What happens when you microwave plastic? Here's what the science says

Microwaves have come a long way since they were first introduced into homes as a quick and easy way to prep a meal, and so has our understanding of them.
Microwaves create electromagnetic radiation. 'In the microwave, we expose food to these electromagnetic waves,' said Dmitriy Soldatov, professor in the Department of Chemistry at the University of Guelph.
The electromagnetic waves 'induce rotation of water molecules,' said Soldatov, meaning water molecules start to move, and push other molecules around. This, said Soldatov, will make other molecules also start moving. 'Basically, that's what heat is,' he said.
Electromagnetic waves do not affect other molecules aside from water, said Soldatov, 'This is very smart because any food will have some water molecules in it,' he said.
Here's what that could mean for your food.
If you flip your dishware upside down, you might find a note that says the material is microwave safe.
When it comes to claims that certain materials are in fact microwave safe, it's important to understand when manufacturers deem something 'microwave safe,' to begin with, said Soldatov, since it only means the material can be used in a microwave without it melting, decomposing or becoming deformed.
'It does not mean it cannot leach any chemicals into food,' he said.
BPA-free plastic, is safer, but still not the safest material.
When deciding what is safest, 'we should look at what could cause toxicity,' said Soldatov. In general, plastics are pretty safe, he said, 'but it really depends on the plastic.'
'Plastic is a polymer. When soft polymer molecules start moving, heated, they themselves would not typically produce any toxicity,' said Soldatov.
What could produce toxicity, he said, is if there are some 'bad chemicals in those plastics,' adding those harmful chemicals, could leach into the food from the container. Once these chemicals get into food, they could interact with body physiological function, said Soldatov.
In particular bisphenol A, — commonly referred to as BPA — a chemical used in producing certain plastics, has the potential to interact with the 'current system body,' which basically controls a lot of physiological functions, he said.
If choosing to sous vide — vacuum sealing food in plastic bags, and cooking it immersed in water — Soldatov said to be extra vigilante you aren't using materials that can leach chemicals as things cook.
'Sous-vide implies longer cooking times, so one would have to be more careful in selecting suitable kitchenware,' said Soldatov.
Instead of using plastic bags to sous-vide food, opt to use glass containers like canning jars, brand names like Pyrex, or any other heat-resistant glass.
If you prefer to use a bag, consider switching over to a reusable silicone bag instead. Ziploc brand has branched out from solely BPA-free plastic to now offering silicone pouches and containers, made to be able to go from the freezer to the oven in temperatures up to 425°F or 218.3°C, according to a Ziploc spokesperson in an email to the Star. The silicone can also be washed in the dishwasher and reused, read the statement.
If you want to stick with using plastics to sous-vide, be sure to use BPA-free plastics.
'Glass or silicon will be even better,' Soldatov said.
If you are making the shift to only microwaving your food in alternatives to plastic, make sure you are eliminating all other sources of plastic from the microwave, too. Microwaving food underneath plastic, if not BPA-free, can also leach chemicals into your food. If you use a microwave plate cover meant to keep the inside of your microwave safe from splashes and easier to clean, consider using a heat-resistant glass or silicone sheet, instead.
'I would say that glass in any scenario, would be absolutely the safest,' said Soldatov, 'If somebody is very concerned ... use glass without any problems,' he said.

A team of researchers at the University of Tokyo has created a new synthetic polymer inspired by the natural loofah sponge. The material is strong when dry, flexible when wet, and responds to pH changes, making it suitable for filtration and structural applications. Designed with sustainability in mind, this loofah-like polymer could transform how lightweight materials are used in electronics, construction, and medical devices. The porous material resembles a natural loofah in structure, but it wasn't intended to look that way. 'We developed a lightweight yet mechanically robust porous polymer, which resembles the fiber network of a natural loofah sponge. Though we did not set out to create something with such an appearance, it was a pleasant surprise,' said Associate Professor Yoshimitsu Itoh from the Department of Chemistry and Biotechnology at the University of Tokyo. The polymer's pore network is fine enough to allow fluids to pass through while blocking bacteria and viruses. Importantly, it also kills the viruses it filters. That functionality, combined with its responsiveness to pH, becoming more rigid or flexible depending on acidity, makes it versatile. Some of the properties were inspired by real loofahs, which are dried plant husks, not plastic, as many assume. Like their natural counterparts, the synthetic version is stiff when dry and softens when wet. Itoh said the team aimed to mimic some of nature's materials but with synthetic control to allow more functional variations. 'So-called polymer materials like this already exist in nature, but we wanted to create something synthetic as it affords us control over its properties such that we can give it various useful functions.' The new polymer achieves impressive stiffness, up to 11 gigapascals, despite its low density of only 0.5 grams per cubic centimeter. According to Itoh, that's four times stronger than typical polymers. 'One drawback of lightweight polymers is their mechanical weakness — they tend to be very soft,' he said. 'But ours is low density… but has a stiffness of 11 gigapascals.' This strength, paired with low weight and environmental safety, opens the door to using the material in devices where durability is crucial but mass must be minimized. The team says it's made from a substance similar to lignin, a natural component found in wood. The polymer can also be coated onto other surfaces, expanding its use in manufacturing, especially where minimal raw material use is essential for sustainability. The polymer's production is simple. It uses pure water, applied voltage, and a mixture of resorcinol and an aldehyde. These ingredients combine to spontaneously form an ultrathin, porous membrane, with no extra processing needed. 'One big advantage of this membrane is that there is no need for post-processing,' said Itoh. 'Usually, thin films are made by first synthesizing the bulk polymer and then processing it into a film. Our method can directly give the product the form of a thin film and is, in principle, applicable to roll-to-roll processing.' The team is also experimenting with baking the membrane in an inert atmosphere to create a porous carbon version. This could pave the way for nanoscale electronic components like microcapacitors. While industrial use may still be years away, the low-cost and scalable nature of the process makes the innovation promising for future sustainable technologies. The study is published in the journal Science.

