
Microwave Sticky Toffee Pudding Recipe
You're just 10 minutes away from a bowl of soft, date-flecked cake draped in a brown sugary sauce. This speedy take on sticky toffee pudding is made for one or two people and doesn't require turning on the oven — just the microwave. Topping your warm cake with cold ice cream, whipped cream or sour cream is a welcome contrast and helps temper the sweetness. A few toasted pecans on top would add a nice crunch.

In a small bowl or mug, melt 1 tablespoon butter in the microwave, about 30 seconds. Add 2 tablespoons brown sugar, 1 tablespoon heavy cream and a pinch of salt. Microwave in 30-second bursts, stirring between each, until the sugar is melted and the mixture comes together into a sauce, 30 seconds to 1 minute. Set aside; the sauce will thicken as it sits.
In a microwave-safe bowl or ramekin that holds at least 12 fluid ounces/1½ cups, combine the dates, remaining 1 tablespoon butter, remaining 2 tablespoons cream and the baking soda. Microwave until the butter has melted, 30 seconds to 1 minute. Mash the dates with a fork until broken down.
Add the flour, remaining tablespoon brown sugar, cinnamon and pinch of salt and stir just until combined. Spread into an even layer. Microwave until the top is just set, 45 seconds to 1 minute. Dollop with sour cream, vanilla ice cream or whipped cream and drizzle with the caramel sauce. Eat warm.

@Snacker Perhaps another recipe instead? The dates are essential for this dessert, with their natural caramel flavor heightened by the brown sugar. You could substitute prunes but that's not sticky toffee pudding.
Wow! This was unexpectedly delicious. Very tasty and didn't taste like a quick mug cake at all. My husband and I enjoyed sharing an unexpected treat tonight. Easy to put together and yummy!

This was so good, and so fun! I made it on the spur of the moment while my husband did the dishes. Not sure what kind of dates I used, but they're the storebrand ones I use for Devils on Horseback. The pudding wasn't beautiful, but it looked fine once I put the cream I whipped up and the caramel sauce on top. Delicious!
What is the purpose of the baking soda here? What happens if you leave it out?
I find the directions confusing. When do you use/add the sauce made in step 1? Do you need to cover the bowls while microwaving? I'd be afraid it would splatter all over the microwave. I'm not going to buy a whole container of heavy cream just to use 3 tbs (I loathe whipped cream, so wouldn't use it for that), thinking to use half and half instead?
I used half and half. The pudding was great. The sauce didn't quite emulsify although it was still very tasty! Private notes are only visible to you.

