Spanish orange-paprika chicken

The colours are lively, the flavours are lively — here's a weeknight supper recipe that will have you toasting life itself.
Our chicken recipes always fly, if you'll pardon the expression. It's clear that you love them, and thank you for that. Here's a chicken dish with a strong Spanish touch, inspired by the oranges in my garden, now bursting with colour and juice.
There's a good hit of paprika in this dish too, lending a spicy breadth to the strength of the tomato component, and something sweet to leaven it. If you are able to find some pale dry sherry (good luck with that), use that instead, but I used some lekker Old Brown Sherry, which is still very much on the market despite Monis' once beloved sherries having been culled. Such a pity.
Anyway, there's nothing wrong with Obies, and it works really well in this recipe. Let's see it, then, as a South African adaptation of a Spanish tradition.
(Serves 4)
Ingredients
8 chicken portions
3 Tbsp olive oil
1 red onion, chopped
3 garlic cloves, finely chopped
2 celery stalks, diced
3 carrots, peeled and cut into slices diagonally
3 Thyme sprigs, picked
Juice of 2 oranges
3 long strips of orange peel
250 ml chicken stock
50 ml old brown Sherry
1 heaped tsp paprika
Salt and black pepper
2 bay leaves
2 heaped tsp cornflour dissolved in water
Method
I used chicken thighs and breasts in this recipe, but any portions will do. If using breasts, cut them in half right through the middle. I removed the bones from the breasts, but not the thighs.
Brown the chicken portions in olive oil. Remove.
Braise the chopped red onion in olive oil with the celery and garlic, until softened.
Pour the chicken stock into a jug with the orange juice and sherry.
Add this to the pot and deglaze, scraping the bottom with a flat-edged wooden spoon or silicone spatula to get all the bits of flavour from the bottom into the stock.
Add the browned chicken back to the pot. Add the carrots, orange peel, thyme and bay leaves.
Season to taste with salt and black pepper.
Bring to a simmer and cook till the chicken is tender, about half an hour.
Thicken with dissolved cornflour and cook gently for a few minutes more.
Serve with steamed rice. DM

The launch marks the start of applications for placements at Gauteng public schools for the 2026 academic year. Speaking at the event, Chiloane said the system had gone live successfully, despite some initial confusion among parents. 'There are some parents who logged in earlier and expected the system to change immediately, but everything came online on time. Now, as we speak, applications are going through,' he said. The online admissions window opened on Thursday and will close at midnight on Friday, 29 August 2025. Parents and guardians can apply using any internet-enabled device by visiting Walk-in centres for assistance The Ga-Rankuwa YMCA is one of 81 decentralised walk-in centres across the province aimed at helping parents without access to smart devices or internet connectivity. 'We're making sure that every parent, regardless of their location or means, can apply. These walk-in centres are key to ensuring no child is left behind,' said Chiloane. 'The system is open to all children, but priority is given to South African children,' he explained. 'Foreign nationals must be in the country legally with the correct documentation. If any school is prioritising foreign learners unfairly, bring it to my attention.' He said the system also takes into account proximity, feeder zones, and previous schools attended. 'For example, an early childhood development centre may feed into a particular primary school, and that is factored into the placement algorithm.' As the number of applications is expected to rise significantly later in the day, Chiloane urged parents not to panic. 'So far, so good with the system,' he added. Sangoma Fezile Pretorius explained that the Tokoloshe has different forms. It was not uncommon to see beds propped up on bricks in many South African bedrooms. It's a measure to keep the Tokoloshe in check, because they cannot climb elevated surfaces. The small, hairy and somewhat hunchback-like creature, as passed on by generations of folklore, is said to be both mischievous and malicious. The creature is purportedly sent to you by someone who wants to create fear in your household or do actual harm. Heavenly Healing's resident healer Sangoma Fezile Pretorius explained that the Tokoloshe, sometimes called Tokoloshi, has different forms in traditional understanding. 'There are three grades of Tokoloshe,' he said. 'The most common one people know is like a little hairy man. Often, it's not mystical at all. It can be trained animals, even baboons, used by certain people to carry out menial tasks. It's more psychological warfare. When you see something that fits the idea of a Tokoloshe, fear grips you and that fear becomes its own weapon.' It's speculative – some believe it, others don't, but it's said that if you allow it into your mind, it can attach itself to you,' Pretorius said. 'There's talk of a Tokoloshe farm somewhere in the country where deformed children are raised as assassins, trained with muti knowledge and all the terrifying things whispered about in secret. I haven't seen it, but it's something we're told to be aware of.' It is a less-than-feel-safe scenario in all three instances, and, said Pretorius, people should take a measured view of the legend. He asked the bones for a perspective. 'The bones say it's true that these things bring darkness into people's lives. Usually, jealousy or money is behind it because someone wants what you have. Once the illusion sets in, it breaks your courage and destroys you from within.' There are ways to protect yourself. 'Regular cleansing, medicine to guard your home, and tying protective cloths in your yard can help. But most importantly, it's how we conduct ourselves in society. But once I was in my new home, a surprising wave of various emotions surfaced – sometimes joy, but also grief, confusion and even regret. This phenomenon is common, I believe, especially if you've left behind familiar streets, friends, or memories. I think it is because our homes often anchor our sense of self. The street we live on, the coffee shop we frequent, even the light through a certain window in the afternoon – these things subtly shape our identity.
