Taste of Italy: These delicious pizzas are the perfect freezer fillers this summer

Summer and pizza go well together, what with lazy days, smaller appetites, and a reluctance to cook when the sun is shining. A few pizzas in the freezer are ideal for those days when a sandwich seems insufficient, yet the same combination of ingredients hot out of the oven is a satisfying treat.
For this week's top 8, we kept an eye out for old favourites along with new flavour combinations. We also spotted pizza dough in freezer compartments, for those who want to choose their own toppings.
Even better, if the weather isn't so good, amuse the children by making pizza dough from scratch, and save a few euros.
Use 500g strong flour, ½ teaspoon dried yeast, 1 teaspoon salt and 300ml warm water to make a dough by hand or in a blender or mixer. Mix until well combined. A dough hook in the mixer will knead it for 5-10 minutes, until it becomes spongy.
Tip onto a floured surface and, if making it by hand, knead with the heel of your hand until it feels bouncy – this can take 15 minutes, depending on the weather. Set aside for a few hours in a covered, oiled bowl until doubled in size.
Flatten out and top with your favourites, topping with basil leaves after cooking. For a quicker result, though a little heavier, scone dough, rolled thinly, also works.

A light thin base of white and wholemeal flours has puréed cauliflower and carrot, which lighten the texture and add to the flavour of a tasty crust. The topping has a natural, flavoursome sauce made from tomatoes, salt, sunflower oil, herbs and garlic, finished with a generous amount of mozzarella. This topping comes with finely sliced and mildly spiced pepperoni. Produced in Dublin, we bought it in Lidl Ballincollig.

Good, natural pizza base of just flour, water, salt and yeast makes for a flavourful crust and a light base. The topping of simple tomato sauce made from tomatoes, salt, a little sugar and pepper is nicely balanced and topped with olive oil and fresh basil leaves. A hit with all tasters. Produced in Cork.

Good, thin, pizza base here made from basic ingredients - flour with malted flour, yeast, water and salt. The topping has decent chunks of juicy peppers, courgettes, and tomatoes drizzled with olive oil and herbs. Enjoyed by all.

Expecting the dry taste of some gluten-free products, tasters were pleasantly surprised by the taste and light texture of this pizza. The crust is made with rice flour, cornflour, pea flour, flaxseed, and various starches. The tomato sauce is quite rich, the mozzarella is generous, and it's seasoned with oregano. Made in Italy.

Tasters liked this balance of a crunchy base, which was not too thick, topped with rich tomato purée and the five cheeses mentioned in the Italian title – mozzarella, smoked white cheddar, provolone, ricotta and blue. The five make for interesting textures – creamy and chunky, dry and stringy. No chemical additives in the base or topping. Made in the EU.

Tasters liked the blend of creamy mascarpone cheese with garlic-flavoured mushrooms. The ham was unremarkable but there was plenty of flavour overall with the topping of Parmesan.

A good blend of cheeses here – smoked provola, emmental, asiago cheeses, as well as unspecified 'hard cheese', topped with tasty buffalo mozzarella pearls.
The base made from wheat flour, dried wheat sourdough, malted wheat flour, black pepper and yeast, with maize starch and dextrose, makes a tasty and crisp crust. The sun-dried tomatoes with garlic add a rich flavour to the topping. Made in Italy.

The pineapple-on-pizza debate will continue as long as people enjoy this combination. Here, it works well with plenty of mozzarella to bring a genuine Italian feel to this pizza.
Ham and pepperoni both have preservatives and stabilisers. As an occasional treat, these are fine, but it's best to avoid UPFs in the form of processed meats daily. Irish made.

Cllr John O'Rourke is frustrated with the low rate of collection at clothes bins in the town leading to dumping and untidiness with the clothes bin in the old Dunnes Stores carpark being a large offender. Having been in the area recently, Cllr O'Rourke said he watched as members of the public removed bags out of the overflowing bank, rifled through the bags and took pieces of clothing for themselves, before leaving the remnants of clothes and plastic strewn across the road. "I have repeatedly asked that we write to the clothes bin provider about increasing the rate of collections and it is getting to the stage now that it is just ridiculous. It is every day without fail that this is going on.' He highlighted how it was unfair for both the people who want to donate to a good cause and the people meant to benefit from it. "People want to provide genuine support to charities, and there are people taking what they want from the overflow without consent and leaving the clothes strewn everywhere. It is absolutely crazy,' he said. However, he is also encouraging residents to think about the multitude of charity shops nearby in the town that they could use as an alternative. "We get these flyers in the door with stickers for charities A, B, C, and D – but if people feel the need to donate their clothes there are charity shops in the town that would make better use of the clothes rather than dumping them beside a full bin,' he added. Furthermore, he said that the strewn clothes and plastic is making the area unsightly and causing even more work for the volunteers in the Enniscorthy Tidy Towns, especially in the adjudication period for the Tidy Towns competition. "It just looks terrible,' he said.

