I like it when you call me Big Salad
And by salad I mean big salad. Yeah, the French do their small plates of tiny greens in a perfectly emulsified vinaigrette. Italians are maestros at dressing a pile of arugula in a coating of olive oil so ethereal that not even one precious leaf wilts. But I'm talking here about salads you can really dig into. Salads that are full of surprises and eat like a treasure hunt, hiding every flavor and texture you could dream of wanting with a leaf of lettuce. I'm talking here about salads that act as a meal.
Los Angeles practically invented the genre, with the OG of meal salads, the Brown Derby's Cobb. The finely chopped La Scala Chopped Salad (from the now-shuttered Beverly Hills institution) was a city treasure. Then along came Wolfgang Puck's Chinois Chicken Salad, which followed in the footsteps of Madame Wu's Chinese Chicken Salad, the salad said to have started the whole sweet crunchy Chinese-ish salad ball rolling. (Chin Chin on the Sunset Strip, credited with popularizing the salad in the '80s and '90s, is closing at the end of this month.)
Those are salads with names and distinct identities. But we Angelenos can (and do!) turn anything into a salad. A can of tuna has inspired endless salads including, it would be only fair to mention, salad Niçoise (the classic French salad composed of tuna, green beans, tomatoes, hard-boiled eggs, anchovies and olives). Shredded chicken has infinite possibilities in Salad City. And I once ordered a sushi salad at a Japanese restaurant (albeit in San Diego) that featured a platter of lightly dressed tender greens with edamame and pickled ginger thrown in and, yes, slices of sushi-grade raw fish. It was fresh. Easy. Original. And it was a salad!
No time is fresh-and-easy deliciousness as important as it is in the summertime. Or should we say saladtime. A salad meal is often composed of leftovers, and dressing can be made in advance. Salads are cool and cooling and — whether you're planning a family meal, a Girl Dinner or a party — meal salads are often the answer.
To put together a meal salad of your own, first, think about a theme. If I were making a hamburger salad, the first thing I'd do is think about a hamburger. I'd take it apart in my mind, up the veggie component — iceberg, tomato, raw or grilled onion — and think about what else I like on my burger, such as bacon and pickles. Toss all but the burger patty together with mustard vinaigrette or blue cheese dressing (because mustard and blue cheese are things I would love on any burger) and put the patty — any patty, leftover or prepared for the occasion — cut into quarters, on top.

I have a friend who takes the sweetest, richest, deep-fried Chinese favorite — like orange chicken or sweet-and-sour pork. Tosses mixed Asian greens with a light dressing of sesame oil and lime juice, and then adds the chunks of meat, transforming something decadent and heavy (deep fried and drenched in sweet sticky sauce) into a salad meal that you might even call refreshing!
It's the Asian version of the more common (but not as common as it should be) fried chicken salad, wherein boneless fried chicken tenders or cubes are tossed with lettuce (I'd use frisée) and whatever dressing you want (I'd go with buttermilk dressing to reflect the buttermilk that the chicken is marinated in) and anything else you might like with fried chicken — such as potatoes, bacon or corn.
Steak salad is a personal favorite because I like steak but in small portions, more as a condiment than a main event. To make one, first cook your perfect steak. Then decide on your 'greens,' which might not be green. (I like mine with radicchio.) Choose your dressing — sherry vinaigrette is my go-to for this. Slice the steak. Add anything you might like with steak, like roasted potatoes or a cubed baked potato, grilled onions, fresh or slow-roasted tomatoes, boiled potatoes and / or shaved Parmesan cheese. Toss and enjoy.
I've made many Asian chicken salads. And really. They're all good. You almost can't go wrong with that winning combination of sweet, salty, and crunchy, all conveniently served under the guise of 'healthy' eating. But IYKYK: There's one that stands above the rest. Unless someone can persuade Joan McNamara to share her top-secret recipe for the Joan's on Third Chinese chicken salad — a mountain of shredded iceberg lettuce laced with crispy wonton strips, delicate thin fried rice noodles, sliced velveted chicken and sliced toasted almonds, all tossed together with a mysterious emulsified sweet dressing — we'll have to go out for that one.

