Is Michelin losing the plot?

YOU know something's not quite right when you get invited to a party and the host doesn't even show up.
On Thursday evening, the cream of Singapore's F&B industry gathered at the Marina Bay Sands' Sands Ballroom, where the best restaurants as decided by the Michelin Guide were rewarded with stars and a standup buffet after the ceremony.
Notably missing was the guide's international director Gwendal Poullennec, who nonetheless had prepared a prerecorded video lauding the culinary excellence of Singapore's restaurant scene, while also making the right noises about the challenges the industry is facing.
While it's not the first time he didn't make a personal appearance in Singapore, there was an air of 'Sorry, I couldn't make it, but enjoy yourselves anyway' blaseness about his absence. It was a vibe that continued throughout the evening, which could go down as the guide's laziest, phone-it-in performance since it made its grand debut in 2016.
It feels particularly pertinent this year, what with record closures and economic uncertainty making pretty much everyone in the industry miserable. And without taking away any of the glory of the night's two winners – one star for Omakase@Stevens and a second star for Sushi Sakuta – a guide which sees the highest number of dropouts with barely any replacements does not bode well for Singapore's reputation as a culinary destination.
Were there really no worthy restaurants to recognise this year? Even last year, when the stars were released via e-mail instead of a physical ceremony – as if Michelin had discovered a new strain of Covid-19 we didn't know about – there were four new stars and one promotion.

Given its long-held vow of secrecy, there is no way of knowing how Michelin thinks, much less its processes in awarding its stars. You can only guess. Maybe Peach Blossoms' tendency to innovate rankles Michelin's definition of Chinese food as dim sum and Peking duck.
Maybe the modern Korean Na Oh isn't fine-dining enough. Perhaps too much red tape is involved in converting Malaysian-inspired Fiz's sustainable green star to a proper one. It's also possible that the lack of a direct bus service to ASU kept the inspectors away from sampling its progressive Asian cuisine.
And who knows, maybe the Noma-esque rumblings about Somma prejudiced them against its refreshingly daring menus. Maybe it's just within its comfort zone to reward what they know – fail-safe Japanese food.
Taste is subjective, we know. Whatever Michelin's reasons, what's worrying is the optics for Singapore. This year's results simply cement the impression that we are lagging behind other Asian cities and that our strong dollar makes it more attractive to travel overseas to eat. That even Michelin doesn't feel that there are any new and interesting restaurants worth making a detour to Singapore for, is not good.
While chefs may rationalise that they work to make their guests happy and make a decent living while at it, it doesn't change the fact that they all want – for better or worse – the tyre-maker's stamp of approval. Never mind that its credibility and relevance have been waning in the wake of alternative guides. For restaurants, not knowing why they're not good enough, because of the guide's lack of transparency, is what hits the hardest.
Talk to people in the industry, and it sounds like trying to reach out to Michelin is like writing a letter to Santa Claus. Except that with Santa, you have the luxury of wondering if he even exists. With Michelin, you know you're just being ignored.
For many, Thursday's ceremony was a bit of a non-event, although it was a welcome excuse for chefs in the industry to party and savour the relief of maintaining their stars. After the ignominy of last year's e-mail presentation (followed up by a belated gathering much later on), MBS gets kudos for trying to bring back some of the glamour of Michelin ceremonies past.
Still, Michelin has to decide – does it want to be an active player in the dining destination it's in, engaging and shaping the narrative of a city that it has a vested interest in seeing flourish, or simply be a passive observer merely reflecting the surrounding situation?
For a guide with so much influence, let's hope it goes back to being more of the former.