Research project looks to produce local strawberries year-round

Canada's winter is usually the kiss of death for the strawberry growing season in the country, but new research looks to make that season year-round. University of Guelph Prof. Youbin Zheng and his team have entered into the final stage of Weston Family Foundation's $33-million Homegrown Innovation Challenge. The challenge is to reliably, sustainably, and competitively produce berries out of season and at scale in Canada. The team worked to develop a hybrid greenhouse-vertical farming system powered by artificial intelligence (AI) and smart sensor technology that can grow strawberries year-round. 'Our technologies are designed to optimize growing conditions in greenhouses,' said Zheng in the release. 'They will allow us to produce strawberries out of season, use less energy, save resources and increase production and efficiency with a lower environmental impact.' The team was one of four projects that made it to the scaling stage of the challenge and received $5 million to make the project applicable on a larger scale. Getting to this point started with acceptance into stage one, known as the spark, which provided the team with $50,000 to develop their idea. Phase 2 was the shepherd phase, where the top 11 from the previous phase received $1 million over an 18-month period to develop a small-scale proof of concept for their project. At the end of the challenge, two $1-million prizes will be handed out to the technology breakthrough winner for the team that showed the most technological innovation. Then the overall challenge winner. With innovation towards developing strawberries year-round at net zero (no fossil fuels) as the goal, Zheng told The Observer that the team set out to make this goal a reality. 'The first innovation is that we are going to use electricity to provide strawberries through electricity price-based lighting,' added Zheng, noting that the idea was to take advantage of time-of-use pricing. 'We only gave plants lighting during the night period, that period because hardly anybody uses electricity, but then we are generating tonnes of electricity, but they are either using nuclear to generate this electricity or hydro.' The second innovation is that they are growing these strawberries in greenhouses using a combined vertical farming technique. 'If you grow strawberries, only one layer means one acre of land. You can only produce one acre of strawberries, but if we have four to five layers, and then one acre of greenhouses, you can produce four to five acres, and then the yield will be higher.' As opposed to in the field, where water applied to the plants evaporates into the air, in an indoor setting, they can recoup and reuse 90 per cent of the water. Growing indoors also cuts down on transportation costs and fossil fuel use, given the option of selecting locations, he added. 'Another beauty of growing plants in a controlled environment is you can produce vegetables and fresh fruits where people are located, for example, big cities, and then you just build a greenhouse or vertical farm close to or within Toronto. What you produce over there, one hour or two hours later, it's on people's dinner table.' This would eliminate the transportation spoilage and cut the costs to produce them way down, added Zheng. 'We can produce wherever you need it to be, like in Canada's far north.' Zheng added he believes this project is also special because once it is done, it can be used right away. 'The reason for mentioning this is that when we collaborate with these leading industry companies, our research, when it's finished, these companies are already there working with the greenhouse industry, so they will use our technologies to help our growers in Canada,' noted Zheng. 'So our technology will most likely be used by Canadian greenhouses immediately. This is not like any other research project that takes years to utilize.' To this point, Zheng and his team have been testing the system on a small scale. 'The next step is collaborating with leading industry partners, including automated technology suppliers like Hoogendorn America, and integrating our technologies into their existing commercial systems. Once our technologies have been demonstrated in commercial greenhouses, they can be translated across Canada and internationally,' said Zheng. He said he hopes the project can be used for other vegetables and medical plants in the future. 'The technology we are working on can produce baby greens, micro greens, salad and cannabis, you name it, and these high-value plants down the road.' Error!
