
Culinary Traditions Travel Company Lets Taste Take The Lead
When you picture Mexico what do you see?
It is quite possible that whatever you are imagining right now, barely skims the surface of what Mexico can offer a newcomer, especially in terms of the people, the food, and the culture on a whole. Mexico is so very complex and varied in every way, that the mother/daughter duo behind Culinary Traditions, has made it their mission to dispel what you think you know, add to it, then douse you with a yearning to fall in love with what you discover on one of their many, highly-curated trips.
Led by award-winning Chef Iliana de la Vega, and daughter, journalist Isabel Torrealba, the company started in 2015 as Mexican Culinary Traditions. Rebranded this year for its tenth anniversary, they've begun to offer locations outside of Mexico. The duo runs anywhere between 15-18 trips a year to: Mexico City, Oaxaca, Merida, Yucatan, and, as of 2024, Chile. The goal is to soon add Argentina as well.
The goal of the travel company has been to share the many riches of Mexican culture-- especially things that often get overlooked--as well as to help debunk some of the many misconceptions. Sure, you will find tacos, truly excellent tacos; and surely, you will find tequila, but there are so many more gems to Mexican cuisine and culture, it is a shame when the surface is barely scratched. This is where de la Vega and Torrealba come in. Did you know Mexico has a rich and evolving wine culture? The tour though Mexico City includes wine-tasting with a Mexican wine sommelier; historical walking tours; a canal ride and farm tour lunch in Xochimilco to learn about the ancient Chinampa farming tradition; and what many travelers on the tours anticipate, a day to shop for ingredients then cook with Chef de la Vega.
'I'm so proud of many things from Mexico,' Chef de la Vega said. 'I want to be able to show that the perception of Mexico--the cuisine, the people--the traditions, and the culture, has been limited."
In 2022, de la Vega became the first winner of James Beard's Best Chef: Texas category (previously the Southwest division), which, not only opened many eyes to the state's expanding culinary experiences but brought a new flock of foodies to Austin, and to her restaurant El Naranjo, specifically. The restaurant first opened in Oaxaca in 1997 with her husband, Ernesto; however, political unrest in the region in the early 00s caused them to uproot their family to the United States.
Once settled in in the U.S., Chef de la Vega taught 'Latin Food Ways' at the San Antonio branch of the Culinary Institute of America during the family's first few years. In 2012, she and her husband reopened El Naranjo in Austin after running a food truck of the same name for two years.

More recently, de la Vega's eldest daughter, Ana Torrealba, became the restaurant's Chef-De-Cuisine, giving de la Vega more time to host the tours she guides with daughter Isabel as well as spend time teaching and consulting. For example, de la Vega works with university's like Stanford each year to freshen up their dining hall options and teach campus staff about seasonal ingredients and how to incorporate new recipes.
When talking to Isabel about the unique work they do through Culinary Traditions, she doesn't discount that it is fun and wonderful, but admits it is indeed a lot of work. 'All of that back and forth can wear you down,' Isabel said. 'Your brain has to be on for a long portion of the day and even leading up to the trip, you're doing all the groundwork to get it going,' she added.

The amount of planning, correspondence, and coordinating with vendors and hotels, chefs and restaurants, tour guides and drivers, takes countless hours months before the touring season begins. Then, when the tour is in high-gear, there's the physical demands of actually being with each group all day or on call for upwards of 15 hours a day for the duration of each week-long tour.
Nevertheless, she too gets to feel like a traveler discovering new things no matter how many times the trip repeats. There's always some new restaurant or museum or facet of the trip that she looks at through fresh eyes. As a matter of fact, as an amateur photographer, Torrealba has the pleasure of adding countless new images to her own growing collection while using them to market and brand the trips for Culinary Traditions. '
As the photographer on many of the trips, she gets to explore in a different way than when she is otherwise, operationally, crunching numbers, enrolling travelers; and making sure each tour runs smoothly. 'Even I, as a Mexican, born and raised, am still learning. I still encounter things I've never seen before," Isabel said. 'Mexico is not just one homogenous thing. That's something I try to communicate. The food is not just one thing; the food, the people, the country; It is a complex place.'
The trips occur between September and April, then during the rainy season, between May and August, Isabel and de la Vega are in administrative mode, updating the website, enrolling travelers, and investigating new restaurant or museum locations for the upcoming series of trips. 2025 will be the second year in a row they've offered an experience in Chile, working in part with celebrated Chef Pilar Rodríguez.