Sourdough keeps well and even matures in flavour over days. As the wild yeasts combine with the natural bacteria in flour to ferment, the fermentation process is a lengthy one. This interaction pre-digests the dough, producing carbon dioxide that promotes the bread's rising while breaking down the gluten, and explains why some people with suspected gluten intolerance can tolerate sourdough. It's difficult to establish how much sourdough goes into a loaf. Some brands add sourdough flavouring, or a small amount of sourdough, along with regular yeast. I consulted the Food Safety Authority to see what can be labelled as sourdough. There is no ruling. 'If a consumer buys the product, it should have the general characteristics of what they expect a sourdough bread to be,' said a spokesperson. The best way to judge sourdough is over a few days. Those with all sourdough will last a week, while those with faster-rising regular yeast will go stale in a few days, some becoming rock hard, as a fresh baguette does (use for breadcrumbs). Dunnes Stores' Tartine Sourdough Ciabatta. Food pics: Chani Anderson Tartine at ABC in selected Dunnes Stores, ciabatta sourdough €3.90 Ciabatta has an open texture with an extra-chewy crust, and this one delivers these genuine Italian elements. All tasters put this and the sourdough baguettes top of their list. A good introduction to sourdough, the flavour is mild enough to appeal to children. Chop into cubes for croutons, or dip slices in crunchy salt and olive oil as a sociable starter. Use for sandwiches, lining with lettuce to cover the holes. Score: 9.5 Doreen's five grain sourdough Doreen's five grain sourdough €3.99 A comfortingly short list of ingredients includes malted wheat, wheat flour, sunflower seeds, linseeds, millet, pinhead oatmeal, barley, and rye. Dried rye sourdough gives it a very light texture, and it lasted well. As there is no salt, it is good for children's sandwiches. Adults would have liked a little salt. Children also liked that there is little or no sourdough flavour. Adult tasters would have liked more, but the natural taste won them over. Score: 8.75 M&S crafted sourdough €5 M&S crafted sourdough €5 With a light, open texture, and a nice, natural mild sourdough flavour, this was described by one taster as 'streets ahead' of many. A favourite. It contains rye flour and wheat flour. Kept well for several days, but this is also one to halve and freeze while still fresh. A good all-rounder. Score: 9 Tesco seeded sourdough bloomer €4 Tesco seeded sourdough bloomer €4 Not much sourdough flavour, but a good, slightly moist texture and chewy crust with a nutty finish from the seeds. Many of our rejects were claggy in the mouth due to the addition of soya flour (to make it squeezy) and other additives, but this one tasted like it was made, as it should be, from just flour, water, salt, and sourdough starter. Kept well for five days. Score: 8 SuperValu sourdough cob €3.99 SuperValu sourdough cob €3.99 Made from scratch in the Ballincollig (L&N) supermarket, this stood out for its good crust, slightly malty flavour with some sourdough hints. We bought it already wrapped and sliced – handy for saving some slices in the freezer for later. It kept for a few days. Score: 8.75 Lidl white sourdough €2.99 Lidl white sourdough €2.99 Nice, open-textured bread, stocked frozen and finished in-house, where we bought in Ballincollig (not every branch has a bakery). Not much flavour, but pleasant, with a nice, chewy crust. Unfortunately, it went hard after three days. There's a sting of sourdough too, as if added in for flavour rather than slow development. Lots of additives – cellulose gum, esters of fatty acids, diphosphates, calcium acetate - lost some of the tasters' approval. They liked the taste and texture, though. We bought in the Bishopstown, Kinsale Road branch. Score: 7 Fitzgerald's 2 Bake at Home sourdough baguettes €2.49 Fitzgerald's 2 Bake at Home sourdough baguettes €2.49 Two rolls, vacuum-packed separately, are pre-baked, and we finish them at home in the oven. The label states there's just a little sourdough which is not surprising as it's not in the taste or the texture, which is more like regular baguette. There is also bread yeast, reflected in the texture with a crisp crust like a regular baguette and a tasty, light crumb. Goes stale quickly once baked. Score: 7

King Skewer restaurant review: Get your hands gloriously dirty as you gnaw on chicken feet

