Jurors heard cops had been scrambled to deal with the pair following an earlier altercation at a Starbucks in the airport.
Footage played to the court previously showed Amaaz headbutting passenger Abdulkareem Ismaeil in the cafe and punching him on July 23.
Further video played to jurors today showed the alleged "high level of violence" displayed to the police officers.
PC Zachary Marsden and PC Ellie Cook - both armed - and PC Lydia Ward, who was unarmed, could be seen approaching the brothers in the car park of Terminal 2.
Amaaz resisted as police tried to move him away from a payment machine to arrest him before Amaad intervened.
The court heard Amaaz threw ten punches - including one to PC Ward's face that sent her crashing to the ground with blood pouring from her nose.
He is also said to have kicked PC Marsden and twice struck firearms officer PC Cook with his elbow.
Both Amaaz and PC Marsden then fell to the ground before the officer gets up and appears to "stamp" his foot towards Amaaz's head, it is alleged.
Junior counsel Adam Birkby said the cop "doesn't appear to connect with Mr Amaaz".
As the brawl continues, the police officers get their Tasers out before managing to handcuff the brothers with the help of other cops.

At one point, PC Ward could be seen appearing to cry as she holds her nose.
The court heard previously that the brothers had gone to meet their mum at the airport on July 23.
She had allegedly been involved in some sort of incident Abdulkareem either on their flight or shortly after it.
As the brothers passed by the Starbucks, the mum pointed out Abdulkareem to her sons as he sat with his wife and children in the cafe.
Prosecutor Paul Greaney KC said: "At just after 8.20pm, the defendants entered Starbucks and confronted Abdulkareem Ismaeil.
"During that confrontation, Mohammed Fahir Amaaz delivered a headbutt to the face of Abdulkareem Ismaeil and punched him, then attempted to deliver other blows, all in front of a number of children.
"The prosecution case is that this was obviously unlawful conduct."
Jurors heard PC Marsden suffered "post-concussion syndrome" and was left with a "severe headache" for three days, dizziness, forgetfulness and bruising and swelling.
PC Ward was left with a broken nose and needed surgery under general anaesthetic, it was said.
The court was told both Amaaz and Amaad have claimed they acted in self-defence.
Amaaz denies assaulting PC Marsden and PC Ward, causing them actual bodily harm.
He is also accused of the assault of PC Cook and the earlier assault of Abdulkareem Ismaeil at Starbucks.
Amaad has pleaded not guilty to assaulting PC Marsden, causing actual bodily harm.
The trial continues.

