
Making Italian feast great beyond words
The 49-year-old, affectionately known as chef Moka, speaks very little English and has even weaker command of the language of the cuisine he has chosen to specialise in.
And yet, Yonezawa has managed to helm four restaurants, first in Malaysia and subsequently the resort area of Niseko in Japan, throughout his 30-year career.

Genesis John Dibble, a Malaysian who has been working with Yonezawa for the past six years, revealed that his boss manages by using sign language as the main method of communication. Another method is the use of simple sentences of at most four words.
For example, if an urgent order for pasta has come in, something along the lines of 'make pasta faster' is uttered.
The biggest credit, however, goes to Yonezawa's wife, Noriko, a sommelier and fluent English speaker, for being his trustworthy translator for the past 21 years.
The couple met in 2004 while both were pursuing their studies in the field of culinary arts in Florence, Italy.
The silky Scallop Chawanmushi topped with salmon roe is a highlight of the feast.
According to Noriko, Yonezawa had impressed her with an artichoke and fresh tomato pasta. Married in 2007, the couple have a 17-year-old daughter.
Noriko and Dibble shared these anecdotes during a preview of 'The Ritzy Weekend Feast' at The Ritz-Carlton Kuala Lumpur, where Yonezawa will be showcasing his artistry and culinary repertoire as the weekend buffet's guest chef.
Diners can expect to be impressed with his array of dishes.
At the preview, three starters were prepared. One was Smoked Duck with Strawberry Coulis and Balsamic Sauce, with the coulis and sauce drizzled delicately over the cold cuts of duck. For a touch of freshness, it was garnished with strawberries, orange and kiwi.

There was also a Sea Bream Carpaccio. Sprinkled with pink pepper and given a dash of colour with yellow cherry tomatoes, the fish, sliced paper thin, sat atop a bed of fennel surrounded by small dollops of cherry tomato sauce.
Of the three, it was the silky and flavourful Scallop Chawanmushi, made with fish stock and topped with salmon roe, that stole the show.
Diners, who had come back for seconds (and thirds) were heard saying, 'one is not enough'.
For main courses, Yonezawa made Spaghetti with Mustard Greens, Cherry Tomatoes and Sliced Squid, and Chicken Cacciatore, a hearty stew simmered in a tomato sauce, enriched with zucchini, eggplant and capsicum.
The pasta dish can also be enjoyed with the sauce from the cacciatore.
The secret behind the cacciatore's flavourful quality lies in the fact that, in the chef's own words, it was 'made with love'.
Another main course to look out for is the Baked Salmon Cartoccio. Encased in a paper papillote, the fish dish was served accompanied with a green sauce of parsley, basil and garlic, blended in olive oil.
Yonezawa will be showcasing his Italian dishes at 'The Ritzy Weekend Feast' until May 31.
The buffet is served on Fridays and Saturdays, from 6.30pm to 10pm. It is priced at RM170++ per person.
In addition to the dishes prepared by the guest chef, diners can also expect an array of dishes from the hotel's kitchen team.
The roast beef, which comes with Yorkshire pudding, is a sure draw.
Separately, the hotel's RC Bar is serving a 'one-for-one' offer on all Mom Gin cocktails every Thursday.
There is a choice of five cocktails, using different ingredients such as sparkling wine, liqueur, dark chocolate, and tea paired with the label's different flavours.

TOKYO, July 25 — Sony has bought a strategic 2.5 per cent stake in Japanese game franchise giant Bandai Namco, which owns 'Gundam' and arcade classic 'Pac-Man', with a view to growing its anime business. Booming global appetite for Japanese animation has become a money-spinner for Sony, which acquired online anime library Crunchyroll in 2021. 'As two of the leading Japanese entertainment companies, Bandai Namco and Sony will focus on expanding the fan community… and strengthening engagement, particularly in the anime field where rapid market growth is anticipated,' said a joint statement released yesterday. With the 68 billion yen (US$460 million) transaction, the companies plan 'to create new and emotionally moving experiences for fans', it said. Sony's rival Nintendo already owns a 1.8 per cent stake in Bandai Namco, which also publishes the games 'Elden Ring' and 'Tekken', said Atul Goyal, equity analyst at Jefferies. 'Building on joint intellectual property successes like 'Gundam SEED FREEDOM', and 'Demon Slayer', the move aims to reinforce Sony's upstream IP strategy and Bandai Namco's global expansion push,' Goyal wrote. Respect for Zero rages at world with suitably angry soundtrack
NOT an album per se, Overtime is Italian hardcore outfit's debut recording for the Time to Kill imprint. Released on June 30, this prime slice of hardcore punk is full of rage, angst and undisguised aural violence – all condensed into a 10-minute EP. Taking the raging slam that has its roots in the Big Apple's NYC hardcore scene, the sound of youth rebelling and railing against the system has spread far and wide. This is very much the case here as the band's stated philosophy is very much of the left-wing variety. Formed in Sant'Elpidio a Mare, Italy, in 2013, the band is known for its strong stance against fascism and oppression, advocating for those treated as 'zero' to stand up and fight back. The band's music channels the rage of a generation facing repression and stifling of underground culture. That bit of the band's bio on 'rage' is apparent from the get-go, with opener Reaching Death threatening to rip off listerners' faces with its opening salvo. Intense, angry and downright violent would be apt descriptions of all four tracks here, with Mirrors having the additional groove to inspire lots of pogoing. Sagnol will also have fans of this genre creating a circle pit in their own bedrooms such is the ferocity of the song's delivery. Despite being in existence for a dozen years, Respect for Zero's studio output is slim, with just the one previous full-length album – The Truth Remain, released in 2015. With a new label supporting its endeavours, it is hoped that there will be much more music from Respect For Zero. The evidence heard on Overtime is very promising – a solid clanking bassline underpinning chugging riffs that are both meaty and groovy. This is angry music made by angry young men, with themes of alienation, hopelessness and despair adding grist to the mill. Powerful stuff.

Dancer Lee Kai Yin shares first photo of face since Mirror accident in 2022

The 30-year-old, also known as Ah Mo, was critically injured in July 2022 when a giant LED screen fell on him during a concert by popular Hong Kong boy band Mirror at the Hong Kong Coliseum. Lee suffered a severe spinal injury and was in critical condition for more than a month. Reports then said he faced the possibility of being paralysed from the neck down. Hong Kong media said he has left the territory to continue his treatment overseas. On July 23, Lee posted on Instagram several photos, including one of himself in a wheelchair. Although filters were used on the face, the tattoos on his chest and one of his arms matched those in old photos of him. A scar was seen near his collarbone in the latest photo, which was probably caused by a tracheostomy tube in his neck. 'It's me!' he wrote in English, before adding in Chinese: 'I was encouraged by what the daughter of an optical shop owner said yesterday, so I'm going to share some of the little things which made me feel good lately and see if I can pick up energy from you all.' He posted a picture of the items on his table – including K-pop girl group NewJeans' official light stick and three Teletubbies figures – two photos of a sunset and two artificial intelligence-generated pictures of his cats. His girlfriend So Ching, a former member of Hong Kong girl group Collar, shared his post on Instagram Stories, writing: 'If I were half as strong as him.'