Mitch McConnell, candidates quickly began throwing their names into the ring to take his seat representing Central Kentucky. After serving in the state Senate, he was hired as Tennessee's health commissioner by Gov. Bill Lee in 2022 and stepped down from the position July 11. In his campaign announcement, Alvarado called himself "Day One MAGA" with priorities to "close the border," "crush the woke left," "bring jobs home" and "save America." Zach Dembo (D) Zach Dembo is a former federal prosecutor and U.S. Navy JAG officer. 'Central Kentucky deserves to have a representative in Washington who stands up for families, works to lower their cost of living, expands access to affordable healthcare, and protects their safety," Dembo said in a press release. "Instead, D.C. politicians have put Medicaid on the chopping block, tariffs are targeting our most prized industries and jobs, and everything costs more – all while they give billionaires and coastal elites a massive tax break." Dembo has never served in an elected office, but he has previously worked as a policy advisor for Democratic Gov. Andy Beshear. Ryan Dotson (R) State Rep. Ryan Dotson announced his campaign minutes after Barr shared he would be running for Senate in 2026. Dotson has represented District 73 in the Kentucky state House since 2021 and has spent time in the Army. Now, he serves as a Pentecostal preacher and a businessman who owns a number of restaurants. Policy-wise, Dotson is known for being at the forefront of culture wars during his time in Frankfort. Ahead of the 2022 legislative session, he filed a bill to prohibit transgender women from playing on women's sports teams at public schools and colleges in Kentucky. Dotson in 2021 also called for Beshear's impeachment over a mask mandate in schools amid the COVID-19 pandemic. Deanna Frazier Gordon (R) State Rep. Deanna Gordon, one of the most recent contenders to make a bid, has represented District 81 in the Kentucky House since 2019. In her campaign announcement, she touted her small business background experience as an audiologist, saying she 'helped build the largest audiology clinic in Kentucky." Since selling her business, Bluegrass Hearing, Gordon started a clinic called Hear At Your Service in Richmond. Gordon emphasized she would serve the 'working class, not the Wall Street elite." Issues important to her include limiting government spending and stopping illegal immigration. David Kloiber (D) David Kloiber served on the Lexington-Fayette Urban County Council from 2020 to 2022. He also ran for Lexington mayor against incumbent Linda Gorton but lost with only 29% of the vote. Kloiber is hoping his business and nonprofit experience appeals to voters in the Democratic primary. He runs the Kloiber Foundation, which provides technology to students and teachers in Fayette County, and is expected to be able to put a significant amount of his own money into the race. During the 2022 Lexington mayoral race, he put $630,000 of his own money into the campaign. Cherlynn Stevenson (D) Former state Rep. Cherlynn Stevenson is hoping to make a comeback in Kentucky politics. She made her campaign announcement in May, touting her Kentucky roots and previous experience in Frankfort. Stevenson represented Kentucky House District 88 from 2019 through 2024, serving as minority caucus chair during her second term. She lost the election for a fourth term to Republican Vanessa Grossl in 2024, receiving 49.5% of the vote. Stevenson has received the endorsement of Lt. Gov. Jacqueline Coleman, whose name was also thrown around as a contender in the Democratic primary. Since the launch of her campaign, Stevenson has focused on fighting against tariffs and cuts to the Medicaid program, if elected. Who's out? Amanda Mays Bledsoe (R) State Sen. Amanda Mays Bledsoe, who represents District 12, was seen as an early front-runner in the Republican primary. But she recently ended speculation by announcing she wouldn't be running for Barr's seat. Damon Thayer (R) Former state Sen. Damon Thayer, who previously served as Senate Majority Floor Leader while representing District 17, also announced he would not launch a campaign. Instead, he decided to endorse Alvarado, who he called a "true conservative who will put America First, secure the border and take the right to the radical left." Tight-knit P.E.I. men's rugby team ready to take on all comers at Canada Games
With only a few weeks left until the whistle blows at the 2025 Canada Games in St. John's, N.L., Prince Edward Island's men's rugby sevens team is sweating it out in practice in the hope of finishing in the top five. The sport is back in the games for the first time in over a decade. The teams will be playing seven versus seven rugby, with a 12-person roster. On paper, P.E.I.'s roster may look like that of other teams. However, the players on this team said the fact that they have been playing with each other for years makes them stand out. "We got a lot of fight compared to some other provinces. I think we don't really roll over and lose easily compared to some other provinces," said winger Colby Munro. Munro said that team camaraderie gives them an edge, a sentiment that is shared among the team. Head coach Darryl Boudreau said this team is aiming to be the top Maritime team, a goal he believes to be attainable. "This group is unique. It's a group that has a lot of grit, it's a group that has a lot of skill, physicality, play-making abilities — and like I say, it is fun," said Boudreau. One of the team's biggest challenges is P.E.I.'s small talent pool compared to more-populated provinces. But Camden Hutchinson, who plays hook, said that the fact that province is so small has meant that they all know each other's game very well. They have grown up playing on the same high school, university and provincial teams, he said. "We're not just a randomly selected group of guys. We've all played together for years. So when I see a guy going in, I know what he's gonna do. I've played with him," Hutchinson said. "I know how each one of my teammates plays. I think that's the difference." Centre Campbell Wadman said one of the main challenges that the team has been working to overcome is adapting to playing with only seven players on the field. Many of the players are used to playing with 15 pairs of cleats on each team. But Wadman said the bond among the players makes up for that difference. "It's a family," he said. "Especially this team — like, we've all known each other for years. We've all played together before... It's awesome culture. "We're all brothers, pretty well." This will be the first time many of the players have competed at this level. Coach Boudreau he said is thankful to have been able to help bring the team along. "It's an opportunity for us to play on the national stage, represent your province, wear your colours and… do the best that you can during the competitions themselves," he said. "Sport is a crazy thing, so you never know what can happen at the end of the game."

