Scientists Discover a Simple Method to Reduce Mercury Levels in Tuna
A team from the Swedish University of Agricultural Sciences and Chalmers University of Technology experimented with adding the amino acid cysteine to canned tuna – one of the types that can have the most mercury in it.
When tuna is immersed in water containing cysteine, the novel solution removed 25 to 35 percent of the mercury from the fish, according to lab tests. The more fish flesh that was in contact with the solution, the more mercury was taken out into the liquid.
Cysteine was picked for the solution because of the way mercury strongly binds to it – which is how it's able to build up in fish in the first place – and following on from a previous study into mercury removal by the same researchers.
"We believed this would allow some of the mercury to be drawn out and instead bind to the solution and be discarded," says chemist Przemysław Strachowski, from Chalmers University of Technology. "Further research is needed to take care of the removed mercury."
If you've been eating fish without any knowledge of any potential mercury contamination, don't worry: you're unlikely to be consuming enough of it for there to be a danger, though it's recommended that pregnant women and young children only eat a limited amount.
In most cases, the health benefits of eating fish outweigh the potential health risks – though finding a way to reduce mercury levels in fish through the way the food is packaged would certainly reduce those risks even further.
"The beauty of this type of packaging is that it is active while the product is on the shelf," says Strachowski. "No additional production steps would be needed if a method like this were used industrially."
"The application of our results could increase the safety margin for fish consumption."
There were no noticeable changes in the appearance or smell of the fish samples treated with cysteine in the study, and mercury removal continued for up to two weeks. No extra additives were required for the solution to work.
It's going to take further research to turn this into a practical option for fish storage, but the early signs are promising – and the team thinks the methods outlined could be improved in the future.
"Our study shows that there are alternative approaches to addressing mercury contamination in tuna, rather than just limiting consumption," says food scientist Mehdi Abdollahi, from Chalmers University of Technology.
"Our goal is to improve food safety and contribute to enhanced human health, as well as to better utilize food that is currently under certain restrictions."
The research has been published in Global Challenges.

First things first, what is Greek yogurt? 'Greek yogurt is made by curdling milk and then straining it multiple times to remove a significant amount of liquid whey, to result in a thicker, creamier, and much more tart yogurt than regular yogurt. Maybe the only concern surrounding this dairy product is its saturated fat content. While some research shows full-fat dairy, like yogurt, to not be linked to higher cholesterol or heart disease risk, other studies tie saturated fat to increased cholesterol levels, in turn upping cardiovascular disease risk. However, the fermentation process involved in Greek yogurt (and cottage cheese) thankfully converts some of its saturated fat into heart-healthy unsaturated fats, further quelling this concern. 'Fermented dairy, like Greek yogurt, has been associated with benefits for bone, metabolic, and immune health,' McGowan concludes. Ever trendy on social media, many of us likely are pretty familiar with cottage cheese. However, if you're not, 'cottage cheese is a soft, fresh cheese made from curdled milk,' explains McGowan. 'Generally, cottage cheese is rich in casein—a slow-digesting protein that helps with satiety and muscle repair—and provides calcium, selenium, and B vitamins,' shares McGowan. Speaking of B vitamins, 'this protein-packed dairy food is also a great source of riboflavin (B2), which plays a key antioxidant role in reducing cell damage,' Baham adds. Ultimately, cottage cheese is pretty darn similar to Greek yogurt in terms of health benefits. 'Like Greek yogurt, it's a nutrient-dense, high-protein option that can support bone health and weight management,' McGowan summarizes—alongside championing energy metabolism and gut, heart, and immune health. But this brings us to the question, which of these dairy products is actually better for you? While the numbers are very similar, Greek yogurt offers slightly more micronutrients pretty much across the board compared to cottage cheese, with the exception of phosphorus and sodium. It's also slightly lower in calories, a more reliable source of probiotics, and generally lower in lactose. There's virtually no difference between the fat and saturated fat content of the two dairy products. The sodium in cottage cheese, however, is not to be overlooked, as one small half cup serving provides almost a fifth of your daily allowance of the mineral—and most of us eat more than half a cup in one sitting. While cottage cheese might be the only high-sodium food one has in a day, that's often not the case—and prolonged excessive sodium intake can lead to elevated blood pressure levels over time. But when deciding which of the two is the better high-protein snack, cottage cheese technically wins, as it boasts three more grams per serving. That said, they're both excellent choices that offer protein, calcium, and a range of other beneficial micronutrients. ''Better' really depends on the individual and their specific health goals,' Baham agrees. 