Newspaper headlines: 'PM to press Macron' and 'mushroom murders' trial
'PM to press Macron' and 'mushroom murders' trial 6 minutes ago Share Save Share Save BBC Emmanuel Macron's state visit to the UK is splashed across several of the front pages, with the French president due to arrive on Tuesday. The Times reports that Sir Keir Starmer will urge Macron to agree a "one in, one out" migrant returns deal, despite warnings that announcing it before it is ready will lead to a surge in crossings. Also featured is a poignant picture of the girls who died or are missing after floods in Texas swept through their summer camp. Macron's visit also leads the Daily Telegraph, with the paper reporting what King Charles III will tell Macron when the French president visits. There are "no borders" between us, the King will say, in a plea for co-operation as Sir Keir fights to save a migrant returns deal. The main image shows the moment a police officer is alleged to have been assaulted as CCTV footage of the incident at Manchester Airport was played to jurors. Mohammed Fahir Amaaz, 20, and his brother, Muhammad Amaad, 26, are said to have struck out after police were called to an incident at the Starbucks cafe in Terminal 2 arrivals on 23 July last year. Both men, from Rochdale, Greater Manchester, deny the allegations. "Hand back out £771 million, Mr Macron ... s'il vous plait," says the Daily Mail ahead of the French president's visit. The paper says Macron will "face questions over his country's failure to make a dent in illegal Channel crossings - despite being handed more than three quarters of a billion pounds of British taxpayers money". Also splashed across the front page is the face of Erin Patterson, the Australian woman who was found guilty of murdering three relatives and attempting to kill another by serving wild mushrooms at a lunch. The Sun leads with the latest development in the Jeffrey Epstein case. The paper reports that a leaked memo reveals the FBI is closing its investigation into Prince Andrew over his links to Epstein, meaning Andrew is free to travel abroad without fearing arrest. Epstein died in a New York prison cell in 2019 as he awaited trial on sex trafficking charges. Prince Andrew has always denied any misconduct. The closure of the inquiry into Prince Andrew also leads the Daily Mirror, with a "furious victim" of the late financier saying they have been "silenced all over again". The US Department of Justice and FBI have concluded that sex offender Epstein did not have a so-called client list that could implicate high-profile associates, and that he did take his own life - contradicting long-held conspiracy theories about the infamous case. The Guardian reports that bosses in the UK will be banned from using non-disclosure agreements to silence employees who have suffered harassment and discrimination in the workplace if changes to the government's overhaul of workers' rights are approved. An amendment to the Employment Rights Bill, which is expected to become law later this year, will void any confidentiality agreements seeking to prevent workers from speaking about allegations of harassment or discrimination. Labour's planning legislation has been branded "hypocrisy on stilts", the Daily Express reports, with ministers pushing to build 1.5 million new homes - despite previously opposing developments in their own constituencies. Deputy Prime Minister Angela Rayner and housing minister Matthew Pennycook are leading the push for the Planning and Infrastructure Bill, which has sparked a widespread backlash for threatening protected habitats and wildlife. The pair are among half a dozen Labour MPs who have opposed similar developments in the past. Donald Trump's tariffs lead the Financial Times, with the US president extending his deadline for "reciprocal" levies. The US announced a new 25% tax on products entering the country from South Korea and Japan, which will come into force when the latest reprieve ends on 1 August. Trump began sharing a batch of letters to leaders of countries around the world outlining his tariff plans. The paper's main image centres on Mayor of London Sir Sadiq Khan and Sir Keir laying wreaths at the 7 July Memorial on the 20th anniversary of the London bombings. The i Paper reports that the Labour government's revised welfare bill, which came after a backbench rebellion in the Commons, will lift 50,000 children and 50,000 adults out of relative poverty. Before the government's climbdown last week, it was predicted that the bill would put 250,000 people into poverty. The guilty verdict of Erin Patterson in Australia leads the Metro's front page. It reports that the ex-husband of the "mushroom murderer" says she tried to poison him at least four times before the deadly dinner that killed his parents and aunt.

Horror moment mass shootout that killed three and injured 10 caught on Ring camera after thugs ‘fired at random'
Click to share on X/Twitter (Opens in new window) Click to share on Facebook (Opens in new window) THIS is the terrifying moment gunmen opened fire in a Philadelphia neighbourhood during a gathering of young people. Caught on a Ring camera, the brutal attack left three dead and ten wounded - all aged between 15 and 24. Distressing Ring camera footage shows young people scrambling on top of one another outside a home as gunmen open fire. Several gunmen can be seen shooting at random as the group takes cover. The Sun has not published any footage showing people being injured or killed. 12 people were reportedly shot in the gun battle. The three people who lost their lives were identified as a 24-year-old man, a 23-year-old man and a 19-year-old man. The 24-year-old man has been identified as Azir Harris, according to the Philadelphia Inquirer. The dad-of-one had been left paralyzed by a shooting in 2018 and had since advocated against gun violence. On Monday, he was shot multiple times in his back while sitting in his wheelchair at the gathering. Harris's father, Troy, also told the outlet that the mother of Harris' one-year-old son was also injured in the tragedy. Three dead & 10 hurt in July 4 weekend mass shooting as cops slam 'wannabe thugs who fired into homes & cars at random' Speaking at the scene, Philadelphia Police Commissioner Kevin Bethel said "this is coward stuff", according to NBC affiliate WCAU. "This is, you know, you see the size of this block. I mean, just individuals just shooting randomly into houses, into cars, children out here. "I mean, this is coward, wanna-be thug stuff." One person has been arrested in connection with the shooting, Bethel said. Police are still searching for the other gunmen, and it remains unclear how many shooters were involved. 6 Azir Harris, 24, was killed in the shooting Credit: Facebook/Azir Harris 6 Police officers collect evidence at the scene in Philadelphia on Monday Credit: AP JULY 4 VIOLENCE The shooting is just one of 15 that occurred in Philadelphia between July 4 and July 7. Police reported a total of six deaths and at least 35 injuries across those incidents. Other cities, including Albany, New York; Charlottesville, Virginia; and Chicago, Illinois, also experienced deadly shootings over the holiday weekend. Gun violence often spikes around July 4 each year, a trend experts link to higher temperatures and increased alcohol consumption, according to a CNN report last year.
