Food Picks: Return to PS.Cafe for its refreshed brunch menu

SINGAPORE – The cafe scene here has evolved beyond serving a basic brunch. These days, you also need to have a (preferably pet-friendly) cool ambience, social media presence and – if possible – some kind of meaningful mission to champion.
But, above all, it is the solid food, drinks and service that get return customers. And there is one home-grown cafe chain that still delivers on that.
It has been many years since I dined at PS.Cafe but stepping into its Dempsey outlet feels familiar . And the reason for my return is its biggest brunch-menu refresh to date – yes, this 26-year-old establishment still needs to stay relevant.
The new brunch items are also available at its Great World, i12 Katong and East Coast Park outlets, with plans to launch across the other six branches by the third quarter of 2025.
Cow & Egg ($26) is the star of the show, with creamy French-style scrambled eggs on sourdough and a thick-cut 48-hour slow-cooked glazed beef brisket. The chicken version, Chicken & Egg ($22), comes with crispy fried chicken pieces and sweet soya maple syrup.
My other pick is the Smoked Brisket Bunwich ($19), a seeded bun stuffed with smoked beef brisket, creamy herb mayonnaise, crispy bacon and a fried egg with runny yolk. Here, the brisket is in thin slices and lightly pan-fried.
I would happily replace my usual order of the PS. Big Breakfast with the improved PS. Full Breakfast ($29), which has roasted oyster and shimeji mushrooms and lightly sauteed spinach. They replace the baked beans and salad from the original dish, which includes two eggs of choice, bacon, toast, sausage and cherry tomatoes.
For dessert, try the Honey Crust Brioche ($16) , which lives up to its name for its beautifully burnished crisp crust . It is topped with a generous scoop of coconut ricotta and gula melaka drizzle.
Stuffed to the gills, I eyeball someone's order of a Pancake Stack ($24) – four cornmeal pancakes topped with berry coulis, fresh berries and brown sugar ricotta. Guess that is what I am having for my next visit.

CULT-favourite Japanese restaurant Imamura in Sentosa has announced in a message to its customers that it would be closing its doors at the end of August, ending a three and a half year chapter in Singapore. Despite building a reputation for its fine kaiseki-inspired cuisine by chef Hirofumi Imamura in an authentic, Zen-style setting on the resort island, getting a consistent stream of customers from the 'mainland' was a major challenge, said Imamura, who teamed up with Japan-based hospitality group GHS Inc to open his eponymous restaurant. Imamura restaurant was located in an old chapel on the grounds of Amara Sanctuary Resort on Sentosa. PHOTO: IMAMURA Like other Singapore F&B operators who have been venturing overseas instead of expanding in Singapore, GHS will return to Tokyo, where it plans to open Imamura restaurants there and in Bali. The new Imamura starts a new chapter in early 2026 at the new luxury hotel, Kimpton Ubud Bali, which opens on the Indonesian resort island in the early part of the year. This will be followed by a second restaurant in the Japanese capital. Chef Imamura said he will split his time between Tokyo and Bali to oversee operations in both locations. He added: 'We started to feel the downturn in business after Covid-19. While things initially picked up as restrictions eased, sustaining consistent traffic, specially for destination dining in Sentosa, proved challenging. Changing dining habits also played a role.' To drum up business, the restaurant introduced 'a brunch service and held special events like sake-pairing dinners in collaboration with sake masters, which were well received'. However, at the end of the day, 'it was getting more challenging, especially for fine-dining Japanese restaurants and kappo-style concepts'. The restaurant, located in an abandoned chapel on the grounds of Amara Sanctuary Resort, made a splash when it opened in 2022, with the chef's unique take on classic Japanese cooking. But it failed to make it to the Michelin guide, despite strong expectations that it would earn a star. Even so, Michelin stars have proved to be no protection for the bottom line, with eight Singapore restaurants having dropped out of this year's guide due to closures. The latest casualty was Alma by Juan Amador, which announced that it would close by Aug 15. The announcement on social media came just days after it retained its one Michelin star at the awards on Jul 24.

Find out what's new on ST website and app. JAKARTA - Indonesia has signed a contract to buy 48 KAAN fighter jets from Turkey, the Indonesian defence ministry said on Tuesday, sealing the latest purchase by the Southeast Asian nation aimed at modernising its ageing military hardware. In order to strengthen its air force, Jakarta also ordered 42 French Rafale jets worth $8.1 billion in 2022. It is also considering ordering China's J-10 fighter jets and continues talks to purchase the U.S.-made F-15EX jets. Indonesia and Turkey "signed an implementation contract" last Saturday on the sidelines of the International Defence Industry Fair in Istanbul, defence ministry spokesperson Frega Wenas Inkriwang said in a statement. He did not provide details of the contract value or delivery dates. KAAN is Turkey's first national combat aircraft and it completed its first flight in February last year, but serial production is not expected to begin until 2028. Turkey's defence ministry called the jet a fifth-generation aircraft and said it will be powered by two General Electric F-110 engines, which are also used in the fourth-generation Lockheed Martin F-16 jets. Defence Minister Sjafrie Sjamsoeedin witnessed the agreement signing, Frega said, adding the contract signing reaffirms the commitment of both governments to strengthen joint technology development and expand Indonesia's defence industry capacity. Police did not immediately make details of the shooting public, but a law enforcement source told Reuters at least one New York Police Department officer and two civilians were struck by gunfire and that the suspect was believed to be dead. The source said the information was preliminary, and the condition or extent of injuries sustained by the police officer and two others was not immediately known. The New York Post newspaper, citing unnamed police sources, reported that a gunman wearing a bullet-resistant vest and carrying an AR-style rifle had opened fire inside the Park Avenue skyscraper, wounding a police officer and a bystander.
