Food Picks: Ce Soir restaurant's new menu showcases its evolving modern Asian direction
SINGAPORE – It may have started out as a modern European restaurant in 2022, but, under the wing of Perak-born Singaporean chef Seth Lai, 31, since October 2023, Ce Soir has shifted in a more contemporary Asian direction.
And that is not a bad thing.
Because who knew that the winner of Singapore's Michelin Guide Young Chef Award 2024 can brew a solid wintermelon soup with zuwaigani (Japanese snow crab) – worthy to be on any good Chinese restaurant's menu?
I am also pleasantly surprised by his claypot rice made with five grains – spelt, barley, corn, and red and brown rice – enhanced with a rich lobster stock and sakura ebi. It is paired with tender South African abalone.
And while it may be quite commonplace now to get lovely rolls at an upscale establishment, Ce Soir's seaweed bread has a wonderfully crisp crust.
The three dishes are part of the $228++ seven-course dinner menu, which includes a meat main of Iberico pork.
There is also a $168++ five-course dinner and $68++ three-course lunch.
Both dinner courses start with a trio of snacks – buri, tomato and sour plum gel; uni and soursop tart; and foie gras sandwiched between apricot wafers on a walnut biscuit.
From the petit four finale, I prefer the kaya-misu – kaya mascarpone on a coffee tart shell.
Not all elements work. I am not too fond of the foie gras sauce in the lobster dish and do not quite get the almond cookie-inspired petit four.
But I appreciate chef Lai trying to do more – who else will combine uni and soursop and make it work?
I hope he continues to evolve in his culinary journey and draw on his personal stories, which truly make his dishes shine.

'They ran a lot of tests, which ended up showing I have an infection (still trying to figure out what) and a little fluid (in) my lungs,' she said. 'Finding it hard to breathe in, but I discharged myself last night (I hate being in hospital) and will continue the investigation as an outpatient.' You know your product is 'sick' when Hannibal 'The Cannibal' Lecter himself gives it his seal of approval. US celebrity and influencer Kim Kardashian's multibillion-dollar company Skims recently rolled out a US$48 (S$61.80) piece of headgear that it claims will sculpt the face – scoop up the cheeks, neck and chin and hold them in place – as you sleep. It bears a close resemblance to a post-surgery compression garment, with its chin wrap and Velcro closures. Reactions to this 'shapewear' for the face have been swift, sharp and sweeping, so much so that award-winning actor Anthony Hopkins – who played prolific serial killer Hannibal Lecter in the movie The Silence Of The Lambs – has joined in on the fun. Many have compared the face wrap to the muzzle-like, brownish mask strapped around the head of Dr Lecter in a scene from the movie, in which a senator questions him about her missing daughter. Beyond this comedic tit-for-tat, the Kardashian headgear has set off a fierce debate about advertising and women's insecurities. Some have hailed it as the future of non-invasive facial sculpting, but others have accused Kardashian and her US$4 billion company of making claims not grounded in science and making women more insecure about their looks. Skims is trying to rebrand the face wrap, typically used after intensive cosmetic surgery, as a 'must-have' that can be used every day to 'shape and sculpt' the face. But medical professionals have questioned these claims. Dr Anna Andrienko, an aesthetic doctor specialising in cosmetic procedures, told the BBC that while these garments 'may offer some temporary sculpting or de-puffing effects due to pressure and heat retention', the results are far from permanent. 'These face wraps do not deliver lasting contouring or skin-tightening results,' she said. 'At best, they can reduce fluid retention short term. At worst, overuse may lead to skin irritation, breakouts or circulation issues if worn too tightly or for prolonged periods.' Casual observers say the product is contributing to 'bad self-esteem among young people'. It adds to the many questionable beauty trends that have had people scraping, pulling and pinching at their faces or taping over their lips at night just so they can feel good when they wake up in the morning, they say. ‘I have never stopped missing you': Actress Sora Ma holds memorial service for late husband

SINGAPORE – Actress Sora Ma wrote a sentimental post on social media for her husband, as she held a memorial service for him one year after his death. She married the Singaporean businessman in 2021 and they held their wedding the following year. Ma, 41, gave birth to their son Skye in August 2024 and disclosed in December that her husband had died suddenly in June . He was in his late 40s. The Malaysia-born actress became a Singaporean in January. In a lengthy post on Instagram Stories on Aug 1, Ma wrote that due to her husband's sudden passing, she did not have time to notify many friends then . She therefore held a memorial service on the first anniversary of his death, and attached a black-and-white photo of the event. 'In the past year, even though you are no longer with us, I still feel that you are with me and our child, learning and growing together,' she wrote in Chinese. 'We (our friends and I) never shy away from anything related to you. Instead, we prefer to talk openly about your kindness to everyone, as well as the warmth and influence you brought to everyone . This is our way of remembering, mourning and healing.' Asked by a friend how she managed to get through the difficult time, she said she and her late husband loved each other without regrets. 'When you were alive, we never hesitated to express our love,' she wrote. 'We always gave each other the deepest care and companionship until the very end.' She added: 'I have never stopped missing you in every festival and every special moment.' She said she would raise their child with the same thoughtful love her husband had shown her. 'I often tell my friends that the love you had given me over the past 11 years is more than enough for me to raise Skye well,' she wrote. Ma noted that many people who have benefited from her husband's kindness came for his memorial service. 'I thought you were good and gentle enough, but after hearing everyone share their stories and watching your videos, I realised you were so much better than we could have imagined. I'm so proud of you,' she wrote. 'The good deeds you did in your life, the light you radiated – all of them deserve to be remembered. This world is truly a better place because of you. Please continue to be brave and kind in the other world. We will always love you.' Ma recently held a celebration for her son's first birthday, inviting her celebrity pals such as Zheng Geping, Hong Huifang, Chen Xiuhuan and Apple Hong. Ma posted on Aug 2 several photos with her son from the past year on social media, with the caption: 'Month of August, month of Leo Baby.' 'One year ago, he changed my life forever,' she wrote in English, using the hashtag #SkyeIsOne. 'From sleepless nights to heart-melting cuddles, this first year of motherhood has been the fastest, slowest, most beautiful ride.' She added: 'Thank you, baby, for coming into my life, for pulling me out from the darkest days, and leading me into the warmest sunlight I've ever known. I'll spend the rest of my life learning, growing and loving beside you.'