As a women-owned and led team, the duo tries to highlight as many women chefs as possible, so when Chef Rodriguez came aboard, they were thrilled. Rodríguez was the first woman recognized as a United Nations Tourism Ambassador in gastronomy and wine; she was also recently named one of the '50 Most Powerful Women in Chile'. When it comes to working with family there are those who think absolutely not, and others who have found it inordinately rewarding. This mother/daughter team seem to be of the latter camp and actually count themselves lucky.
'In the early years, I remember sometimes being frustrated when I wanted to implement something new and we didn't always agree,' Isabel said. 'I was young and she had more experience. But that's changed and now I feel free to make decisions and I know she trusts my judgement and vision.' It is truly an honor to be able to work and learn from my mom. And Chef de la Vega noted, 'When we are traveling we spend a lot of time together, it's not a 9-5 work relationship, it's 24 hours to spend with another grown-up human being. Love and respect have been key to have a good relationship.' It's a privilege to get to be that close and getting to know her not only as my daughter, but also as a colleagued. Make Yourself at Home cookbook author Janae Royston recently traveled with Culinary Traditions to Mexico City. Of the trip, she noted, 'It was an incredible way to experience Mexico City and the wide range of cuisines and culture, which is my favorite thing about travel and deeply influences what I like to cook at home.'
Over the last decade, Culinary Traditions has seen many repeat travelers; some who have even signed up for each tour offered in the company's portfolio. There are others who have been following Chef de la Vega since she first opened El Naranjo in Oaxaca. Further still, there are travelers anticipating new destinations and awaiting all the ways they can taste their way through another rich culture and cuisine.

Southwest will begin flying to St. Thomas in 2026
Southwest Airlines will begin serving St. Thomas in early 2026. The airline has yet to provide further details, including specific routes, or even how many routes it will fly to the U.S. Virgin Islands locale. A launch date has also not yet been set as the airline awaits regulatory approvals, but Southwest said tickets will be available for purchase soon. This New Hot Springs Near Zion National Park Has Over 50 Geothermal Pools and Stunning Rock Views
Zion Canyon Hot Springs just opened near Zion National Park with over 50 geothermal pools inspired by global destinations. It was built to revive public access to the area's healing waters and create a top-tier hot springs retreat in the U.S. can now soak in Iceland, Japan, and New Zealand—all in the Utah desert. Just minutes from the towering sandstone cliffs of Zion National Park, an unexpected wellness oasis has emerged in the quiet town of La Verkin, Utah. The newly opened Zion Canyon Hot Springs is bringing over 50 geothermal and mineral-rich pools to the desert plateau, including some that mimic the healing waters of faraway destinations like Iceland's Blue Lagoon and the Dead Sea. The pools are fed by the legendary La Verkin Sulphur Springs (aka Pah Tempe) and set against a healing backdrop of crimson canyons and endless sky. Just 30 minutes to the east sprawls Zion National Park, the second most visited U.S. national park in 2024. "It was such an honor to be approached by La Verkin to create this destination and reopen public access to these special waters in recognition of our success launching Iron Mountain Hot Springs in Glenwood Springs, Colorado,' Steve Beckley, co-founder of WorldSprings, said in a press release shared with Travel + Leisure. WorldSprings already operates hot springs in Dallas and the aforementioned facility Glenwood Springs, Colorado, but the new Zion Canyon Hot Springs is its largest property. 'We're excited to open what will be a premier hot springs destination in the U.S. and welcome guests to an oasis where they can relax, rejuvenate, and connect with nature,' Ronald Neumann, the general manager and vice president of Zion Canyon Hot Springs, said in the press release. In addition to providing access to natural hot spring water surrounded by some of the nation's most renowned red-rock views, a day at Zion Canyon Hot Springs is a full-body journey with cold plunges, barrel saunas, an on-site eatery, and a family-friendly freshwater pool. The geothermal pools range between 88 degrees to 104 degrees, with a natural mineral makeup that is said to reduce stress, improve sleep, and enhance recovery. The facility's 16 WorldSprings pools mimic the mineral content of iconic hot springs around the globe, allowing Utah visitors to experience the natural waters of Japan, Guatemala, and New Zealand, among others. Zion Canyon Hot Springs is split into a family and adult-only section. Both sections have natural hot spring pools and barrel saunas, but the family side has a large freshwater pool and a whirlpool, while the adult's side has cold plunges and the 16 WorldSprings-inspired pools. The water is sourced from local natural hot springs that produce around seven million gallons of 107-degree water daily, according to the county water district. Rates for Zion Canyon Hot Springs start at $49 for the adult-only side of the facility and $39 for the family-friendly section. A three-hour reservation to the family section starts at $25 for kids under the age of 13. There are also cabana and towel rentals. San Miguel Allende's Newest Luxury Hotel Puts You in the Heart of Its Historic Downtown—Plus, It Has the Area's Only Rooftop Pool
