However, I have always wondered what orzata made with orzo is like. And finally an opportunity presented itself when, having lifted cooked barley out of the pan with a slotted spoon, I was left with a pan of cloudy water at the back of the stove. I would have thrown it away, if I hadn't had a glass of orzata on the go. Straight from the pan, the barley water tasted like milk diluted with water, thin porridge and a mouthful of soapy bath water. Undeterred, I consulted Mrs Beeton, who has it in her cooking for invalids section and suggests adding just lemon zest. Then I looked at the ancient Roman guide Apicius, who suggests boiling it with prosciutto and adding pepper. I found my answer on an Italian website called Agrodolce and drained the water, strained it, sweetened it with caster sugar, added a strip of lemon zest, then, for an aesthetic transformation, poured the whole, cloudy lot into an Ikea glass bottle with a stopper. A few hours later, I mixed 50% barley water with 50% fizzy water and added ice and, I have to say, it was fantastic. Yes, ever so slightly soapy still and reminiscent of porridge, but above all like barley, barley sugar and lemon drops, soft, cold and clinking.
The thing about making Roddy orzata is that, as a result, you will have 400g cooked barley to deal with – you can use pearl (hulled) or pot. My suggestion is to mix it with roast vegetables: red pepper, tomatoes, onion and aubergine, a few cooked green beans and lots of herbs.
While this salad is more than substantial just as it is, it can be bolstered by a tin of chickpeas, white beans or tuna, a few snipped anchovies and a handful of olives. It is also lovely with crumbled cheese (feta or salted ricotta), grilled halloumi or chopped hard-boiled eggs. It is also a patient dish that will sit around at room temperature until you are ready to serve. Just add a little more olive oil, a teaspoon extra of vinegar and toss again before you serve, with an optional glass of orzata on the side.
Serves 4
2 red onions, peeled and sliced into chunky moons1 large red pepper, stalk, pith and seeds removed, flesh cut into short, chunky strips1 aubergine, cut into 2 cm cubes300g ripe tomatoes, roughly chopped, or halved cherry tomatoesOlive oil

250g pearl barley
200g cooked green beans, chopped into little bits (optional)1 big handful fresh mint, basil, parsley, oregano, dill
1 tsp red-wine vinegar
1 tsp honey vinegar, or other sweet vinegar (optional)
Heat the oven to 200C (180C fan)/390F/gas 6. Put the onion, pepper, aubergine and tomatoes on a baking tray, spoon over four tablespoons of olive oil, sprinkle with salt and toss well so all the vegetables glisten. Bake for 25 minutes, stirring occasionally, or until the vegetables are very soft and golden at the edges; if they are also a bit mushy, that is fine, too.
Meanwhile, boil the pearl barley in plenty of salted water for 15-20 minutes, or until al dente, then drain and spread on a plate to cool slightly.
Mince the herbs and put them in a large bowl with the lemon zest, three tablespoons of olive oil, a teaspoon of red-wine vinegar and, if you wish, a teaspoon of honey vinegar or other sweet vinegar. Add the pearl barley, roast veg and green beans, if using, and toss well.

To celebrate 10 years of writing for the Guardian and seven years of this column, I thought it would be fitting to bake a cake inspired by where Waste Not began: my food compost bin. I looked through the fridge and raw compost bin, and found some squash, carrots, apples, cucumber ends, a knob of ginger and a woody stick of lemongrass; I even considered a red cabbage leaf, but decided that brassicas are best kept out of the baking tin. The compost bin is more than a place for leftovers, it's a source of inspiration, as well as a way to reflect on what we waste; it can even guide us towards cooking more resourcefully and creatively. This is a fun riff on the classic carrot or courgette cake, designed to use up scraps of sweet fruit and veg. Be inventive but discerning with what you include, so think beetroot, squash, apple or citrus zest, and leave the garlic and red onion for another day. If you keep a raw-ingredient compost bin (we use a council-issued one), you can even pick through it for potential ingredients; if not, next time you cook, identify the scraps you could incorporate into this cake, so turning them into something delicious. I normally make this cake with extra-virgin olive oil or sunflower oil, but on this occasion I used leftover plant-based spreads from testing supermarket 'butters' for the food filter column. This recipe makes a large, moist cake that needs a good-sized pan and takes longer to cook than you might think. For the cake300g fruit and vegetable scraps (eg, beetroot peelings, apple cores, squash ends)300g oil, or plant-based spread3 eggs 300g wholemeal plain flour, fine milled ideally200g unrefined sugar 3 tsp baking powder For the coconut icing (optional)1 can full-fat coconut milk, chilled for at least 10 hours1 tsp vanilla extract 65g icing sugar, sifted Finely grated zest of ½ orange, lemon or lime, plus a little extra to finish (optional)1–2 tbsp cornflour, or arrowroot powder (optional; this will make a firmer icing)Mixed seeds and chopped nuts, to top (optional)Rose petals, to top (optional) Start by making the icing. Open the can of chilled coconut milk and scoop just the solidified thick cream into a bowl, leaving the coconut water behind. Add the vanilla extract, icing sugar and, if using, the citrus zest and cornflour, whip until light and fluffy, then cover and put in the fridge. Heat the oven to 200C (180C fan)/390F/gas 6. Put your chosen fruit and veg scraps in a food processor and pulse until finely chopped. Add the oil, eggs, flour, sugar and baking powder, and blend again until just combined. Scrape the batter into a greased and lined cake tin, then bake for 55–65 minutes, or until a skewer inserted into the middle comes out clean. Leave to cool in the tin for five minutes, then turn out on to a rack. Once the cake is completely cool, spread the icing over the top, then scatter with seeds, chopped nuts, rose petals or/and extra grated citrus zest, if you like.

