
Dive Into This Conch in Sauce Souskaye, the Perfect Summer Seafood Recipe
For those who have never prepared conch — the giant sea snail with a spiral shell that doubles as a trumpet — Compton likes to treat the ingredient similar to octopus. 'Conch is like a giant clam with the texture of an octopus,' she explains. 'Be patient with it because it is worth it.'
To make the souskaye, Compton's biggest tip is seasoning in layers and tasting as you go. 'Salt brings out the sweetness of the conch and also seasons every element as they come into play,' she says. 'Don't [just] add salt at the end.' And if you truly can't get your hands on conch at the fish monger, calamari or shrimp are also excellent substitutes.
'Caribbean cuisine is having a moment and I am happy to document this,' Compton says. 'I [want to introduce] readers to the Caribbean through my food and [want them] to have fun with all the flavors they may or may not have experienced.'
1 pound conch meat (or 1 pound calamari or 1½ pounds U10-size shrimp, peeled and deveined)
1 red bell pepper, minced
½ cup roughly chopped scallions
1 tablespoon red chile flakes
2 teaspoons minced celery
2 teaspoons marjoram leaves
1 teaspoon peeled and grated ginger
1 tablespoon white wine vinegar
3 limes, zested and juiced
2 teaspoons chopped flat-leaf parsley
1 teaspoon Baron West Indian Hot Sauce
Step 1: Prepare the conch. In a large stockpot, add the conch meat. Cover with water by about 6 inches. Bring to a boil, then reduce to medium heat and simmer for about 3 hours. To check for doneness, use a paring knife to make an incision through the thickest part of the conch. The conch is ready when the meat is tender and there is little resistance.
Step 2: Use a slotted spoon to transfer it to a bowl and allow it to cool. Once the conch has cooled, cut into 1-inch pieces and set aside. (If using calamari or shrimp, bring a large stockpot of water to boil, then poach for 2 minutes. Use a slotted spoon to remove the calamari or shrimp and set aside.)
Step 3: For the souskaye: Place a medium saute pan over low heat. Warm the coconut oil, and then add the red bell pepper, scallion, red chile flakes, garlic, celery, thyme, marjoram, and ginger. Saute and stir just long enough to combine the ingredients, about 1 minute.
Step 4: Season with the salt, add the white wine vinegar, and stir to combine. Remove from the heat. Add the conch (or calamari or shrimp), then add the lime zest and juice, parsley, and hot sauce. Return the mixture to low heat and gently warm through for 1 minute.
Step 5: To serve: Enjoy right away with the dasheen (taro) chips.

Rachel Zegler Is Set to Return to 'Evita' After Leaving Mid-Show
Rachel Zegler's gig as the titular character in Jamie Lloyd's revival of Evita at the London Palladium has been all over our social feeds thanks to her stunning performances, but she made headlines for a different reason during her latest show. On July 24, the Cosmopolitan cover girl suddenly exited the stage mid-show as she had fallen ill. According to People, Rachel's departure was announced during intermission, and her understudy, Bella Brown, stepped into the role despite appearing as Perón's Mistress earlier in the night. After a 45-minute intermission, Bella transformed into Evita just in time for the Tony-winning musical's second act. A source in the audience told E! News, 'The interval lasted almost 40 to 45 minutes and then the balcony scene with Bella began. You would have thought the roof was going to cave in from the applause. Even more so when she entered on stage for the first time after the balcony scene.' She opened with the iconic number, 'Don't Cry for Me, Argentina,' marking her second time playing Eva Perón after she made her debut on July 14. In this production, Jamie Lloyd and Andrew Lloyd Webber pulled a page from his Sunset Blvd. book and takes the performance outdoors. At this point in the show, Eva sings to a crowd of Argentinians from the balcony of the Presidential Palace, which is actually the London Palladium's balcony IRL. Since Evita's opening night on July 1, the general public has swarmed the outside of the venue on Argyll Street to catch a glimpse of the stars in action. After Bella carried the rest of the show in Rachel's absence, she received a standing ovation that lasted nearly five minutes, and according to fans on social media, the cast had bowed 10 separate times during the curtain call. She expressed her appreciation for the cast, crew, and crowd with a series of Instagram Stories following the performance. 'Today really showed just how important swings and covers are within this industry,' the actress later wrote in an Instagram Story. 'They are pillars of a show!! A proud day to be at Evita.' In a separate post, she added, 'What a lucky audience getting to see both myself and MY ANGEL REG ZEG!!' While we hope Rachel has a speedy recovery, her rep confirmed to The Hollywood Reporter that she is scheduled to return and perform Friday evening.

Michael Ward, 'Top Boy' actor, charged with rape in UK
Michael Ward, the BAFTA-winning actor best known for his performance in "Top Boy," has been charged with several counts of sexual assault and rape following an investigation. Ward, 27, a native of the United Kingdom, was charged with two counts of rape and three counts of sexual assault, a July 25 release from the country's Metropolitan Police confirmed. The assaults are connected to one woman, and allegedly took place in January 2023, authorities say. Ward is scheduled to appear at the Thames Magistrates' Court in the U.K. on Thursday, Aug. 28. USA TODAY has reached out to a representative for Ward for comment. "Our specialist officers continue to support the woman who has come forward − we know investigations of this nature can have significant impact on those who make reports," Detective Superintendent Scott Ware, whose team is leading the investigation, said in the release. An ex-model who crossed over into acting, Ward first graced the big screen in 2016 with "Brotherhood." His big break came with television roles, however, both in "The A-List" and Netflix's "Top Boy."
