-old Kenneth Richard, every night. She also has three grandchildren, six great-grandchildren, and 16 great-grandchildren. Today, she loves reading and cards, watching 'Price is Right' each day, and catching up with her friends at Waltonwood. This year, she plans to celebrate her birthday by participating in the downtown Plymouth Fourth of July Parade. There will be a banner announcing her birthday, Waltonwood said. As Gibson reflected on her life back in 2023, she recalled being married for over 70 years. She and Kenneth made it a point to enjoy themselves, having the most fun in the 1950s and 1960s, she told CBS Detroit. "We would go dancing every Saturday with a group of friends," she told the outlet. When asked what helped to hold their marriage together, she tried to answer from the perspective of her high school sweetheart.