‘Human hand' HAD to be involved in Air India crash disaster, pilot says…as he reveals billions-to-one odds of tech fault
AN EXPLOSIVE new theory from a top aviation expert has ignited fears that the devastating Air India crash may not have been an accident - but the result of a human act inside the cockpit. Captain Steve Scheibner suggested there was a "human hand" behind the tragedy of fight AI 171 - and insisted the aircraft itself was not to blame. 12 12 12 Scheibner, a seasoned pilot and respected aviation analyst, told Piers Morgan Uncensored: "I don't think Boeing has fault in this one. "My take on it is that the aeroplane was operating exactly the way it was designed, I don't think there was anything wrong with this particular aircraft." The Boeing 787 Dreamliner plummeted into a doctors' hostel just seconds after takeoff from Ahmedabad on July 13. It killed 241 passengers and 19 people on the ground in one of the worst disasters in aviation history, with only one passenger miraculously surviving. But while the early narrative leaned toward tragic malfunction, Scheibner was blunt: "When you place both fuel cutoff switches to cut off, that will fuel-starve the engines and they'll both flame out." And whether it was intentional or a mistake, he said: "Some things are plain and some things are clear, whether it was intentional, placing of the fuel control switches to cut off, or unintentional, that's two different things. "But I really firmly believe that there had to be a human hand on both of those for them to go to cut off." His comments follow a damning preliminary report by Indian crash investigators, which found the Dreamliner's fuel switches were manually moved from "RUN" to "CUTOFF" shortly after liftoff - an action that shut down both engines and triggered a fatal loss of thrust. They were turned back to "RUN" seconds before the crash, but it was too late. Cockpit audio captured one pilot asking: 'Why did you cut off?' and the other replying, 'I didn't.' Fuel switch-off on doomed Air India flight looks to be 'conscious human action', former pilot says 12 12 Neither crew member was identified in the report, which also refrained from stating whether the switches were moved by mistake or by deliberate action. "There is no universe where there's any procedure ever in the history of commercial flight where you place both fuel control switches to cut off, leave them there for 10 seconds, right after rotate," Scheibner said, referencing the moment of liftoff. Ex-pilot and aviation commentator Terry Tozer also weighed in this week, calling the odds of accidental switch-off "vanishingly small". He told The Sun: "The fuel cutoff switches were actioned shortly after lift off from RUN to CUTOFF. "That implies that somebody did that as a conscious human action, because so far as we understand, these switches have a lock mechanism." "They have to be lifted in order to be moved," he explained. "Otherwise they lock in position." Tozer flatly dismissed the idea of accidental flicking, saying: "I can't see why any pilot would have their hands anywhere near the area where these switches are located." 12 12 12 Tragic profile emerges The growing suspicion around the crash deepens with revelations about the pilot at the helm. Captain Sumeet Sabharwal, a respected 56-year-old veteran, was reportedly just months from retirement and grieving the recent death of his mum. Neighbours say he was planning to leave flying altogether to care for his 92-year-old father. 'Just one or two more flights… then I'm going to just be with Papa,' he reportedly told a friend. But now, Captain Sabharwal's mental health is under scrutiny. Aviation sources in India told The Telegraph he had battled depression and taken time off in the years before the crash. Though he passed a Class I medical exam in September 2024, investigators are now combing through his medical records for clues. Leading Indian aviation expert Captain Mohan Ranganathan said: 'I have heard from several Air India pilots who told me he had some depression and mental health issues. He had taken time off from flying in the last three to four years.' Families of the victims who tragically died in the crash have slammed the preliminary report as a cover-up. They have dubbed the investigation"biased" and said it only appears to "blame the dead pilots". The Airline Pilots' Association of India (APAI) rejected the 'tone and direction' of the inquiry and said it came without sufficient evidence. Air India CEO Campbell Wilson also urged caution, warning staff in a leaked memo that the probe was far from over. 'The preliminary report identified no cause nor made any recommendations,' he wrote, adding that 'it provided both greater clarity and opened additional questions.' 12 No fault found with aircraft The report confirmed that there were no mechanical issues, no bird strikes, and no fuel contamination. The aircraft's configuration for takeoff was normal, and both pilots were medically cleared and well-rested. It also highlighted that Boeing's fuel control switches — which require lifting and unlocking before moving — were working as designed. The FAA had issued a non-binding notice in 2018 about switch locking mechanisms on similar aircraft, but no airworthiness directive followed, and Air India admitted it had not carried out the suggested inspections. Still, both Scheibner and Tozer agree: it's extraordinarily unlikely this was a case of pure human error. 'We do know that the switches were placed to cut off,' said Scheibner. 'And 10 seconds later they were placed back to run… if one did it, the other probably was the one that undid it.'