Design lovers will love this property, which skillfully fuses historic Mexican architectural details with contemporary, modern style. The location is delightfully walkable while still being a quiet place to retreat at the end of the day. For a scenic place to cool off, head to the rooftop pool, the only one in the historic downtown area. Upon arrival, you'll be given a warm welcome by Pancho, the hotel dog. Calling all late risers: You can have breakfast until 2 p.m. at Enrique. Located in Mexico's highlands in Guanajuato, San Miguel Allende is known for its charming cobblestone streets, baroque architecture, and lively culinary scene, attracting visitors from around the globe. In 2008, it became a UNESCO World Heritage City and it was named the best city in the world by Travel + Leisure readers in the 2025 World's Best Awards. San Miguel Allende is home to a host of hotels, including the splashy new Numu Boutique Hotel. Numu skillfully blends San Miguel Allende's history with modern luxury—it's a great destination for art and design lovers with custom works around the property by Mexican artists that pay homage to the local landscape. There are seven accommodation types that travelers can pick from, ranging from the 409-square-foot room with a king bed and a garden view to the Presidential Suite, which clocks in at 1,464 square feet and has a private rooftop terrace with a hot tub and views of San Miguel's Parroquia de San Miguel Arcángel. I stayed in a king suite, which was furnished with a plush bed, a working desk, a couch, and plenty of room to stretch out. Each room also includes a large bathroom with rainfall showers. Enrique is a "late breakfast," farm-to-table Mexican restaurant, which serves things like San Miguel eggs, chorizo, and fresh large pastries until 2 p.m. Lunch and dinner options include everything from tapas and crudo to pasta and tostadas. On the rooftop, you'll find Noia, which serves Mediterranean-Mexican fusion for lunch and dinner along with incredible views of San Miguel's historic downtown. If the atmosphere wasn't enough, you can also expect perfectly prepared steaks paired with inventive cocktails. Guests can even take cooking classes with head chef Omar Tovar or mixology classes with guest bartenders. Feeling thirsty? The pool is serviced by Noia, so you'll get to enjoy top-notch food and drinks during your sunbathing session. Numu has the only rooftop pool in San Miguel's historic downtown, ensuring that you'll have a one-of-a-kind experience while simultaneously beating the heat. Numu was conceptualized and is operated by Hamak Hotels, a Mexican hospitality company that describes itself as, "not your typical hotel group." Hamak curated a range of activities to help guests explore the area in fun ways, including things like food tours, cooking classes, and mojiganga workshops. During my time at the hotel, I took advantage of this as much as possible. One of my favorite experiences was the mojiganga class, where I got to create papier mache dolls with the only family in town who still teaches this San Miguel Allende craft. I was also able to attend a cooking class where I went to the market with Noia's executive chef, where we bought the ingredients together and cooked two courses. On the ground floor, guests have access to a gym stocked with all the essentials, which is located next to the spa. The relaxation room at Numu's spa. Taylor McIntyre/Travel + Leisure Numu Spa is a wonderful full-fledged spa with a relaxation room, a red light sauna, and a host of treatments including aromatherapy, deep tissue massages, and body wraps. Much like the hotel's general ethos and philosophy, treatments at the spa are inspired by the hotel's surroundings, and treatments often feature the use of botanicals like sage, aloe vera, passionfruit, and starfruit extracts. I opted for a massage after my flight, and my masseuse was very thorough in finding the exact pain points to focus on. Numu is pet-friendly and even has a hotel dog. Pancho is a friendly Bernese Mountain Dog that guests can usually find napping by the front desk. Guests can walk Pancho any time, and if you let the hotel know you're arriving with children, they'll be able to provide a miniature stuffed animal version of Pancho as well as a 'paw-written' letter welcoming your little ones himself. The room has other accessible features such as emergency strobe lights as well as a lowered peephole and door latch. The hotel avoids single-use plastics and provides all guests with reusable water bottles and has several refilling stations around the hotel. Both are about an hour and a half drive from Numu. It is possible to hire an airport transfer to and from the hotel, but if you decide you'd rather opt for a rental car, Numu does have complimentary valet parking. Once at the hotel, San Miguel Allende's downtown is completely accessible by foot (albeit with hills and cobblestone), and almost all of the major attractions are no more than a 10-minute walk away. NUMU is a part of World of Hyatt, and is a category six hotel, meaning it will cost you 21,000 points per night. The property is also a part of American Express' Fine Hotels + Resorts program.