HONG KONG – If a picture speaks a thousand words, a removed picture shouts out even more. Controversial Malaysian rapper Namewee on July 21 took down photos he had earlier posted on Facebook of himself with actor Eric Tsang and singer Kenny Bee. This came after the two veteran Hong Kong celebrities issued formal apologies for their appearance alongside the rapper, for which they caught flak from Chinese netizens. Namewee is boycotted on the mainland for his 'anti-China stance', after his songs mocked the country's leader and nationalistic netizens. In a fresh Facebook post on the same day the pictures were taken down, Namewee shared his latest song, Letter of Apology . He cited the lyrics: 'I'm now ready to admit my mistakes/ Although it's just a small issue/ I'm willing to bow down and admit that I'm weak/ And reflect on all my foolish mistakes.' It was a master stroke: In an instant, he generated free, large-scale publicity for his most recent work, simultaneously putting on display the absurdity of the nationalistic outcry over the photos and the motivation for the artistes' apologies as implied in his new song. Namewee's initial post on July 19 had seemed innocuous enough. It was just pictures of the celebrities smiling for the camera, with his message in Chinese stating merely 'wishing you a successful performance tonight', ahead of a concert taking place that night in Genting, Malaysia. It looked and read like an innocent post from any other delighted supporter of Tsang and Bee who had been lucky enough to meet their idols in person. But it was the Chinese netizens' outrage over the post, and the pandering apologies it immediately elicited from the Hong Kong artistes who quickly sought to distance themselves from the rapper, that made it news. And Namewee cleverly capitalised on that to draw attention to his latest song, which – coincidentally or not – touches on a similar topic and had until now gone largely unnoticed elsewhere, especially on the mainland where his works are banned. With one innocuous post, and then its removal, the singer channelled outcry against him into publicity for his latest satire. The official music video for Letter of Apology shows the rapper at a press conference –speaking in mainland-accented Chinese – stating his desire to 'clarify matters' before breaking down in mock tears, bowing in apparent repentance, and crooning his 'apology' to his audience. A description – in Chinese – of the song on his official YouTube channel reads: 'After (issuing) the letter of apology, you will be propelled to fame and riches, arriving at the zenith of your lifetime… Only after writing my letter of apology, will I achieve prosperity! ' The song satirises the self-criticism and self-censorship demanded by China's hypersensitive, ultranationalistic keyboard warriors from those public figures who inadvertently offend the lucrative mainland market they cater to. Its lyrics also hint at the sense of self that some celebrities sacrifice to stay on the right side of their Chinese audiences, with one stanza stating: 'Can you accept/ That I can now only voicelessly await my fate/ No more need to wonder/ If I can still call this life my own.' Taiwan-based Hong Kong political commentator Sang Pu said he found Namewee's self-censorship of the photos and his subsequent post sharing his music video a 'brilliant' move. 'Namewee's deletion of the pictures caused them to be more widely circulated,' Mr Sang told The Straits Times. 'The photos resulted in the apologies from Eric Tsang and Kenny Bee, which then allowed Namewee to publicly juxtapose the two artistes' letters of repentance against the scenario depicted in his song.' 'From this, we can see how sharp-witted and humorous Namewee is,' he added. Muar-born Namewee, 42, also known as Wee Meng Chee or Huang Mingzhi, made his name producing songs that poke fun at sensitive political issues . He has been blacklisted in China since 2021, after the release of his ballad single Fragile, which contains barbed references to President Xi Jinping and issues including the country's tight censorship . In 2023, Namewee revealed that he was banned from performing in Hong Kong as well. Tsang's July 21 apology on Weibo, while not directly naming Namewee, expressed regret over the 'unintentional mistake' of having taken a photo with 'a certain person' whose background he had been 'unaware of'. 'As a Chinese citizen, I've always been committed to safeguarding our country's dignity and national sentiment,' Tsang wrote in Chinese. 'If I had known (his background), I would never have had any contact with him.' Bee issued an almost-identical apology on his own Weibo account. Tsang, 72, who has been in the show business since the 1980s, is general manager of Hong Kong's biggest television broadcaster TVB, which is expanding significantly in mainland China. Bee, also 72, was lead vocalist of Hong Kong 1970s pop group The Wynners and has in recent years taken on several minor acting gigs produced in mainland China. The two artistes' grovelling apologies are just the latest illustration of the pressures that celebrities can face even when they are not major players in the mainland market. But their eagerness to clarify the matter could also be linked in part to the additional spectre of a national security law over Hong Kong society. Beijing imposed a national security law on Hong Kong in 2020 after mass anti-government protests in 2019 and early 2020. Hong Kong subsequently introduced its own such legislation in 2024. The emphasis on national security in the city since then has resulted in its people increasingly policing their opinions made in public. Under Hong Kong law, sedition can also cover anything that incites 'hatred, contempt, dissatisfaction or disaffection' with the authorities. While it is clear that Tsang and Bee have not contravened any law, appearing to be aligned with Namewee whose work mocks China – however tenuous the link – could still potentially cause a rift not just with their mainland business partners and supporters, but also among those in Hong Kong. Ultimately, though, the artistes' main motivation for their apology is essentially 'greed', according to Mr Sang. 'The reason (Tsang and Bee) allowed themselves to be controlled by their entertainment companies and to publish the formal apologies scripted for them, is because of the money they still hope to make off their mainland audiences,' he said. 'This is a choice they must make: Would they prefer to eat standing (by their own principles), or do they want to eat on their knees (at the mercy of others).'