Macsen Labs Achieves Breakthrough in Sodium-Ion Battery Chemistry, Files Provisional Patent, and Advances Toward Pilot-Scale Manufacturing
Video Link: UDAIPUR, India, July 21, 2025 /CNW/ -- Macsen Labs, a manufacturer of APIs, dyes, and specialty chemicals since 1952, has announced a major breakthrough in Sodium-Ion battery technology through the successful R&D-scale synthesis of its high-performance Prussian White, a next-generation cathode material for Sodium-Ion batteries. The company has filed a provisional patent for its proprietary synthesis process. The material has already undergone optimization for battery use at the company's electrochemistry and battery R&D facility and has shown promising results, driving the next phase toward pilot-scale manufacturing. "It's an interesting story, how a pharmaceutical company like ours entered the energy storage space," said Mr. Achal Agrawal, CEO of Macsen Labs and the lead researcher behind the project. "While working on Prussian Blue as a drug for radioactive poisoning, we discovered its derivative — Prussian White, which was emerging as a leading candidate for Sodium-Ion battery cathodes. That moment of curiosity led us down this path." Exactly one year ago, with zero experience in electrochemistry, Macsen's team fabricated a basic pouch cell inside a regular chemistry R&D lab, without specialized equipment. "We had no glovebox, no coater, no calendering machine, just our lab experience and synthesized material," recalled Agrawal. "When that small cell lit up an LED bulb, we knew we had something worth pursuing. That spark led us to establish a full-fledged electrochemistry lab." Today, Macsen's battery R&D facility includes an argon-filled glovebox for inert atmosphere handling, coin and pouch cell fabrication stations, electrode coaters, crimpers, vacuum dryers, and electrochemical testing systems, such as cyclers and potentiostats. With this setup, Macsen can rapidly prototype and test battery cells using its own synthesized materials, significantly reducing development time. The company already operates a pilot-scale chemical synthesis facility, which is now being used to produce Prussian White at a kilogram scale. Through numerous experiments conducted over the last year, the team has gained proficiency in Prussian White chemistry and has achieved what is likely to be one of the finest quality variants produced to date. Through its proprietary process, Macsen has achieved an energy density exceeding 150 mAh/g with Prussian White, which is comparable to Lithium Iron Phosphate (LFP). The material also shows excellent stability, fast sodium-ion mobility due to its open crystalline structure, and compatibility with existing Li-ion cell manufacturing infrastructure. "Performance-wise, it's at par with LFP, but made from abundant, low-cost materials like sodium and iron," said Agrawal. "And these elements are easily available, affordable, and free from geopolitical constraints." This project, originally incubated within Macsen Labs, is now being advanced under a dedicated entity currently under formation — 'Macsen Energy', which will focus exclusively on energy storage innovation and scale-up. "The real potential of sodium-ion batteries lies not just in electric vehicles," said Agrawal. "It lies in stationary energy storage systems that store and manage renewable energy from solar and wind. This is where India's energy transition will happen at scale." Macsen's current Sodium-Ion battery technology, using its Prussian White as cathode paired with a hard carbon anode, is well suited for applications such as battery energy storage systems (BESS) for grid and solar, household backup and inverter systems, short-range EVs, auto-rickshaws, two-wheelers, city buses, rural microgrids, and energy access solutions. The company is now focusing not only on improving cycle life, energy density, charge-discharge rates, and optimizing electrolyte-additive systems, but also on reducing the cost contribution of other components of the battery cell. Macsen aims to develop economical form factors by innovatively combining low-cost battery materials, components, and manufacturing processes, especially for large-scale stationary energy storage. One inherent cost advantage of sodium-ion technology is its use of aluminium in place of copper as the cathode current collector, which would further reduce raw material costs. To demonstrate the performance of Prussian White in commercial large-format cells, Macsen is setting up a pilot-scale cell fabrication line. The company is already sourcing equipment for this and aims to have the pilot-scale production facility operational by early 2026. "We are trying to make a new energy future for India," concluded Agrawal. "Sodium-ion batteries are India's opportunity to build a truly indigenous, scalable, and affordable energy storage ecosystem."
