Recipe of the day: Passion fruit cheesecake for National Cheesecake Day

Cheesecake in all its guises – baked, not baked, chocolate, Basque, New York-style, topped with whipped cream, fruits or coulis, on a short crust pastry or biscuit crumb base is the perfect treat for afternoon tea or morning coffee. You just can't go wrong with this delicious, creamy cake.

Time Square's Sous Chef Cynthia Bombe has shared her speciality in honour of National Cheesecake Day in the US, although you can indulge in the passion fruit cheesecake any time you please.
'When I was a child growing up in Diepkloof, Soweto, I used to help my mom bake scones and jam tarts, which she sold. So that is where my passion for baking comes from, and I decided to pursue it as a career,' says Bombe, who holds a chef's certificate in Food Preparation from the HTA School of Culinary Art.
'I love pastry, it is my passion. I didn't have any experience when I joined Time Square, I had to adapt and fell in love with it. You have to be patient working in this part of the kitchen.'
Bombe paid tribute to Time Square's executive sous chef, Nonkosi Vellem, 'who showed me almost everything I know'.
Today, Bombe is a supervisor, working with banqueting, sometimes preparing up to 1 000 plates at a time.
'I oversee functions, making sure the food is out on time and that there are no complaints. I have to delegate to the junior chefs and also manage orders to ensure stock continuity.'

Passion fruit cheesecake
Base
200g coconut biscuits, crushed into crumbs
80g melted butter
25cm springform pan
Filling
625g cream cheese
375ml condensed milk
4 eggs
40ml lemon juice
30ml vanilla essence
32g Maizena
250g passion fruit (granadilla) purée
Method
Preheat oven to 150°C
Mix the biscuits and butter together. Press firmly into the bottom of a springform pan. Refrigerate while making the filling.
In a bowl, add cream cheese and beat until smooth. Add condensed milk, lemon juice, vanilla essence and mix well. Beat in the Maizena and mix well until smooth.
Add in eggs one at a time, ensuring a smooth mixture.
Pour the mixture onto the chilled crust and smooth the top. Tap the tin on the counter a few times to remove any air bubbles.
Bake at 150°C for 1 hour. Allow cheesecake to cool for 2 hours and refrigerate overnight.
Remove cheesecake from the springform pan. Garnish as desired to complement your Recipe of the day.

The AVBOB Poetry Competition will return for its ninth year on 1 August 2025. The competition encourages South Africans, young and old, to put pen to paper and share words of love, hope, and healing. Carl van der Riet, AVBOB CEO, expresses the competition's mission simply. 'We want to give every South African a chance to find and share their best words. Each poem adds to an ongoing conversation, drawing us closer to understanding ourselves and each other.' He adds, 'Poetry helps us when we are lost for words. At those moments, it offers images and gestures to steady us.' This year, the stakes are high. The first-place winner in each language will receive a total of R 12,500. This includes R 10,000 in cash, a R 2,500 book voucher, and the coveted AVBOB Poetry Trophy. Poets whose work is published in the AVBOB Poetry Library will also receive a R300 publication fee. Competition guidelines are straightforward. Submit your poems through the online dashboard at A panel of judges will select the strongest entries in each language. The top three poems per language will be featured in the annual printed anthology. All shortlisted poems will be translated into English. 'Translation brings voices together – it encourages understanding and fellow-feeling among South Africans,' says a member of the organising team. New and aspiring poets can take advantage of the AVBOB Poetry website's free resources. Expert advice, guidance from editors, and stories about past winners can help entrants polish their submissions. Judges share tips and pointers, and the social media channels provide updates about free online workshops. These workshops, running throughout the submission period and beyond, are a platform for learning and growth. 'It's wonderful to see participants coming with their own stories and leaving with new skills and inspiration,' says a workshop facilitator. The AVBOB Poetry Competition has become a staple in the country's cultural calendar. It stands as a testament to the healing and unifying force of poetry. Carl van der Riet sums up its impact, saying, 'Every year the generosity of entries moves us.' Entrants share themselves with honesty and courage. The competition archives poems from across South Africa and creates a living record. It is an open invitation to continue the conversation together.' Entries are open now until 30 November. In a move that fuses music, culture and youth empowerment, Betway and the Betway Cares Foundation have partnered with Scorpion Kings Live with Friends to launch the 100 Lives Initiative internship programme set to give 100 young South Africans a foot in the entertainment industry door. With Kabza De Small and DJ Maphorisa headlining the Scorpion Kings Live with Friends concert at Loftus Versfeld Stadium on August 29, the initiative offers selected youth hands-on experience in the production, logistics and creative process behind one of SA's biggest shows. 'This isn't only a show, it's a movement,' said Kabza and DJ Maphorisa. 'We want young people to know they belong in these spaces.' Open to individuals aged 18 to 28, the programme will include skills development, training and bursary opportunities made possible by Betway and Betway Cares' ongoing investment in youth upliftment. 'As a strategic partner, Betway Cares is proud to work with changemakers to tackle the issues facing youth in South Africa,' said Bakang Lethoko, head of Betway Cares Foundation. Peyton and her teammates beat out thousands of dancers from more than 60 countries to make their mark at the 2025 Dance World Cup in Burgos, Spain. Although previously selected for the South African national team several times, this was her first opportunity to compete internationally, made possible through the generous support of fellow South Africans who helped her get there. She also placed second in the Junior Large Group Commercial and received a coveted Golden Ticket to an elite masterclass after finishing fourth in the Junior Commercial Solo. 'It was a great experience. The highlight for me was getting Gold. After I danced for this one group, I was in pain and I had to go to the first aid room. I was backstage before going to the first aid room and I heard everyone screaming and happy. I felt really good about it, I felt like I really deserved that gold,' said Peyton. On her passion for dance she said: 'Dancing is coming into a group with people that you love and sharing a talent and sharing a hobby that you all have and having a connection with everyone you dance with.' The feat however did not come easy, with daily practices even through school holidays. She encouraged other young people, 'if you want to do well, just be confident and dance like nobody's watching'. Image: Supplied Her mother Robyn Connor said they received widespread support to make the trip possible. 'We sold baked goods, hosted quiz evenings and ran monthly raffles. Local businesses and restaurants donated vouchers and prizes. Thanks to their generosity, we were able to hold raffles every month to raise funds. 'Survé Philanthropies gave us a very generous donation of R10,000. That money was heaven-sent. We were stranded for one night. IOL had published an article about Peyton, and my contact details were included. They saw the article, called me, and about two weeks later came back with that donation. We were very lucky.'