[SINGAPORE] At the quiet west end of Orchard Road, past the gleaming lobby of Conrad Singapore Orchard – formerly the Regent Singapore – and up on the second floor is Manhattan Bar, Singapore's regular representative on Asia's 50 Best Bars list. Banquettes form symmetrical seating areas alongside the elevated main bar, presenting a postcard-perfect scene of a grand hotel bar from New York's past. Completing this ode to the city's Golden Age of cocktails is the bar's latest menu, Seasons of Manhattan. A calendar of cocktails Launched in May, the menu of 31 cocktails treats time as both muse and medium. Designed like a desk calendar, it unfolds with pop-up illustrations, from Central Park in bloom to Rockefeller Center in festive glow. Half of the menu is themed after the four seasons, with four cocktails for each, presenting the city's culture, climate and hallmark moments. These are joined by five other New York-inspired cocktails; six cocktails developed in the bar's 'rickhouse', where cocktails are aged in barrels; and four guest cocktails. Sign Up Sign Up 'Creating a cocktail always starts with a scene, a feeling,' said Zana Mohlmann, Manhattan's head bartender. 'That first warm day in Central Park, the buzz of a summer party, the crisp crunch of autumn leaves underfoot – we built the entire menu around these moments.' The half-year menu design process started with brainstorming sessions, which uncovered how New York's cultural touchpoints – from Little Italy's festivals to Harlem's dance floors – aligned with the city's seasonal rhythms. 'It was a lightbulb moment,' said Mohlmann. 'Time became our narrative: the rickhouse ageing our spirits, the bar's decade-long legacy, even the way guests experience a year in drinks.' One summer cocktail is It's Gettin' Hot in Here, served warm and embodying Manhattan's urban heat island effect. Served on a concrete slab as a nod to sun-baked sidewalks, it has butter-washed genever as a base, with spiced honey infused with basil, sage, thyme and chilli, redefining the concept of a hot toddy as a hot drink for sweltering months. Meanwhile, Autumnal Amber is a riff on the classic Penicillin where rum replaces Scotch and spiced pumpkin replaces ginger, swirled with Laphroaig. Served in a cherrywood-smoked bottle before being poured into a glass, the drink is crowned with a pumpkin-chip 'leaf' that crumbles like foliage. 'It is a nod to bonfires, spiced pumpkin lattes, and late autumn nights where the leaves are falling off the trees,' said Mohlmann. 'It is inspired by all the emotional layers of autumn itself.' Time capsules from the rickhouse If the menu captures fleeting moments, Manhattan's rickhouse – a barrel-ageing room in the hotel itself – embodies patience. Here, 110 oak casks cradle spirits that are infused with vanilla, smoke, and spice. The spirits' flavours deepen and evolve in these 'wax-sealed time capsules', as Mohlmann put it: 'Two months in wood can round a cocktail's sharp edges into something symphonic.' Of the 10 barrel-aged cocktails in the menu, four are seasonal. These include Triumph of Liberty, a smoke-laced Old Fashioned honouring Independence Day, and St Patrick's Day, a blend of Irish whiskey, Guinness and coffee liqueur aged in Oloroso casks. 'The Guinness gives it a nice depth and a bit of a rough smoke on the end… but the barrel shapes the sharp ends of the drink, and it becomes a round, robust and full-bodied spirit-forward whiskey drink that is Irish,' Mohlmann explained. The rickhouse also serves as a living archive of Manhattan's timeline, with its display of bottles – including those from the time of previous head bartenders – dating back to 2015. Private corners and Warholian whimsy Beyond the bar's main space, time blends differently. Behind a heavy curtain at one side is The Library, with a seating capacity of just 10. The 12-seater East47 is similarly done up in that shade, with a genuine gold Marilyn Monroe print by Warhol as a centrepiece above the bar counter. Just as Warhol's Silver Factory was a studio for the artist, East47 is one for Manhattan's bartenders, said Mohlmann. 'East47 is our boundary-pushing cocktail bar that really allows us to be very creative.' The decision follows his earlier move to eliminate red meat from Arpege's dishes in the early 2000s. Passard's updated menu excludes meat, fish, and dairy, although honey sourced from the restaurant's own beehives will remain an exception. Passard said he was motivated by his passion for nature, adding that using seasonal vegetables would also reduce the restaurant's environmental impact. Passard, 68, rose to fame for his roasted dishes, including "poulet au foin", or chicken cooked in hay, but has since become a leader in Paris's growing vegetable-based dining scene.