It might sound like something you'd order in an Italian restaurant, or the sound that someone makes when they sneeze. But the Bolonoodle and the Chipoo are among the designer crossbreeds that are surging in popularity, experts have revealed. Poodle mixes are becoming increasingly fashionable thanks to their fun-loving, highly intelligent and gentle temperaments. They also have hypoallergenic coats which don't tend to shed - a lifesaver for those with allergies or who don't like dog hair on the sofa. While the Cockapoo and Havapoo are some of the most common mixes, there are some lesser-known 'Oodle' crosses which are guaranteed to make you smile. The Bolonoodle, for example, is a cross between the Poodle and the Bolognese dog breeds. The result? A fluffy, affectionate hybrid dog with an excellent name. The Pomapoo, meanwhile, is a mix between a Poodle and a Pomeranian. The adorable crossbreed is small and intelligent and, while it is still not common in the UK, it is growing in popularity. The Pugoodle, or Pugapoo, is a cross between a Pug and a Poodle, while the Twoodle is an impressive mix of a Teddy Bear Schnoodle and an English Goldendoodle - a mouthful for even the most avid dog lover. Those who love a Scottish Terrier may be interested in a Scoodle. This is the result of crossing the breed with the Poodle. Also known as a Scottie Poo, they are highly intelligent as well as being energetic and playful. Experts have described them as 'stubborn at times' - but they are generally easy to train. Next, the famous Chihuahua turns into a Choodle or a Chipoo when crossed with a Poodle. Weighing in typically between five to 15 pounds (2.3-6.8kg) and standing at around six to 10 inches (15-25cm) tall, they are ideal for households seeking a small-sized companion. A cross between a Jack Russell Terrier and a Poodle creates a Jackoodle or Jackapoo, while a Havanese-Poodle mix is called a Havoodle or Havapoo. Finally a Westipoo - a charming little dog with a big personality - is the result of a cross between the Poodle and a West Highland White Terrier. The amusing dog names have been revealed by Australian pet travel company Skye Pets. It analysed data from online searches related to the adoption, rescue and ownership of these 'Oodle' breeds and found that searches for Bolonoodles have boomed by 400 per cent in the last three months. Meanwhile a new wave of crossbreeds is beginning to attract attention through Google search trends, it found, and are being referred to as 'breakthrough breeds' due to their recent emergence online. Those that might become popular in 2026 include the Shih-Poo (Shih Tzu x Poodle), the Yorkie Oodle (Yorkshire Terrier x Poodle) and even the Whoodle (Wheaten Terrier x Poodle), it said. 'We've definitely seen a rise in Oodle-type dogs travelling with us,' Joanna Maddison, founder of Skye Pets, said. 'Our recommendation for anyone looking to become a parent to an Oodle-mix one day is to always try to adopt or rescue first. 'If that isn't possible, we encourage all Oodle-lovers to only select ethical breeders.' A separate study, carried out by the Royal Veterinary College (RVC) in London and published in 2023, revealed the 150 most common mixes in the UK. Unsurprisingly Cockapoos - a cross between a Cocker Spaniel and a Poodle - claimed the top spot. But others included in the list were the Pomsky (Pomeranian x Siberian Husky), the Tibetan Puff (Tibetan Terrier x Chinese Crested Powder Puff) and the Bug (Boston Terrier x Pug). Meanwhile a Chiweenie is a cross between a Chihuahua and a Dachshund, and if you mix a Labrador and a Dalmatian you get a Dalmador. Commenting on the study at the time Dr Dan O'Neill, Associate Professor in Companion Animal Epidemiology at the RVC and lead author of the paper, said: 'With 800 dog breeds available in the UK, this VetCompass study shows there are still plenty of healthy breeds to choose from that do not suffer from extreme body shapes such as flat faces, skin folds or absent tails. 'Despite this, many UK owners are still persuaded by social influences and trends into acquiring dogs with extreme body shapes that are likely to result in serious health issues during much of their dogs' lives. 'The advice is to stop and think before buying a dog with an extreme body shape.'
