‘Top Chef' begets Martha Stewart and José Andrés' new ‘Yes, Chef!' Will their kitchen therapy work?
'For far too long,' Martha Stewart says into the camera during the opening moments of NBC's new 'Yes, Chef!' cooking competition show, 'the pressure of the kitchen has been an excuse for out-of-control behavior.'
'That kind of behavior doesn't make a great chef,' adds her co-host, chef José Andrés. 'It holds them back.'
Stewart and Andrés are correct. And yet, that kind of behavior — yelling at fellow chefs, throwing pans in frustration, undermining colleagues and sometimes inflicting more harmful abuse — has been the roiling soup that has fed reality TV cooking competitions for more than 25 years. It's also been the kind of behavior that restaurant workers have tried, with varying degrees of success, to root out as cheffing became an aspirational profession instead of disrespected grunt work.
You can read about the pain as well as the allure of working in and around restaurant kitchens in several recent memoirs, including Laurie Woolever's 'Care and Feeding,' which restaurant critic Bill Addison praised in this newsletter last month, Hannah Selinger's 'Cellar Rat: My Life in the Restaurant Underbelly' and books by two chefs and reality TV cooking show insiders, Tom Colicchio's 'Why I Cook' and Kristen Kish's 'Accidentally on Purpose,' which I wrote about last week.
If you've watched even a few minutes of a reality TV cooking competition — from 'Hell's Kitchen's' Gordon Ramsay angrily dumping out a contestant's overcooked steak to even the sweet contestants on 'The Great British Baking Show' expressing frustration — chances are good that you've seen how the kitchen pressure Stewart talks about often does lead to bad behavior.
So can a reality TV cooking competition really help chefs become better people — and better bosses?
Possibly. But three episodes into the inaugural season of 'Yes, Chef!' — a show cast with '12 professional chefs, each with one thing standing in their way: themselves,' Stewart says — it looks as though the cards are stacked against redemption.
'In our kitchen,' Stewart tells viewers about the chefs, 'it takes a lot more than good food to win. They'll need to figure out how to work together.'
Andrés and Stewart have a lot of life experience and advice to offer, with Stewart admitting, 'I have been known to be a perfectionist. And that kind of holds you back sometimes.'
But when it comes down to which team wins and which team loses, it turns out that good food does matter more than bad behavior. (Note that there are spoilers ahead if you haven't watched the show yet.)
After TV competition show veteran and designated villain Katsuji Tanabe ('Top Chef,' 'Chopped') takes all the eggs in the kitchen so that the opposing team has none to work with, he and his teammates are rewarded with a win. The reasoning: The losing chefs struggled to, in the language of the show, 'pivot.'
Even worse for the development of the chefs, the decision of who stays and who goes at the end of each episode is not made by Andrés or Stewart. Instead, a one-on-one cook-off is set up between the contestant deemed to be the Most Valuable Chef (MVC) and another contestant that the MVC strategically chooses to go up against. If the MVC wins, the challenger chef goes home. But if the challenger chef beats the MVC, the challenger becomes the decider. So far, this has led to one of the better chefs, Torrece 'Chef T' Gregoire, being booted largely to reduce the competition, followed by the executioner of that decision, Michelle Francis, getting axed in the next episode, possibly comeuppance for sending home a popular player the week before and partly because of her dish — even though she was handicapped by the egg theft.
The sharp edges and head games almost feel retro, closer to the template set 25 years ago this month when 'Survivor' first aired and popularized the whole 'I'm not here to make friends' trope that was common in sports and then became emblematic of reality TV posturing.
We'll see as the season progresses whether the chefs can turn around the bad attitudes and insecurities that led to them being cast on the show. I certainly hope Andrés and Stewart are given more time to guide the chefs toward their better selves in future episodes.
But if you want to watch a show where the chefs are modeling kitchen behavior we'd like to see more of in our star chefs, may I suggest the current season of Bravo's 'Top Chef.'
Both 'Yes, Chef!' and 'Top Chef' are made by the production company Magical Elves, but 'Top Chef,' now in its 22nd season, is showcasing a group of chefs who actually seem to care about each other. Yes, there are big personalities on the show, notably Massimo Piedimonte, who often generates eye rolls by the other chefs when his bravado goes overboard. But he is seen in quieter moments trying to tame his impulses and become a better person. And there is genuine emotion displayed when chef Tristen Epps gets word right before a big challenge that his father-in-law has died and his mother encourages him to continue competing. The entire show, from the production staffer who takes him off the set to his fellow competitors seem to support him.