King Skewer      Address : 8 Cathedral Street, Dublin 1, D01 V0C6 Telephone : 01 445 8207 Cuisine : Chinese Website : Cost : €€ I spot King Skewer coming out of M&L Chinese in Dublin 1, full of deep-fried sea bass and green beans. Across the road, through a large window, I see sizzling trays and detect the faint sting of smoke. It immediately goes on to my must-visit list. Months later, I'm back, at 7pm on a Wednesday, turning off O'Connell Street into the quieter stretch of Cathedral Street. I have no idea if you can book – the website is dedicated to takeaway. Inside, it's all Chinese customers and not a single laminated menu is being explained to anyone. There are couples, parents with babies, grandparents, solo diners and at least one date. I like it already. The menu is long, printed in columns, and divided by method: cold plates, skewers, pots, tinfoil trays, with prices ranging from €1.50 to €18. It includes duck tongue, pig's ear, chicken gizzard, lamb kidney, bullfrog, and pig intestine, grilled over open flame or simmered in broth. One item in Chinese (the only one without a translation), turns out to be sheep's brain with milk and enoki mushrooms. There's a wine list: glass €7.95, bottle €28.50. That's all the information you get. Heineken is on tap and available as a two-litre or three-litre chilled beer pot, perfect for groups who prefer to pour their own. We go for a pint of Heineken (€7) and two cans of 0.0 (€5.50 each). READ MORE We start with skewers. The chicken feet (€3), skin and nails removed, arrive first. Two of them on the bone, scorched on a skewer. They're not puffed or made into snacks for the cautious, but spiced with cumin and a touch of heat. You gnaw each digit down to the bone, working the cartilage loose. When you're finished, the skewers go into a brushed-steel skewer bucket. Then the dried tofu roll (€5), five skewers. Thin sheets of tofu have been filled with cumin, spring onion and fresh coriander, rolled tight like vegetarian cigars, slicked with chilli and sesame oil, and finished on the grill. Superb work for €5. Tofu and chicken feet skewers The duck tongues (€3), two skewers, are coated in cumin and salt that catches in the gum. You pull the thin strip of flesh from the bone with your teeth and discard the rest. They are resilient, fatty and entirely worth it. One large prawn (€2) arrives on a skewer, grilled until it's molten copper. The flavour is in the char – that crustacean caramel that can only come from a scorching grill and someone who knows how to jostle with smoke. Then the oyster (€4.50). It's enormous, grilled in its shell, covered in glass noodles and enough garlic to announce your arrival for days. The sizzlers arrive in tinfoil trays. The sliced potato (€11.95) is crisp at the edge, glazed in chilli oil. The spice blend is close to a spice bag – heat, salt, crunch. There may be some sugar or honey in there. There's definitely a burn – dry, low and persistent. The corn and cheese tray (€9.95) is hot and bubbling. We see it on almost every table. It's sweet – almost dessert-level sweet – and tastes like a cross between mac-and-cheese and rice pudding, if both were made with corn. The cheese is pleasingly stringy. Sliced potatoes Corn and cheese tray Quail (€8), spatchcocked and pinned open on three skewers like a butterfly dissection, has skin that is blistered mahogany. It's the best thing all night. Fat in the legs, crisp under the wing, bone-in, full of juice. The meat is sweet and firm and slightly gamy. There is no polite way to eat it. You need hands. You need wipes. The spicy lamb (€7), marinated and dusted in cumin and chilli, has been grilled to a deep crust. There's a slight chew and a fat cap that smokes as it hits the skewer. It's a classic dish of the Dongbei region in northeast China, reflecting nomadic and Mongolian roots. The service is friendly, helpful, and quietly impressive. Everything's well-paced – there's no pile-up or lag and dishes are cleared when they need to be. The atmosphere is warm and chatty. You could come here and spend €10 and leave happy, or rock up with a gang, get the beer pot, and keep the grill going until midnight. At King Skewer, it's about meat and fire, coriander and salt. Your fingers will be sticky, your table a mess, and as you walk out that lipstick red door, you'll be planning your return. But do book. I've since discovered there's no online option, just a phone number. Dinner for three with three beers was €75.40. The verdict Sizzling skewers with regional integrity Food provenance Chicken feet and tongues from Irish poultry processors, Irish oysters, Irish chicken, not free-range, and Irish pork, with some free-range cuts. Vegetarian options Sizzling potatoes, sweetcorn and cabbage; dried tofu roll, king mushroom, garlic sprout and lady's finger. Wheelchair access No accessible room or toilet.
