Anyone can make crispy, golden brown French fries. After all, they are just fried potatoes. But you do make a little extra efforts than simply throwing some potato pieces into a deep fryer.Kitchen queen Martha Stewart advised on how to make perfect French fries at home, and here's what she recommends, aka the perfect classic double-fry. You should start with russet potatoes, the best ones, as they have starchy texture and crisp finish. To make perfect homemade French fries, chop the potatoes evenly into fry shapes either using a sharp knife or a mandoline with a French fry blade.

Soak the cut potatoes in cold water for at least four hours (and up to 24) to leach out excess starch, then drain and dry them thoroughly. You would be surprised to know the secret of restaurant-style fries-- cook them twice to get the best taste.
All you need to do is heat two inches of oil in a Dutch oven (or deep-fat fryer) to 300°F. Fry the potatoes in batches for about 3 minutes, just until they soften without browning, then transfer them to paper-towel-lined sheets and let the oil return to temperature between batches. The blanched fries can rest in the refrigerator for up to four hours. For the second cook, the oil temperature should be higher, about 350°F. Fry the potatoes again until golden (about 4 to 4½ minutes), and add a pinch of rosemary and lemon zest in the final 20 seconds. Drain, season generously with coarse salt, and serve immediately.

Air India plane crash: Expert reveals what went wrong moment before tragic accident, says, ‘wasn't a pilot error'

A report issued by the Aircraft Accident Investigation Bureau regarding the deadly crash of Air India flight AI171 pointed to a chip malfunction as a contributing factor, according to former pilot Marco Chan, who spoke to Reuters on Saturday. The crash involved a Boeing Dreamliner 787-8 and occurred in Ahmedabad, Gujarat, resulting in the deaths of 260 people, including 229 passengers, 12 crew members, and 19 individuals on the ground. Marco Chan, a senior lecturer at Buckinghamshire New University, noted that while the report did not entirely rule out human error by the pilots, the likelihood of them unintentionally activating the fuel cut-off switch was 'almost zero.' The preliminary report, released on July 12, depicted confusion in the cockpit shortly before the jetliner crashed and killed 260 people last month, after the plane's engine fuel cutoff switches flipped almost simultaneously and starved the engines of fuel. 'If you will to exonerate the pilots from Pilot Error. This is what the reports were stating. Now they didn't say that explicitly, but from reading the findings, it tells me that it wasn't a Pilot error. What the report seems to be suggesting is the error with the chip,' the former pilot told Reuters in an interview, as reported by ANI. 'What the report seems to be suggesting is the error with the chip. It's as simple as one chip not working properly, losing contact,' he added. A former pilot has shed light on the possible cause of the AI171 crash, stating that a technical issue may have been responsible for the incident. According to the former pilot, once contact is lost, the system can fail, much like a laptop experiencing a blue screen of death. He explained that the thermal cycle being in a warm condition could have caused the signal to not be contacted properly. 'Once you lose contact, it's kind of like how electricity works; the signal is not contacted properly. It's because the thermal cycle is in a warm condition,' Chan said. 'It's been working very hard, like your laptop stops working, basically giving you the blue screen of death and Windows,' the former pilot added, as reported by Reuters. During the interview with Reuters, the former pilot pointed out that the fuel control unit (FU) failed to receive a command to stay in a run position, resulting in a brief interruption in fuel supply. 'It doesn't command the FU to be in a run position even for a split second. The fuel stopped for a couple of seconds, and the engine will start decelerating,' the former pilot explained. Raising key questions about the Air India AI171 crash, highlighting two main areas of investigation. Chan said the investigation should focus on whether Air India carried out necessary maintenance and replacement of certain chips in accordance with the Service Bulletin. What the report seems to be suggesting is the error with the chip. "I would say now this spotlight would be on, first of all, whether Air India has carried out the necessary maintenance and replacement of those chips according to the Service Bulletin," Marco Chan added. The former pilot further emphasised the need to investigate the nature of the bulletin issued by GE Aviation (previously known as General Electric) and its partner, Bowen. If you will to exonerate the pilots from Pilot Error. This is what the reports were stating.

How a black box works and what it found in the Air India flight crash report?

A preliminary investigation into the deadly Air India crash of June 12 was released on Saturday, revealing details of the final moments of the ill-fated AI171 flight that was bound for London's Gatwick from Gujarat's Ahmedabad and crashed within seconds of takeoff into a medical hostel building. Wreckage of the Air India Boeing 787-8 Dreamliner plane sits on the open ground, outside Sardar Vallabhbhai Patel International Airport, where it took off and crashed nearby shortly afterwards, in Ahmedabad.(REUTERS) The report by the Aircraft Accident Investigation Bureau (AAIB) said that both engines on the Boeing 787-8 Dreamliner lost thrust shortly after takeoff from Ahmedabad on June 12 — because the aircraft's fuel control switches had been turned off. The report also included a tense exchange between pilots extracted from the cockpit voice recordings recovered from the black box. In the first few, which were also the final, seconds of the flight one pilot asked the other, 'Why did you cut off the fuel?' The response came, 'I did not do so,' according to the AAIB report. The report based its finding on the data recovered from the Air India Boeing 787-7 plane's black boxes — combined cockpit voice recorders and flight data recorders. What are black boxes? Black boxes – cockpit voice recorder and the flight data recorder – are tools that help investigators reconstruct the events that lead up to a plane crash. They're orange in color to make them easier to find in wreckage, sometimes at deep into oceans. They're usually installed a plane's tail section, which is considered the most survivable part of the aircraft, according to the National Transportation Safety Board's website. Two people are believed to have been behind the creation of the devices that record what happens on an airplane. One is French aviation engineer François Hussenot. In the 1930s, he found a way to record a plane's speed, altitude and other parameters onto photographic film, according to the website for European plane-maker Airbus. In the 1950s, Australian scientist David Warren came up with the idea for the cockpit voice recorder, according to his 2010 AP obituary. What does the cockpit voice recorder do? The cockpit voice recorder collects radio transmissions and sounds such as the pilot's voices and engine noises, according to the National Transportation Safety Board's (NTSB) website. Black boxes generally survive fatal aviation accidents as they are built with multiple protective layers that include titanium or stainless steel outer shell that resists crushing and penetration; thermal insulation to withstand intense fire and shock-absorbing materials to protect internal electronics during violent impacts. Depending on what happened, investigators may pay close attention to the engine noise, stall warnings and other clicks and pops, as per NTSB website. And from those sounds, investigators can often determine engine speed and the failure of some systems. Investigators can also listen to conversations between the pilots and crew and communications with air traffic control, as mentioned in the AAIB preliminary report for the AI171 crash. It, however, can take weeks for experts to make transcripts of the voice recordings. What does the flight data recorder do? The flight data recorder monitors a plane's altitude, airspeed and heading, according to the NTSB. Those factors are among at least 88 parameters that newly built planes must monitor. Flight data recorder monitors collect the status of more than 1,000 other characteristics, from a wing's flap position to the smoke alarms. The NTSB said it can generate a computer animated video reconstruction of the flight from the information collected. Why the name 'black box'? According to an Associated Press news agency report, which cited Airbus, some have suggested that the term stems from Hussenot's device because it used film and 'ran continuously in a light-tight box, hence the name 'black box.'' Airbus noted that orange was the box's chosen color from the beginning to make it easy to find. Other theories include the boxes turning black when they get charred in a crash, the Smithsonian Magazine wrote in 2019. The media continues to use the term, the magazine wrote, 'because of the sense of mystery it conveys in the aftermath of an air disaster.'