There is even camaraderie among the losing contestants who try to work their way back into the competition through the spin-off 'Last Chance Kitchen,' judged solo by Colicchio showing his mentoring skills. When Chicago's North Pond chef César Murillo is pitted against three-time 'Last Chance' winner Katianna Hong, co-owner of the recently closed Arts District restaurant Yangban, there is support and respect shown for both talented competitors by the eliminated chefs watching the proceedings, including chef Kat Turner of L.A.'s Highly Likely.
'Top Chef' used to have a lot more hotheads. 'I'm not your bitch, bitch,' was a catchphrase in the show's early years when one chef pushed another too far. But the new season, which has just a few more episodes to go, is proving that you can cool down the temperature in the kitchen and still entertain.

Food's Stephanie Breijo spent time at the very pink San Luis Obispo landmark, the Madonna Inn, and says that the 'maze-like, kaleidoscopic lair of chroma and whimsy is home to some of the most iconic food on the Central Coast.' She came away with insider knowledge of the red oak grills at Alex Madonna's Gold Rush Steak House and of the Inn's famed pink Champagne cakes — made in the hundreds each week. But the pink cake recipe remains a secret. Breijo did, however, get the recipe for the Inn's Pink Cloud cocktail — topped with whipped cream and a cherry.

This week, the paper introduced a new feature, L.A. Timeless, which highlights stories from our archives. The first two stories this week come from former L.A. Times restaurant critic Ruth Reichl, who wrote about learning to shop for fish at L.A. supermarkets with Jon Rowley, the man Julia Child once called 'the fish missionary.' I got to go along on that reporting trip all those years ago and I'll never forget the lessons Rowley taught us. Her companion story on Rowley went into one of his obsessions: '[T]hat fish can be too fresh ... a fish coming out of rigor mortis five or six days after harvest (in ice, of course) can be far better eating than a fish less than one day out of the water.'

NYC's famous Subway Baby is turning 25 — and thriving
The subway baby is all grown up. This summer marks 25 years since New Yorker Danny Stewart found a baby in a subway station and went on to adopt the infant with his partner, Peter Mercurio. Their touching story is the subject of a new book, 'There: We Found Our Family in a New York City Subway Station' by Mercurio, and a short film, '18 Months,' which just won two awards at Cannes Lions. The film is the work of Second Nurture, an organization that works to support adoptive and foster families and for which Stewart serves as a board member. By the time he reached the A/C/E station at 14th Street, he was running late to meet Mercurio, then 32, for dinner. As he pushed through the turnstile to exit, he saw what looked like a doll wrapped up in a black hoodie on the ground. Then, one of the doll's legs appeared to move and he realized it was actually a newborn baby. He ran up the steps to call the police from a payphone — this was a time before cell phones were ubiquitous — then raced back down to comfort the tiny infant, who still had part of the umbilical cord attached. Authorities retrieved the baby, but Stewart couldn't forget him. 'I could not stop thinking about him,' he told The Post. 7 Mercurio has just published a book about their family's unique origin story. Still, Stewart, a social worker, didn't initially think he'd adopt the baby. In early December 2000, he went to court to recount his story, so that authorities could prove the baby had been abandoned and speed up the process of finding him a permanent home. During the proceedings, things took an unexpected turn and the judge asked if Stewart was interested in adopting the baby. He was shocked — the judge knew nothing about him — but answered 'Yes.' Mercurio wasn't initially so sure, but Stewart was adamant that he would be proceeding with or without him. 7 Stewart couldn't stop thinking about the baby he'd found. '[Also,] I thought it was going to be a long process. So I was like, we're going to have time to figure this all out.' 'I said something really snarky, which was 'Good luck being a single parent in New York City.' And it didn't faze him at all,' Mercurio recalled. By Christmas, the baby was home with them. They named him Kevin, the moniker Mercurio's parents had planned to give a child they'd lost in 1967. 'The old tears of grief now mixed with new tears of joy,' Mercurio writes in the book of the moment he told his mom and dad about the name. They asked the same judge who had initially asked Stewart if he wanted to adopt the baby to officiate. They also asked the official — referred to in the book only as Judge Cooper — what she had seen in Stewart that day in 2000. 'All babies need a connection with someone and I was that someone,' he recalled her telling him. The wedding ends the book, but Kevin's story has continued — happily. He attended the NYC Lab School for Collaborative Studies in Chelsea, near where the family lives, and went on to graduate from Swarthmore College, studying computer science and mathematics. 7 Kevin, who is now living in Pittsburgh and working in website development, recently surprised his dads by coming to NYC for a screening of '18 Months.' July 4th fireworks on TV: Bigger NYC show to fire 80,000 shells around Brooklyn Bridge
