Black Tap's Stephen Parker says celebrity chefs are worst thing to happen to food industry and reveals key to great burgers

Every week, we interview top chefs from around the UK, hearing about their cheap food hacks, views on the industry and more. This week, we speak to Stephen Parker, corporate executive chef at Black Tap Craft Burgers & Beers... The worst thing ever to happen to the food industry is… the celebrity chef culture that has exploded over the past few decades, thanks to the likes of channels such as The Food Network. Cooking shows have shifted their focus from skilled cooking to personality, making many chefs entertainers rather than craftsmen. Real kitchens are much grittier and less glamorous than the ones seen on TV - creating a style-over-substance idea that really doesn't exist in the real world. One cheap place I love to eat in the UK is... in London's Borough Market. I had the most incredible risotto from the Wild Mushroom Risotto stand. The creamy risotto was topped with garlic and truffle oil, fried leeks, spring pesto and parmesan… I can't stop thinking about it! I loved how even though this was a simple dish, it packed in so much flavour and was made super-fast using fresh ingredients. Money blog: The key to a great burger is… the fat content and quality of the meat, which plays into how great the burger is after cooking. The meat needs to have enough fat to achieve a great sear on the outside, while the cut of beef is important to ensure that the juicy burger is full of extra flavour. My favourite ketchup has to be... Heinz baby - all day. Are there even any other options? The one thing I hate that some customers do is… order their burgers well done. In my opinion it's overcooked and doesn't give you the same culinary experience as eating a burger cooked to medium. At Black Tap, we pride ourselves on serving fat, juicy burgers that aren't overcooked. Food influencers are... constantly changing the game when it comes to the hospitality industry. They are great for helping to inspire chefs and restaurants alike to be on top of our game. Not only do they push businesses to be even bigger and better, but encourage restaurants to continue pushing boundaries when it comes to flavour combinations and food and drink trends. The idea that Michelin food is the tastiest you can get is false... Night markets, street food and real family-owned restaurants are leading the way when it comes to flavours and innovation. Chefs at establishments like these pour their hearts and souls into the food they're creating as they have such a passion for it. In my opinion, the tastiest meals I've ever had are connected to the memories that go along with them and how I was feeling at that moment in time. The best city in the world to eat in is... Singapore. Not only is it a multicultural hub, but it's also where my wife is from. We take a lot of inspiration from Singaporean dishes when cooking at home. Some of my favourites include Hainanese chicken rice, fried carrot cake (super delicious) and chilli crab. It's perfect for those looking to be a little more health-conscious while still being able to enjoy their favourite dishes. Ingredients: 150g broccoli florets, halved 1 clove of garlic, crushed 5g fresh ginger, diced Half a lemon, juiced 1 teaspoon of olive oil 1 tablespoon of Teriyaki sauce Sprinkle of sesame seeds 1 spring onion, sliced Method: Place a non-stick frying pan on medium heat and allow to heat Drizzle the pan with olive oil Place raw halved broccoli florets into the pan, flat side down Add crushed garlic and diced ginger Allow broccoli, ginger and garlic to brown Add juice from half a fresh lemon to pan and allow to simmer Add in the teriyaki sauce and remove pan from heat Place cooked broccoli into a serving dish and garnish with sesame seeds and sliced spring onions Enjoy on the side of a juicy beef burger

A London burger joint is said to have launched a 'world first' and Guinness drinkers need to be warned, this could cause offence. Black Tap based in SoHo, London, have launched a Guinness milkshake, combining a half pint of the beloved stout with cream, chocolate and cake. The wacky shake can be made with either the traditional Guinness or its 0.0% alternative for the designated drivers and non-drinkers. The beverage is topped with a generous helping of whipped cream with the Guinness CrazyShake going a step further and featuring a brownie and slice of Guinness Cake on top. The shakes launched in the restaurants which have bases in Soho and Stratford last week and are understood to be a limited time only special. The burger restaurant is known for its New-York style burger, craft beers and CrazyShake milkshakes, but have they gone a bit too far with a Guinness milkshake? Social media food review Hot Dinners shared a glimpse at the Guinness CrazyShake, revealing that the insane shake was an 'official collab' between Black Tap and Guinness. We might be years into the 'hype' but Guinness is still deemed a personality trait in drinkers and an easy win for brands. No wonder US outfits want a piece of the action. The latest to hit London, Black Tap, is a burger and milkshake bar and is about to start selling the 'world's first official Guinness milkshake'. It looks horrendous but will probably do well on Instagram. See also: Think you really know Guinness? Ask for a pint of semi-skimmed The shake is made out of half a pint of Guinness blended with soft serve ice cream, covered in chocolate sauce and served in a 'frosted vanilla rim' which has been rolled in white chocolate. The whole debacle is topped off with whipped cream. Those who want it booze-free can have one made with Guinness 0.0. The monstrosity will be available from Black Tap branches in Soho and Stratford on June 9 for a 'limited time only', believed to be a month. Those who want to indulge even more can ask for a 'Guinness CrazyShake', which is the same drink but adds a whole slice of Guinness cake and a chocolate brownie to the equation. 'Whether you're a Guinness devotee or just here for the dessert drama, this is your sign to ditch the pint glass and pick up a shake straw,' said a spokesman. 'Pint? Dessert? Cake? Why choose? Burger joint Black Tap expands across Saudi Arabia to Al Khobar

The restaurant can already be found in Jeddah and Riyadh. The family-friendly burger joint, Black Tap, is expanding its presence in Saudi Arabia. The hip restaurant, which is already established in Jeddah and Riyadh, has now announced the opening of Black Tap in Al Khobar. The opening date has not yet been confirmed, but here's what we know. Black Tap first started in New York, United States, and now has a firm following around the world from Bahrain and Iraq to Singapore, the UAE and the United Kingdom. The original venue, located on Broome Street in SoHo, offers a fun, fresh, and familiar vibe. If the global menus are anything to go by, diners at Black Tap Al Khobar should come hungry, as the meals come in epic sizes. The burgers include The All-American Burger with American cheese, The Champ with Wagyu and blue cheese, and the Truffle with Wagyu with truffle. The CRAZYSHAKE is an Insta-worthy delight and packed with all things sweet, from cookies to cake. The options include The Cookies Shake with cookies, cream and chocolate drizzle. The New Yorker comes with a slice of strawberry cake and fresh strawberries. The Jammy Dodger comes with Jammy Dodger cookies and raspberries.
