Simon Rogan MBE is an internationally renowned, award-winning chef, recognised as one of the pioneers of the farm-to-table movement. His restaurant L'Enclume has been awarded three Michelin stars. Simon is in Australia bringing L'Enclume, his three-Michelin starred restaurant from Northern England to Bathers' Pavilion at Balmoral Beach for a not-to-be-missed six week residency throughout July and August. Recipe below: Wattle seed and caramel miso mousse Macadamia, apple and Divine vanilla Wattle mousse Amount Ingredients 900g Caster Sugar 3700g Double Cream 1000g Milk 180g Milk Powder 1400g Yolk 700g Caster Sugar 250g Trimoline 17.5x Gelatine Leaves 500g Miso 500g Wattle Method 1. Soften the gelatine in cold water. 2. Cold infuse the wattle into the milk vacuum packed over 24 hours. 3. Pass and boil the milk, milk powder and cream. 4. Mix the caster sugar, yolk and trimoline. 5. Make a caramel with the 900g sugar. 6. Add the warm cream mix to the sugar slowly. 7. Pour over the yolks and cook to 82°C. 8. Add the gelatine and miso and bamix. 9. Pass. Freeze in paco beakers.

Grange-over-Sands was originally a small fishing village before becoming a popular Victorian seaside resort. And while Grange-over-Sands is a coastal town and has a promenade, it does not have a traditional sandy beach. Instead, it's known for its extensive saltmarsh area that forms part of Morecambe Bay. But the town can still be popular during the summer with its long promenade as well as the countryside manor, Holker Hall and Gardens. And according to La Liste, Grange-over-Sands is a must for foodies. L'Enclume made it to the very top of their list, ranking as one of the best 1,000 restaurants in the world. It came tied in first place with another eight restaurants from around the world, like Switzerland, France and Japan - all of which got a score of 99.5 per cent out of 100. It's on the site of a 13th century blacksmith in a beautiful pale stone building. The restaurant serves a 20-course tasting menu which has developed from the use of wild herbs and flowers, and costs £265. The town is set to open its very own Eden Project with a "global garden" overlooking the bay. Other images of the site reveal walkways linking treehouses together, as well as other wooden structures to explore. Once it's completed, the new Eden Project will be home to a "hyper-real forest" with large installations and immersive theatre. 5 The new Eden Project is set to open next year Credit: The plans include a "Bay Glade" with a well-being landscape, plus a Natural Observatory for research and education. There will also be an exhibition area and meeting point for guests named the Bay Hall as well as children's play areas, restaurants, cafes and a gift shop. THREE north west restaurants and a city centre hotel have made this year's top 1,000 lists – they're all just a short drive from Warrington. The Chester Grosvenor placed in the world's top 1,000 with Moor Hall in Aughton, Northcote in Langho near Blackburn, and L'Enclume in Cartmel, Cumbria appearing in the world's top 1,000 restaurants. The top 1,000 lists are compiled by using statistics from thousands of publications, hundreds of guidebooks and millions of online reviews – the world's best restaurant and hotel selection at your fingertips. Reviews of the world's top restaurants and hotels by more than 1,000 guidebooks and trusted publications are put together in a giant database. L'Enclume in Cartmel (Image: supplied) Each review score is converted into a standard grade, ranging from 0 to 100, according to conversion tables specific to each guidebook. Several thousands of chefs are asked to give their opinions about local guidebooks. According to the results of this poll, each guidebook is given a "trustworthiness index" ranking from 0 (not to be trusted at all) to 10 (very trustworthy). For each listed restaurant and hotel, calculates the average of all standardised review scores, weighted by each source's trustworthiness index. All restaurants and hotels are then ranked according to their La Liste score. The Chester Grosvenor was awarded a La Liste score of 97 per cent – London's The Savoy achieved 99.5 per cent. Moor Hall in Aughton, headed by chef patron Mark Birchall and recently awarded three Michelin stars, was given 95.5 per cent and Northcote near Blackburn, which has chef patron director Lisa Goodwin-Allen at the helm, was awarded 88 per cent.
