‘Top Chef' Star Serves Wagyu Meatballs at His New Las Vegas Restaurant
That food is traditional Italian with touches of Vegas glitz thrown in. Dimpled, homemade orecchiette pasta gets tossed with spiced duck sausage, charred fennel, white wine, and a hint of chile for heat — all savory, textured, and warming. In a frutti di mare, squid ink pasta is served in a briny mix of clams, mussels, and shrimp in lobster broth. Mozzarella is hand-pulled tableside, draped over heirloom tomatoes while soft and warm. The chef's signature meatball — now upgraded with wagyu, ricotta, and rich tomato sugo — arrives juicy and fragrant with basil.
Dessert at Ai Pazzi looks like layered jars of espresso-soaked tiramisu and sticky lemon ricotta cake with strawberries. Cocktails include the Montenegro Nights with bourbon, vanilla and caramel syrups, bitters, and a toasted marshmallow. Viviani's own Fabrizio di Rienzo wines — exclusive to his hospitality group — round out the beverage list.
The restaurant is part of JW Marriott and Rampart Casino's sweeping $75 million renovation, which also includes a new pizza counter adjacent to the restaurant that will serve Neapolitan slices and an Oyster Bar slated to open later this summer in a new food hall. Vivianni says the Oyster Bar will be like those found in other Las Vegas off-Strip casinos — like the iconic Oyster Bar at Palace Station — but with an Italian twist. He describes it as 'an oyster bar on the Amalfi Coast.' The counter will serve seafood pots, terrines of steamed clams, shellfish-laden seafood towers, and Champagne.
Since his Top Chef appearance, Vivianni has become something of a mogul and pitchman — publishing cookbooks, returning for Top Chef: All Stars , fronting San Pellegrino and Dr. Oetker frozen pizzas, and launching Jars, a dessert-in-a-jar chain now in seven states. Ai Pazzi translates to 'to the crazy ones,' which Viviani says he intends to mean as 'crazy as in obsessed.'
It's an obsession he comes by honestly. 'I want it to be the best Italian food not in Italy,' Vivianni says.
Ai Pazzi at 221 North Rampart Boulevard is open Sunday through Thursday from 5 p.m. to 9 p.m. and Friday through Saturday from 5 p.m. to 10 p.m. See More: Vegas Restaurant Openings

How F1 Fan Keanu Reeves Became the Face of Cadillac's New Racing Docuseries (Exclusive)
Keanu Reeves is back for more. After the huge success of North One's Brawn: The Impossible Formula 1 Story on Disney+, which was hosted by Reeves, budding F1 team Cadillac — who have the world of sport watching after nabbing a coveted 2026 grid spot — wanted to recreate the magic. And that includes the A-list action star, of course. More from The Hollywood Reporter U.K. Streaming Levy Officially Rejected by Government: "We Support a Mixed Ecology" BBC Deemed Bob Vylan "High Risk" Before Glastonbury Set, Moves Staff Off Live Events Team Italian Film Chief Resigns Amid Probe Into Tax Credit for U.S. Producer Now Accused of Double Murder 'Once [Cadillac] had seen [Brawn: The Impossible Formula 1 Story ], they were very keen to get the band back together,' North One boss and three-time BAFTA-winner Neil Duncanson tells The Hollywood Reporter. 'Keanu is up for it and he thinks the story is an extraordinary one.' The new docuseries, reported by THR earlier this week, will have Reeves serve as host and executive producer through his KR+SH production company as showbiz continues to capitalize on the wild success of F1 (see: Brad Pitt's movie currently obliterating the rest of the field at the global box office). The John Wick actor's passion for F1 goes back decades, Duncanson explains, so after sharing Brawn's story, helping to chronicle Cadillac's race to make a worthy car in time for the opening Grand Prix of the 2026 season was a no brainer. 'It was Keanu and [Brawn producer and Emmy-winning director] Simon Hammerson who came up with the idea that they would like to do the Brawn story,' Duncanson says about how Reeves came aboard the projects. 'But weirdly, they couldn't get the thing away in the States. So [former Brawn GP CEO] Nick Fry, who they'd been talking to, suggested speaking to me and timing was everything. Disney were looking for a British last dance, and it ticked all of the boxes.' 'Whilst we're not going to do exactly the same thing with Cadillac, we will be doing something similar,' adds Duncanson. 