
How processed your food is could put you at higher risk for lung cancer, study suggests

There are many reasons to avoid ultraprocessed foods, including a link with heart disease, diabetes and obesity, but an increased risk of lung cancer may be yet another, a new study suggests.
Ultraprocessed foods contain ingredients 'never or rarely used in kitchens, or classes of additives whose function is to make the final product palatable or more appealing,' according to the Food and Agriculture Organization of the United Nations.
Those ingredients — found in items such as sodas, chips, packaged soups, chicken nuggets and ice cream — can include preservatives against mold or bacteria, artificial coloring, emulsifiers to stop separation, and added or altered sugar, salt and fats to make food more appealing.
People who eat the most ultraprocessed foods are 41% more likely to be diagnosed with lung cancer than those who eat the least, even after accounting for other factors such as smoking, according to the study published Tuesday in the journal Thorax.
For this study, researchers analyzed data from more than 100,000 people who completed the National Health and Nutrition Examination Survey's Food Frequency Questionnaire on their dietary habits and compared the information with medical records for lung cancer diagnoses.
On average, people had nearly three servings a day of ultraprocessed foods, most commonly lunch meat, diet or caffeinated soft drinks, or decaffeinated soft drinks, the study authors wrote.
'Industrial processing alters the food matrix, affecting nutrient availability and absorption, while also generating harmful contaminants,' the researchers added. They specifically highlighted acrolein, which can come from burning tobacco, wood, plastics and gasoline and from cooking fats and oils at high temperatures, according to the US Centers for Disease Control and Prevention. Packaging materials also may be part of the problem, they suggested.
The study is observational, meaning that while the methods were clear and strong, the research still can't definitively prove that the foods cause lung cancer –– just that there is a connection between the two, said Dr. David Katz, a specialist in preventive and lifestyle medicine and founder of the nonprofit True Health Initiative, a global coalition of experts dedicated to evidence-based lifestyle medicine. He was not involved in the research.
'This study strongly suggests that (ultraprocessed foods) may contribute to lung cancer risk,' he said.
Lung cancer is a common form of cancer, with an estimated 2.4 million new cases worldwide in 2022, according to the World Health Organization.
Smoking is the main contributor to lung cancer risk, but people who don't smoke can still get it, which suggests other factors are at play, Katz said.
The authors adjusted for factors, meaning that they accounted for other possible things that could increase lung cancer diagnoses, including whether or not a person smoked, but it's important to note that the measurements were not nuanced, said Dr. Fang Fang Zhang, The Neely Family Professor and chair of the division of nutritional epidemiology and data science in the Friedman School of Nutrition Science and Policy at Tufts University in Boston. She was not involved in the research.
'Because smoking is a very important risk factor for lung cancer, adjusting smoking in a crude way could leave a large room for residual confounding,' she said in an email. 'It will be important to adjust for the intensity (e.g., cigarettes/day) and duration (e.g., years of smoking) or the cumulative exposure of smoking (e.g., pack-years). However, the authors found that the association between ultra-processed food consumption and lung cancer risk was stronger among never-smokers.'
There hasn't been a lot of research into ultraprocessed foods and lung cancer risk, but a lot of existing evidence shows how important diet quality is for predicting premature death from all causes in the United States, Katz said.
Often, ultraprocessed food consumption is associated with a lower diet quality, such as a higher intake of saturated fats, chemicals, salt and sugar, as well as higher calorie consumption, he added.
These factors 'can drive inflammation –– a primary pathway in the development and progression of cancer –– and damage the microbiome, impairing immune system function,' he said in an email. 'This combination of excess inflammation and impaired immunity gives rogue cells the upperhand. … This scenario is where cancer begins.'
Ultraprocessed foods tend to be low in omega-3s, said Dr. Tom Brenna, professor of pediatrics, human nutrition and chemistry at Dell Medical School of the University of Texas at Austin. Omega-3s are essential, healthy fats that the body can't produce on its own, according to the National Institutes of Health Office of Dietary Supplements.
'Omega-3s limit shelf life, so if you're going to ultraprocess something … then you kind of want to get rid of omega-3s,' said Brenna, who was not part of the research.
Additives in ultraprocessed foods, carcinogens formed during processing or chemicals from food packaging might also be at play, Zhang said.
'However, these pathways are not well understood and warrant further investigations,' she said.
The study adds lung cancer risk to the list of reasons to avoid ultraprocessed foods and increase diet quality, Katz said.
Health and diet quality improve when people eat mostly whole, unprocessed foods and largely plants such as vegetables, fruits, whole grains, beans, lentils, nuts and seeds, he added.
If you want to make a change, Zhang recommends starting by reading food labels.
