Special holiday dishes provide another meaningful way for these Detroiters to serve others
A 1979 graduate of the former Dominican High School — an educational institution on Detroit's east side that was deeply rooted in a tradition of service — Walker would go on to become a sergeant with the Detroit Police Department. Walker's 17-and-a-half-year journey with DPD included serving as the commanding officer for the Detroit Police Athletic League during the later stages of her law enforcement career.
Walker describes her service to Detroit PAL as "community policing at its finest" because it closely connected her to the Detroit community she loves, as she watched young people "bloom" while learning new skills.
However, Walker would have another experience during her career with DPD that was the furthest thing from joyful, when she was diagnosed with Heerfordt-Waldenstrom syndrome, a rare manifestation of sarcoidosis, which can present itself as a fever, facial paralysis, inflammation of part of the eye, and enlarged parotid glands — the salivary glands in front of each ear. But true to her giving and service nature, Walker would respond to her health challenge by coming together in 2009 with her fellow New Mount Moriah Missionary Baptist Church member, the late Amy Thompson-Turner, to found the Caring Hands Sarcoidosis Foundation, which provides "patient advocacy, educational materials, and self empowerment" for people suffering with sarcoidosis.
And with caring and loving hands, beginning Tuesday, July 1, Walker embarked on a new journey to prepare a special batch of potato salad for her loved ones to enjoy with their holiday feasts this weekend. In doing so, Walker was connecting with someone who taught her to help others and also how to be brave when confronted with adversity. That person is Walker's late mother, Helen Jean Hart Walker.
"While chopping the ingredients and remembering my mother in the kitchen during the holidays making her famous potato salad, waves of wonderful memories washed over me," explained Walker, who in the absence of her mother's instructions turned to a recipe she found online for "Dee Dee's Soul Food Potato Salad," billed as a "cookout worthy recipe," which Walker discovered at dashofjazz.com.
On the morning of July 2, Walker reported that her oldest daughter Jessica was already delivering a bowl of the potato salad to a friend and that a good-size portion was in her freezer for her son Christopher to enjoy over the weekend.
"I'm not sure if it's supposed to be frozen, but nothing beats a try than a try, and I'll be nibbling on the rest," Walker, who received an enormous helping hand in the kitchen from her grandson, Joshua Sidney Chapman, said. "Memories of my mother making potato salad for holidays were precious moments that I had long forgotten about, and I am thankful for the opportunity to relive them again while doing something nice for family and friends."
On the afternoon of July 3, a thankful tone also could be heard in the voice of Temika Wallace, the kitchen manager at St. Patrick Senior Center (Detroit's largest health, wellness and activities center for older adults, located at 58 Parsons, off Woodward behind Orchestra Hall), which has a well-earned reputation for serving some of the heartiest lunches in the city.
For Wallace, a week with a summer holiday provides an opportunity for her to feed seniors at St. Pat's, as well as family and friends, during the holiday weekend, in an extra-special way that she believes is more than worth the extra effort that is required to pull off the feat.
"I love working at St. Pat and making our seniors happy and full, and I feel the same way about the food that I will be preparing for my family and friends for the holiday," said Wallace, a longtime Midtown resident, who will be making her famous seafood pasta salad this holiday weekend to accompany ribs and chicken cooked on the grill. "I make my seafood pasta salad from scratch, and I make it with my own ingredients. And it's just good to see everyone when they're enjoying it and wanting more."
Lisa Gonzalez has a knack for doing more and more for southwest Detroit residents of all ages through three community organizations that she supports: Congress of Communities, a resident-led organizing and advocacy agency that facilitates solutions addressing community needs and concerns; Detroit Champions of Hope, which champions the importance of early childhood care while stressing the importance of parents, caregivers and child care providers as a child's first teachers, and the Mexican Patriotic Committee of Metro Detroit, which promotes Mexican arts and cultural activities, including the Miss Mexico Pageant, an event that symbolizes an ongoing commitment to empowering young women in the community.
With everything Gonzalez has going on, after a long day of activities and meetings, during the evening of July 1, Gonzalez was still excited to talk about foods that will be enjoyed in her community over the holiday weekend. The word "yummy" was repeated constantly by Gonzalez as she described carne asada, a traditional Mexican dish composed of marinated skirt steak or flank steak that has been grilled and thinly sliced.
But after all the grilled food is eaten, Gonzalez says there is another far more simple dish that she will be looking forward to that members of any any community can whip up, and that is Fresas con Crema — strawberries and cream. Gonzalez likes to make the dish using Cool Whip with blueberries on top,. But more than that, she says, the presence of food favorites during a holiday or anytime is a sure sign that good things are going on in a community.

"In our community, we enjoy our food," Gonzalez said with a spark in her voice, even after participating in a late community meeting minutes before. "Even if it's just chips and salsa, or fruit; whenever we come together for anything, we'll have food. It's one of our favorite things to do. It's a source of joy and unity."

