This chef ran one of the Bay Area's best popups. Now he's opening his own spot

An Oakland popup known for late night eats is graduating into a full-blown bar and restaurant.
Chisme is moving out of its sultry lair inside Oakland's Low Bar and over to 347 14th St., where the Kon-Tiki shook Mai Tais until its closing in December.
Chef Manuel Bonilla said the new Bar Chisme will be more of a dive bar, with a small cocktail program with a few original drinks to complement his Filipino-Salvadoran cooking. Gone are the tropical trappings of the previous tiki bar for what will be a more casual, yet eclectic look.
'We're going for 'abuelita's house on acid'. Very homey and very chill,' he said.
The owners of the Kon-Tiki, Christ Aivaliotis and Matt Reagan, shut down their popular spot late last year after seven years in business. Bonilla is familiar with the new location: He was the Kon-Tiki's opening chef.
But his choice to return to the space amounts to a bet on the future of downtown Oakland, as Aiviolitis wrote in a profanity-laden screed that business in downtown Oakland was nearly impossible.
Aivaliotis and Reagan approached Bonilla and his business partners to take over their old corner space. Bonilla is keeping the operation as minimal as possible to protect himself from increasing costs. Unlike its predecessor, there won't be any servers and all orders must be placed and picked up at the bar. The vision: 'Straight up no-frills, but with Chisme's food,' he said.
Bonilla's resume isn't just dive bar food. It includes Oakland's two Michelin-starred Commis, and he currently works at modern Salvadoran restaurant Popoca. At Chisme, Bonilla's dishes have included yucca smothered in black beans, rich sisig pupusas and handmade chicken nuggets. Bar Chisme's menu will lean in a similar direction with the addition of a smashburger and a grilled burger. The house cocktails will feature ingredients like rums and agave distillates, also reflecting that influence.
Chisme took over Low Bar's kitchen in March of last year after the venue's owners announced they were ending their kitchen program. Chisme had made appearances as a popup before settling into its residency. Bonilla's cooking and being the only open kitchen until close to midnight made Chisme a magnet for late night diners or an excuse to stick around for another drink.
Chronicle restaurant critic Cesar Hernandez praised Bonilla's vision, which went from playful to layered. Dishes like tortas stuffed with lechon fuse cultural cues from his Filipino and Salvadoran background. 'His style is loose and fun but never misses a chance to impress, like the family member who steals the show on the dance floor,' he wrote. Chisme was ranked among the best new restaurants of 2024.

These 14 new NYC restaurants were just added to the Michelin Guide

They're officially on the map. Fourteen Big Apple restaurants were added to the Michelin Guide on Wednesday, and shockingly, most of them were not in Manhattan. Brooklyn had the most Michelin newcomers, with eight. Manhattan managed only six. The borough of churches boasted Middle Eastern restaurant Yemenat in Bay Ridge; 6 Restaurant, a European eatery in Carroll Gardens; Mango Bay, a Caribbean place in Fort Greene; Café Kestrel, a a contemporary joint in Red Hook; Taqueria El Chato in Greenpoint; and Enso, a sushi spot in Williamsburg. Two Brooklyn Thai spots — Glin Thai Bistro in Fort Greene and Hungry Thirsty in Carroll Gardens — also made the cut. Manhattan's new entries were: Adda, an Indian restaurant, and Caribbean Kabawa, both in the East Village; Joomak, a contemporary restaurant, and Central Asian spot Laliko, both in the West Village; along with French restaurant Maison Passerelle in FiDi. Glin Thai Bistro in Fort Greene was one of the 14 new NYC restaurants mentioned in the Michelin Guide. Glin Thai Bistro / Facebook Adda, an Indian restaurant in the East Village, was also amongst the newcomers to the list. Adda / Instagram The one Manhattan newcomer above 14th Street was Papa San, a Japanese-Peruvian eatery on West 34th Street. When looking at all the NYC entries in the Michelin Guide, Manhattan leads the way with 263 restaurants mentioned. Brooklyn is second with 82 entries; followed by Queens (18), the Bronx (six) and Staten Island (four).