Even TV events with built-in dramatic explosions get a bigger boom with a returning star. NBC's 49th annual Macy's 4th of July Fireworks viewing party on July 4 (8 ET/PT, and streaming live on Peacock) brings the holiday heat with the return of the iconic Brooklyn Bridge as a stunning spectacle backdrop for the first time since 2019. The famed 142-year-old suspension bridge with the telltale Gothic columns will undergo a digital facelift for its pyrotechnical closeup of 80,000 shells, following a concert hosted by Ariana DeBose featuring the Jonas Brothers, Trisha Yearwood, Lenny Kravitz, Keke Palmer, Ava Max and Eric Church. 'The Brooklyn Bridge absolutely stars in the concert and in the fireworks shot off four barges and from various points," says executive producer Will Coss, adding the bridge and columns will be enhanced digitally by "bespoke" projection mapping, which "will bring these static columns to life for the first time." New Yorkers can view the fireworks from several vantage points in the city. But TV viewers get up close to the biggest televised Independence Day fireworks show. Here's what to know about Macy's 4th of July Fireworks. The fireworks are desert-tested, 'Oppenheimer'-style Coss calls the fireworks, a 25-minute "beautifully choreographed dance" to a musical score produced by Ahmir 'Questlove' Thompson and James Poyser, accompanied by a live performance from DeBose. Gary Souza, the show's pyrotechnic designer for the last 40 years, says he has "literally shopped around the world" for this year's cutting-edge "three-dimensional" display, setting explosions as high as 1,000 feet in the air and firing horizontally from the 1,600-foot main bridge span over the East River. The bridge will be part of each fireworks burst, which will feature eight to 10 effects, many on the bridge itself. "There will be helixes, waves, and snakes that will progress and intertwine almost like a DNA molecule from bridge tower to tower," says Souza. Souza traveled to his ancestral country of Portugal to import a shimmering bridge waterfall display. The product arrived a day before Souza's June test of the show's key explosive elements in California's Mojave Desert, an annual event that resembles the "Oppenheimer" test for fireworks, where the full arsenal can be safely inspected. "They really over-delivered on this waterfall," Souza promises. "It's going to open up like a shimmering curtain in the bridge center all the way across the two towers for 60 seconds and will be one of those 'Oh My Gosh.' moments." 2025 show has more fireworks, fewer drones, still one helicopter Drones have soared into prominence in the world of fireworks displays, including previous Macy's July 4th celebrations. The 2023 event featured a 500-drone light show, and in 2024, hundreds of "pyro-drones" – equipped to mimic the visual effects of fireworks – took center stage in the spectacle on the Hudson River. However, the 2025 Macy's show is "taking a break" from show drones, says Coss, focusing the technological highlights on the bridge mapping. But drone cameras will get "up close and personal to the pyrotechnics," says Coss, supplementing dozens of cameras set in multiple locations to catch the fireworks, along with awed spectators. Still, the best TV camera shots still come from the overhead helicopter, where a high-definition onboard camera captures 'these beautiful, aerial-cinematic shots showing the city throughout the show's entirety," says Coss. Planning has been underway since last year's show. The final months included the desert test and a detailed digital rendering of the show, allowing producers to "pre-visualize" the most dramatic elements and prepare the cameras. One can't-miss show moment will feature eight unique fireworks shells individually shot off barges, including one of Souza's favorites: The Morning Glory. "It's called Morning Glory, but it looks like a jellyfish that bursts into popcorn with red tentacles," says Souza. "That's one you have to look for." The 'Golden Mile' sets up the grand finale The "Golden Mile" is a fireworks display shot from 38 positions over the East River with computer precision. That includes a 1,500-ft, gold-shimmering waterfall cascade spanning the bridge, setting up the grand finale of wall-to-wall fireworks. 'It's going to be a patriotic ending, visceral and heart-thumping with crackling reports at the end," says Souza. "We're planning on delivering a highly entertaining, patriotic show that celebrates America's birthday while over-delivering on the spectacle." Who is performing at the Macy's fireworks? The Macy's concert is hosted by Ariana DeBose featuring the Jonas Brothers, Trisha Yearwood, Lenny Kravitz, Keke Palmer, Ava Max and Eric Church.