The gross reason experts say you should never go to bed with wet hair
Sleeping with wet hair could lead to unexpected problems. Skin and hair experts agree that going to bed before drying your hair can lead to troublesome scalp issues — and even hidden bacteria in your bedsheets. Briana Delvecchio, a hairstylist at Ashley Lauren Beauty Lounge in New York, shared in an interview with Fox News Digital that she always advises her clients against sleeping with wet hair for several reasons. When hair is wet, the hydrogen bonds in the strands are temporarily broken, making it more elastic, fragile and prone to breakage, she cautioned. "Combine that with friction from your pillowcase, and it's a recipe for split ends, tangles and long-term damage," Delvecchio said. The scalp "also takes a hit," she added, as a damp scalp trapped against a pillow overnight creates a warm, humid environment that's ideal for fungal growth and bacterial buildup. "This can trigger scalp irritation or dandruff, or even make your roots feel greasy by morning," the hairstylist warned. Sleeping with wet hair can also impact facial skin. "That moisture transfers to your pillowcase, which can harbor bacteria and oil that contribute to breakouts or flare-ups in sensitive skin," Delvecchio noted. Dr. Noah Gratch, M.D., a board-certified dermatologist in New York, told Fox News Digital in a separate interview that he also recommends against sleeping with wet hair. "While it's not dangerous, there are dermatologic and hair health concerns associated with the habit," he said. Friction against the pillow can exacerbate damage of fragile wet hair, leading to breakage and shedding over time, the dermatologist warned. The damp environment can also contribute to scalp and skin issues, he agreed. "A constantly damp scalp creates a warm, moist environment that can promote the overgrowth of Malassezia, a yeast that naturally lives on the scalp but can proliferate under these conditions," Gratch said. "This may contribute to scalp conditions, such as seborrheic dermatitis (a chronic inflammatory skin condition) or dandruff." Sleeping with wet hair also increases the risk of developing folliculitis – a skin condition that causes irritation, inflammation and bumps – or fungal infections in people with "already compromised skin barriers or oily scalps," Gratch said. The dermatologist reiterated that moisture trapped on the pillowcase can harbor bacteria, fungi and dust mites. "Prolonged skin contact with this moisture may contribute to acne flare-ups, particularly fungal acne, or exacerbate existing skin conditions like eczema," he warned. You wouldn't show up to a road trip on an empty tank—so why head into a workout without fueling up first? The right pre-workout meal can help you power through your lifts, runs, or rounds with more energy, better endurance, and less burnout. Whether you're training first thing in the morning or squeezing in a session after work, what you eat beforehand matters. Think about it: A sports car still functions with regular old unleaded gas, but it won't run as optimally or as long. Likewise, "would you expect to get to your destination if the tank was on empty?" says Jordan Mazur, R.D., coordinator of nutrition and team dietitian for the San Francisco 49ers. And while fasted cardio has always been a diet trend among people hoping to lose weight, "going into your workout fueled and ready to go will maximize the work you do when you train," Mazur your pre-workout nutrition, you want to focus on foods that are high in carbs, moderate in protein, and low in fat and fiber. "Fat and fiber slow down digestion and can cause gastrointestinal upset during your workouts. Carbs are your main fuel source for activity and, just as important, it's the primary fuel source for your brain. Additionally, the more substantial the meal is, the more time you want to allow for digestion, so it's not sitting in your stomach," Mazur says. Here are the 10 pre-workout foods and snacks that'll pave the way for gains, whether you train in the gym or on the road. "The berries and granola provide quick-digesting carbs to fuel your workout, and the Greek yogurt provides ample protein to prevent some of that muscle breakdown," Mazur says. Look for a granola that contains nuts, seeds, and wholesome carbs (like oats, amaranth, quinoa, and/or millet). Try to find carb sources sweetened with coconut oil, dried figs, and/or vanilla; you want to keep sugar to a minimum. Same goes for the yogurt: Stick to plain rather than fruit flavors. "Fruit provides simple sugars that are easy to digest," Mazur says. "They're your body's preferred source of energy for high-intensity workouts." Alternatively, go with half an avocado, frozen blueberries, a banana, and almond milk. If you're always running late, whip up these blueberry-almond overnight oats. Almond butter, chia seeds, and oats, especially, "provide sustained energy for longer workouts," Mazur says. This recipe also gets a protein punch thanks to plain Greek yogurt and protein powder (vanilla or unflavored). "A scoop of protein powder adds amino acids to aid your muscles that are breaking down." "Bananas are mother nature's power bar: They're loaded with simple carbs for fuel and potassium, which helps with optimal nerve and muscle function," Mazur says. Top one off with a serving of peanut butter—or any other nut butter you like. (Just try to stick to the recommended 2 tbsp serving size.) If you want a little sweetness, drizzle a bit of honey. It'll release slow, steady levels of glucose into your bloodstream—great for grueling WODs and endurance workouts when your body can start using muscle glycogen as fuel if it doesn't have enough readily available carbs. "Dried fruit, like raisins, can be a good source of natural simple sugar," Mazur says. The small amount of fiber in the apples and raisins, plus the monounsaturated fats in the almond butter, will curb your hunger without filling you up—ideal if you aren't too hungry in the morning. Chicken salad with grapes might not be the first thing that comes to mind for a pre-workout meal, but it's actually a smart option when timed properly. The chicken provides lean protein to help preserve muscle and support recovery, while the grapes offer quick-digesting carbs that give you a natural energy boost before you hit the gym. A bagel with honey is a solid pre-workout snack because it delivers fast, efficient fuel without weighing you down. The bagel provides a generous hit of carbohydrates—your body's preferred energy source during exercise—while the honey adds a quick dose of simple sugars that are rapidly absorbed into your bloodstream. 'A bagel provides about 10g of protein, which helps slow the absorption of carbohydrates, unlike honey on its own, which causes a quicker spike and crash in blood sugar," says Dalton Leath, a Nashville-based personal trainer. By making homemade granola bars, you can "fuel your body for a lot less money," Mazur says. All it takes is a little prep work. Stick to ancient grains, wholesome carbs, seeds, and a little dried fruit. Cottage cheese is a power-packed breakfast (or snack) that contains healthy amounts of casein and whey protein. Casein is a slow-digesting protein that fuels your muscles for hours, helping them grow and recover; whey is a bodybuilding essential that helps bulk muscle and burn fat. Add dried apricots to a serving of cottage cheese: The combo of protein and carbs is low in fat and fiber, which can sometimes cause belly bloat.