Man's journey from Singapore Air flight attendant to nasi lemak empire; Singapore has not launched ‘world's first floating prison': Singapore live news

Noorman Mubarak quit his cushy job as a flight attendant for Singapore Airlines in 2011 as he felt unfulfilled. Six years later, he found his calling when he took a chance and opened Nasi Lemak Ayam Taliwang at Yishun Park Hawker Centre. The business has grown into a 31-outlet chain featured in the Michelin Guide. More of his story in the blog below. The Singapore Prison Service (SPS) has issued a statement to debunk claims made online that Singapore has launched 'the world's first floating prison'. Recent social media posts from Instagram users financian_ and had both stated Singapore had built a high-tech floating prison facility anchored 500 metres offshore. Read more in our live blog below, including the latest local and international news and updates: Man's journey from Singapore Air flight attendant to nasi lemak empire When Noorman Mubarak opened Nasi Lemak Ayam Taliwang at Yishun Park Hawker Centre in 2017, it marked the start of a huge gamble for the then 38-year-old. He had initially enjoyed a comfortable and glamorous job as a flight attendant for Singapore Airlines. But after seven years (2004 to 2011) he felt unfulfilled and that he was 'wasting his life serving coffee in the skies.' A spell with an oil and gas company followed but by 2017 he was ready to build something of his own. Noorman decided to add a twist to the classic nasi lemak recipe – with help from his Indonesian wife – and Nasi Lemak Ayam Taliwang was born. Business was slow and Noorman put in heavy hours juggling a full-time job with his new stall. Then, in 2021, Nasi Lemak Ayam Taliwang was included in the Michelin Guide. You can read the full story by Business Insider of how Noorman Mubarak grew Nasi Lemak Ayam Taliwang to a 31-outlet chain featured in the Michelin Guide, here. Singapore has not launched 'world's first floating prison' The Singapore Prison Service (SPS) has rubbished claims 'the world's first floating prison' has launched in Singapore. A recent social media post from Instagram user financian_ wrote that Singapore had built "a high-tech facility anchored 500 meters offshore that's redefining the future of incarceration." The post added that it was "designed to house over 2,000 inmates" and "equipped with AI surveillance, biometric security, robotic patrols and no traditional bars – just geofenced digital boundaries." An earlier post from Instagram user mirrored some of the claims but also suggested the floating prison was created by Singapore to "solve overcrowding and land issues" facing the country. Both posts contain AI-generated images of the 'floating prison'. SPS, in a statement, said it is aware of several social media posts circulating online that Singapore has launched the world's first floating prison. "This is untrue. Neither have we had any discussions or plans for such, nor is there a need." "We urge members of the public not to spread misinformation, nor to be taken in by such wild stories, and refer instead to SPS's website and social media platforms for official information," added SPS. No sign of ransom demands after Qantas hack

Hackers and traders in stolen data have not contacted Qantas following details from millions of customers being taken from a contractor of the Australian airline. The airline confirmed on Wednesday that a cyber attack occurred in one of its Filipino call centres, and customers' names, dates of birth, emails, and frequent flyer numbers were stolen. Other personal information such as credit card, passport, and financial details were not stored in those centres, Qantas has said. In an update on Friday, the Australian Federal Police said Qantas had been 'highly engaged' with the authorities investigating the breach. 'The airline has been highly engaged in assisting authorities and the AFP with investigating this incident,' an AFP spokesperson said. 'Further comment will be provided at an appropriate time.' Also on Friday, Qantas chief executive Vanessa Hudson said Qantas had not been contacted by anyone claiming to have the data, and the airline was continuing to work with government authorities to investigate. 'We know that data breaches can feel deeply personal and understand the genuine concern this creates for our customers. Right now we're focused on providing the answers and transparency they deserve,' Ms Hudson said. 'Our investigation is progressing well with our cybersecurity teams working alongside leading external specialists to determine what information has been accessed.' Qantas was almost in a position to tell affected customers what specific data about themselves had been taken, she said. 'We are treating this incredibly seriously and have implemented additional security measures to further strengthen our systems. Our customers can be assured that we have the right expertise and resources dedicated to resolving this matter thoroughly and effectively. 'I want to apologise again for the uncertainty this has caused. We're committed to keeping our affected customers informed with regular updates as our investigation progresses.' The airline has now revealed they are yet to be contacted by anyone who claims to have the stolen data. In an update released on Friday morning, Qantas said about six million customers had been impacted but that the airline's system 'remains secure'. 'We have also increased resourcing in our contact centres to support our customers and have received more than 5000 inquiries through our dedicated customer support line established following the cyber incident.' The airline issued an email to customers on Wednesday, in which Ms Hudson told those affected they did not need to change their passwords. 'I want to reassure our Qantas Frequent Flyers that there's no requirement to reset your password or pin,' she said. 'If you're having trouble accessing your account, reset your password or call the Qantas Frequent Flyer Service Centre.' Affected customers can contact Qantas' support line on 1800 971 541 or +61 2 8028 0534. Sign in to access your portfolio