REVIEW: Grange Choral Society, An Evening of French Music, Christchurch Priory
FROM one magnificent place of worship to another. Christchurch Priory was filled with the beautiful sound of French music on Saturday evening in a celebration of the recent re-opening of Notre Dame de Paris following the devastating fire in 2019. It was a stunning two hours in the company of the ever magnificent Grange Choral Society, Director of Music (of the society and the Priory), Simon Earl and organists Christopher Dowie and David Beeby. The music of Gabriel Faure, Saint-Saens, Franck, Durufle, Vierne and Widor featured in an inspiring and by turns tranquil, peaceful, emotional and dramatic programme of religious classics including the Cantique, Ave Verum, Panis Angelicus, Ave Maria and Messe Solennelle. It instantly transported me back to the Latin Mass of my Roman Catholic upbringing - not least the Kyrie, Sanctus, Benedictus, Agnus Dei and Gloria. There is no better venue than the historic Priory for music such as this to showcase the wonderful talent of the Grange members individually and together. The presence of two organists was a valiant attempt to recreate the feel of the great Gothic cathedrals with organs at both ends. With a rigged up electronic keyboard just to the right of the altar linked to a computer, in tandem with the Priory's own magnificent organ, to the untrained ear, David and Christopher pulled it off. Maestro Simon wryly told the audience: 'It's not quite the same but you get some idea.' He said the evening was a tribute to wonderful work of restoring Notre Dame. 'We are trying to portray that in music.' Without question that endeavour was a huge success. As always happens on these balmy evenings, the setting sun streaming through the upper windows of the Priory added to the somewhat ethereal majesty of the occasion and seemed to symbolise of the inspirational rebirth of Notre Dame. A Master of Surrealist Fiction and a Bard for Anxious Times
Roving Eye is the Book Review's essay series on international writers of the past whose works warrant a fresh look, often in light of reissued, updated or newly translated editions of their books. The Italian writer Dino Buzzati (1906-72) sneaked up on me. I like to think of myself as a completist when it comes to the 20th century's international masters of fantastical and surrealist literature, from Julio Cortázar to Kobo Abe to Anna Kavan, yet despite the acclaim from his publishers and translators, the endorsements from Borges and J.M. Coetzee, and a name that makes him sound like a glam-rock guitar hero, I'd missed Buzzati until now. (Completists rarely get there.) I may not be alone in this. American literary culture often seems to make room for precisely one famous writer in a given language at a time — say, Luigi Pirandello, Alberto Moravia, Italo Calvino, Umberto Eco and Elena Ferrante, among Italians — while others, prominent in their native countries, never find a turn in the spotlight. So much, of course, depends on publishing circumstance. Buzzati hasn't been without advocates in the English language. His 1940 novel 'Il Deserto dei Tartari,' translated into English by Stuart C. Hood and published as 'The Tartar Steppe,' was reviewed in major publications and has remained in print in Britain. In the 1980s North Point Press presented handsome collections of his stories, selected and translated by Lawrence Venuti. Still, until recently, the view of Buzzati in English was a fragmented, almost teasing one. The U.S. publication of Buzzati's work is now in the deft hands of New York Review Books, which has corralled five titles for its Classics series. These include three novels — 'The Singularity' (1960), 'A Love Affair' (1963) and 'The Tartar Steppe,' which was recently retranslated under the title 'The Stronghold' — as well as 'Poem Strip' (1969), a graphic novel that will be reissued in the fall. Earlier this year, Venuti continued his curation of Buzzati's short fiction with THE BEWITCHED BOURGEOIS: Fifty Stories (NYRB Classics, 328 pp., paperback, $19.95), a chronological survey culled from the hundreds of stories published in the author's lifetime. Our view of him may still be partial: Buzzati's life's work includes children's books, poetry, travel writing and journalism, and his jazzy drawings provide cover art for all five NYRB volumes. But these books form an extraordinary opportunity for Anglophone readers to take a leap into his unusual mind and have a look around. Start with 'The Stronghold.' That's a recommendation. The story of an Italian Army officer who has been assigned to a mysterious mountain fortress at which nothing, precisely, ever occurs, Buzzati's third novel is a book at once consummate — an unrepeatable performance — and typical of the tone and temper, the anxious, distractible mournfulness, of all of Buzzati's subsequent work.