'We didn't want [Reeves] standing there doing pieces to camera or just a voice-over, we wanted to assimilate him into the narrative. But the main drives of the Cadillac story is us being on the inside and following everything that's going on as it's happening. I don't think anyone would have seen that before.' It sets apart the show from a series like Drive to Survive because it's documenting the build-up to the Melbourne Grand Prix in March as Cadillac prepare to make their hotly-anticipated debut in what is known to be an incredibly exclusive sport. Top of the list? Find a pair of fast drivers. 'The final test, our end game, is when they turn the engine on. Are they competitive?' Duncanson continues. 'They describe it as landing a man on the moon in record time. In terms of engineering, getting the right people, they've got to get the drivers. They've got to build the motor home and design the race suits and the color of the car and find sponsors — everything that goes into that enormous jigsaw that is building a Formula One team, you will see from the inside out.' The show will appeal to as many people as possible, not just those hardcore F1 fans, Duncanson adds. 'Formula One is a unique and extremely rarefied atmosphere… What we're aiming to do is appeal to a broader audience, and I think that's about the characters and the amount of access.' Filming on the docuseries began around a month ago and will continue through to the start of the 2026 season. As Duncanson speaks, he's getting ready to shoot at Silverstone, the British Grand Prix, from the weekend of July 4 onwards. 'Cadillac is one of the great motoring brands in the world,' Duncanson adds, 'known throughout the world as a luxury brand. But now, I think they're trying to reposition as a brand for the next generation.' North One is part of RedBird IMI's production giant All3Media. Demi Moore, Miley Cyrus and Timothée Chalamet to receive stars on Hollywood Walk of Fame
LOS ANGELES — They can buy themselves … stars on the Hollywood Walk of Fame? Miley Cyrus, Timothée Chalamet and Demi Moore were among the 35 honorees announced Wednesday by Eugenio Derbez and Richard Blade. Inductees were selected across five categories: motion pictures, television, live theater and live performance, recording and sports entertainment. There were no radio honorees. Others who made the class of 2026 include actors Emily Blunt, Rachel McAdams, Molly Ringwald, Sarah Michelle Gellar, Rami Malek and Noah Wyle; former NBA star turned sports analyst Shaquille O'Neal; and 'Good Morning America' co-anchors Robin Roberts and George Stephanopoulos, who will have a double ceremony. Italian special effects artist Carlo Rambaldi and director Tony Scott will be posthumously honored. Cyrus, who released her ninth studio album, 'Something Beautiful,' in May, rolled around the Walk of Fame for the music video for her aptly titled single 'Walk of Fame,' later revealing on 'Jimmy Kimmel Live!' that she developed an infection on her kneecap from the bacteria on the famed Hollywood Boulevard sidewalk. Still, the singer shared some of the footage on Instagram shortly after her star was announced. 'When I first came to LA from Nashville as a little girl, my family would stay at a hotel on Hollywood Blvd, and I would go on late night walks with my dad when no one would recognize him. We'd have the gift shops to ourselves & buy knock off Oscars and Marilyn Monroe merchandise,' she wrote. 'To now be cemented on this legendary boulevard, surrounded by the icons who inspired me, feels like a dream.' Her father, singer Billy Ray Cyrus, doesn't yet have a star on the Walk of Fame. Meanwhile, Chalamet is coming off the success of the Bob Dylan biopic 'A Complete Unknown.' He earned an Oscar nomination for his role as the legendary singer-songwriter. He's set to begin filming the third installment of the 'Dune' film franchise, titled 'Dune: Messiah,' this summer, according to Deadline. Moore, who rose to prominence with the 1985 film 'St. Elmo's Fire,' earned her first Oscar nomination this year for her role in 'The Substance,' in which she starred opposite Margaret Qualley. She and Ringwald will be the latest of the Brat Pack to join the Walk of Fame, following Rob Lowe in 2015. It's also a family affair for Blunt and brother-in-law Stanley Tucci, who appeared in 'The Devil Wears Prada' together and are set to return for the sequel. Once selected, honorees are expected to cover an $85,000 sponsorship fee to pay for the creation and installation of the star, as well as maintenance of the Walk of Fame. Recipients have up to two years to schedule their ceremonies before the offer expires.