'Avoid foods with long ingredient lists with unfamiliar names — these are more likely to be additives, preservatives, and artificial flavors,' she said. 'Prioritize whole food and prepare meals using whole or minimally processed ingredients whenever possible.'
Instead of focusing on what you won't eat, try prioritizing adding foods directly from nature into your diet, Katz added.
'If you are used to eating a lot of UPFs, transition to less of them, more 'real' foods one better choice at a time,' he said in an email.
It may take a minute for your taste buds to adjust to more wholesome foods, but if you give yourself a couple of weeks to get used to it, you can come to prefer the taste of more natural ingredients, he said.
'Once that happens, maintaining a healthier diet becomes much easier,' Katz added.

Record share of US kindergartners missed required vaccinations last year, ahead of surge in measles cases
A record share of US kindergartners had an exemption for a required vaccination last school year, and coverage for all reported vaccines – including the measles vaccine – was lower than the year before, according to new data published Thursday by the US Centers for Disease Control and Prevention. About 3.6% of incoming kindergartners in the 2024-25 school year had an exemption for a required vaccine, leaving about 138,000 new schoolchildren without full coverage for at least one state-mandated vaccine, the new data shows. Exemptions jumped more than a full percentage point over the past four years, the CDC data shows, and the vast majority – all but 0.2% – were for non-medical reasons. About 286,000 kindergartners had not completed the measles-mumps-rubella (MMR) vaccination series in the 2024-25 school year, as cases climbed this year to the highest they've been since the disease was declared eliminated in the US a quarter-century ago. MMR coverage dropped to 92.5%, marking the fifth year in a row that coverage has been below the federal target of 95%, according to the CDC data. The vast majority of this year's measles cases have been in unvaccinated children. 'Vaccination remains the most effective way to protect children from serious diseases like measles and whooping cough, which can lead to hospitalization and long-term health complications,' the CDC said in a statement. 'CDC is committed to working closely with state and local partners by providing tools, resources, and data that help communities promote vaccine access and awareness.' But the statement also echoed language that is often used by US Department of Health and Human Services Secretary Robert F. Kennedy Jr., saying that 'the decision to vaccinate is a personal one. Parents should consult their healthcare providers on options for their families.' Forty-five states allow religious beliefs to be used as a basis for a vaccine exemption for children beginning school, and 15 states allow exemptions for other personal or philosophical reasons, according to the American Academy of Pediatrics. 'As pediatricians, we know that immunizing children helps them stay healthy, and when everyone can be immunized, it's harder for diseases to spread in our communities,' Dr. Susan Kressly, president of the AAP, said in a statement. 'At this moment when preventable diseases are on the rise, we need clear, effective communication from government leaders recommending immunizations as the best way to ensure children's immune systems are prepared to fight dangerous diseases.' This week, the organization reaffirmed its longstanding position that non-medical exemptions to school immunization requirements should be eliminated. 'The science behind vaccines demonstrates that the benefits greatly outweigh any potential risks,' said Dr. Sean O'Leary, a pediatric infectious disease specialist and chair of the AAP Committee on Infectious Diseases. 'There really aren't good reasons to opt out.' However, in the 2024-25 school year, vaccine exemptions increased in 36 states, according to the new CDC data. In 17 states, more than 5% of kindergartners had exemptions – meaning reminders from administrators to complete paperwork or doctor's visits won't be enough to raise coverage to the 95% goal for two doses of MMR vaccine set by HHS, a threshold necessary to help prevent outbreaks of the highly contagious disease. 'There are more and more states where even the potentially achievable coverage that we can get by catching everyone up who's overdue is getting lower and lower,' said Dr. Josh Williams, a pediatrician with Denver Health and associate professor at the University of Colorado Anschutz Medical Campus. 'So we are now in a situation where in many states, and certainly in many communities within certain states, there's simply not enough herd immunity to protect against outbreaks of these vaccine-preventable diseases, especially measles.' In a study from 2019, Williams and fellow researchers found interesting patterns in vaccine exemptions: When both religious and personal belief exemptions are available in a state, religious exemptions tend to be low, but rates of religious exemptions increase significantly when the personal belief exemption goes away. 'That leads to the kinds of recommendations that you see from organizations like the AAP, basically saying it appears that these exemption policies are not really doing what they were intended to do, that people are kind of using these perhaps in the ways that they were not intended,' he said. Only five states limit vaccine exemptions to medical reasons, according to the AAP: California, Connecticut, Maine, New York and West Virginia. Numbers on MMR coverage in West Virginia were not available in the latest data from the CDC, but the four other states are among the small group of 10 states that reached the federal goal of 95% coverage among kindergartners. In 2023, a federal court paved the way for religious exemptions to be added to Mississippi school vaccination policy. Exemption rates immediately jumped in the state, and MMR coverage has dropped about 1 percentage point, CDC data shows. Overall, nationwide MMR coverage among kindergartners dropped from 92.7% in the 2023-24 school year to 92.5% in the 2024-25 school year, according to the CDC. Experts say that a change like this may seem small but can significantly raise risks. 