'If you're trying to reduce your protein intake—like in the case of chronic kidney disease, for example—a dollop of Greek yogurt will be lower in protein than a dollop of cottage cheese. Also be sure to look for cottage cheese that contains probiotics (usually advertised on the packaging). With your plain Greek yogurt and cottage cheese, the culinary possibilities are nearly endless. 'I love adding Greek yogurt to boost the probiotics and protein in my smoothies, or using it as a substitute for sour cream or mayo in my homemade dressings, whereas I like to use cottage cheese in both savory and sweet dishes like tasty dips, fluffy pancakes, and even homemade ice cream to reduce fat and added sugars,' shares Baham. Meanwhile, McGowan loves 'adding fruit, nuts, a drizzle of honey or maple syrup, or spices like cinnamon or Everything Bagel seasoning for extra flavor to either Greek yogurt or cottage cheese.' At the end of the day, it's hard to go wrong with either dairy choice, as both Greek yogurt and cottage cheese offer a range of beneficial nutrients and satiating protein, sure to keep you energized throughout the day. A mosquito killer may lurk in a Mediterranean bacteria
Mosquito bites are much more than just a red and itchy summertime nuisance. The diseases that they carry are notoriously difficult to control and kill over 700,000 people worldwide every year. What's more, many mosquitoes have developed resistance to the synthetic insecticides–the same substances that can also pose environmental and health risks. As a solution, microbiologists are looking into biopesticides derived from living organisms. According to a study published July 7 in the journal Applied and Environmental Microbiology, a bacteria isolate collected from the Mediterranean island of Crete works as insecticides against Culex pipiens molestus mosquitoes. Nicknamed the London Underground mosquito because they bit people sheltering in the city's underground train stations during World War II, this species can transmit dangerous human pathogens, including West Nile Virus and Rift Valley Fever Virus. Extracts with these metabolites produced by three isolates killed 100 percent of mosquito larvae within 24 hours of exposure. It's those metabolites that could be used to develop biopesticides that have minimal ecological side effects, according to the team. 'They degrade more quickly in the environment and therefore don't accumulate, and they often don't kill such a wide range of different insect species as chemical insecticides,' said George Dimopoulos, a study co-author and molecular entomologist and microbiologist at Johns Hopkins University in Baltimore and at the Institute of Molecular Biology and Biotechnology (IMBB) in Crete. [ Related: Mosquitoes can sense our body heat. ] In microbiology, an isolate is a single species of bacteria that has been separated out from a mixed culture and also obtained from a pure culture. As a result, all of the bacteria in the culture are the same type. This makes it easier for biologists to study and identify that specific bacteria or bacterium. For this new study, Dimopoulos and IMBB molecular biologist John Vontas collected 186 different samples from 65 locations across the island of Crete. The samples included topsoil, soil from around plant roots, plant tissues, water samples, and dead insects. Then, they exposed C. pipiens molestus larvae to water solutions that had the most promising isolates found in the samples. Killing mosquito larvae before they grow into adult mosquitoes is a common control method since the insects reproduce so quickly. More than 100 of the isolates killed all of the mosquito larvae within a week and 37 of those killed the larvae within three days. Those 37 isolates represented 20 genera of bacteria, many of which have not previously been identified for use in biopesticides, according to Dimopoulos. Additional analysis revealed that the rapid-acting bacteria did not kill the larvae through infection. Instead it spurred the larvae to produce compounds like proteins and metabolites–small molecules produced when an organism is breaking down food. This method is promising because it suggests that an insecticide using this bacteria would not depend on the microbes staying alive. Not being too dependent on living microbes could potentially make the biopesticides work longer. This method could have implications for controlling mosquitoes and potentially agricultural pests. The team is also studying the chemical nature of the insecticidal molecules more closely and pinpointing whether they are proteins or metabolites. They're also mapping out how much pesticidal activity the bacteria is capable of, including screening the isolates against other strains of pathogen-bearing mosquitoes and insects that threaten crops. Since biopesticides often degrade quickly and require multiple applications, finding the right way to formulate and deliver these compounds will be a challenge in the future. 'It's now entering the basic science phase to understand the molecules' chemical structures and modes of action, and then we'll shift to a more applied path, really aiming at prototype product development,' Dimopoulos said. 'There is a major push toward developing ecologically friendly insecticides.'