'It's a small percentage point change that adds up if it happens year over year, and that is what we've been seeing,' Williams said, and the change isn't distributed evenly. 'Individuals who tend to refuse vaccines tend to cluster together. … It's probably that the areas where there have been low uptake now have even worse uptake, and the areas where there have been more reasonable uptake continue to stay reasonable.' The vast majority of measles cases reported in this record-breaking year have been concentrated in Texas. MMR coverage in the state has been trending down for at least the past decade, CDC data shows, with just 93.2% coverage among kindergartners. Exemptions have surged past 4% – well above the national rate – and a law passed by the state legislature this year would make it even easier to get an exemption. Starting in September, the affidavit form to file for an exemption will be available to print from the state health department's website, without the need to file a written request. There was a lot of testimony opposing this change, said Dr. Philip Huang, director of the Dallas County health department. 'We were making the point during the whole thing that there needs to be a consistent message of unequivocal support for vaccinations from the top,' he said. 'We're very concerned about what's happening with HHS and the messaging sort of undermining that.' Experts say that vaccines can sometimes be 'victims of their own success,' with people not realizing how much protection they offer until they see the suffering that can happen when they're not utilized. This year's measles outbreak – which has led to three deaths and dozens of hospitalizations, mostly among children – may raise the urgency around the need to vaccinate and help to start to turn the trend around, experts say. 'The declines that we're seeing for measles and for other vaccines are always concerning, but perhaps in the context of one of our larger measles outbreaks in recent memory, I think a lot of people have it in mind with returning to school this fall,' Williams said. 'In my clinical practice here in Denver, we are getting requests from families who are worried about measles transmission in school and in day care. We've had some families coming in who want to get that protection on board prior to the school year beginning to make sure that their child is going to be as protected as possible prior to going back to school this fall.' Williams says he likes to remind parents that most people support vaccination and that he works hard to gain the trust of parents who are hesitant. 'It's always good to remember that the vast majority of parents vaccinate their kids on time and according to the recommended schedule,' he said. 'When that's not true in a school or in a community, I think that's an opportunity for advocates to speak up and talk to other parents and be partners in the process of improving vaccine confidence.'

The research team theorizes that telling folks their heart age might help spur them to healthier lifestyles and treatment. "Many people who should be on medicine to lower their risk for heart attack, stroke or heart failure are not on these medications," explained study senior author Dr. Sadiya Khan in a news release. "We hope this new heart age calculator will help support discussions about prevention and ultimately improve health for all people." The new heart age calculator, which is free to the public, is available online. Study findings were published Wednesday in JAMA Cardiology. Khan, a professor of cardiovascular epidemiology, and her colleagues at Northwestern University in Chicago, note that the calculator is based on the American Heart Association's PREVENT equations, which talk about a patient's heart risk in terms of percentages. For example, a doctor might use the equation to tell a patient, "8 out 10 people with your [cardiovascular] profile may have a heart event in the next 10 years." Khan's group hoped that expressing the heart's condition as an age might be easier for folks to grasp. To test the new heart age tool, they applied it to data on 14,000 nationally representative U.S. adults, ages 30 to 79, who participated in the National Health and Nutrition Examination Survey between 2011 and 2020. None of the participants had any prior history heart disease at the time of the analysis. In most cases, people's heart age was older than the number of candles on their birthday cake. For example, over the whole cohort, women had an average heart age of 55.4 years, compared to an average chronological age of 51.3, the study found. The news was worse for men: Their average heart age was 56.7, compared to an average chronological age of 49.7. Certain demographic factors were in play, Khan's group noted. Among men, for example, nearly a third of those who had achieved a high school education or less had a heart age that was 10 years or more older than their chronological age, the study found. For men and women alike, being Black or Hispanic also tended to widen the gap between heart age and chronological age. "Black men had a heart age 8.5 years older than their actual age, compared to 7.9 years for Hispanic men, 6.7 years for Asian men and 6.4 years for white men," a Northwestern University news release said. "The gaps were 6.2 years for Black women, 4.8 years for Hispanic women, 3.7 years for white women and 2.8 years for Asian women." The key to shrinking these health gaps is prevention, Khan said. She hopes the new tool can help motivate people. "We hope this tool helps doctors and patients discuss risk for heart disease more effectively so we can better inform what therapies can prevent heart attacks, stroke or heart failure events from ever happening," Khan said in the news release. "The important thing is that we have very good options available in our toolbox to help slow that aging down if we can identify it," she added. "This may be even more important in younger people who don't often think about their risk for heart disease."
