Make Better Burgers
Good morning. I've been putting in the miles this summer, driving north and south, east and west, 400 miles to pine trees, Ellsworth Schist and the nice folks at Left Bank Books in Belfast, Maine, and more than that to northern Ohio (shouts to Kim's Grocery!). Most recently, I laid down an easy 100 to Tivoli, N.Y. and the excellence of an Italian sub at Club Sandwich on Broadway. I see the road before me and think about food as I drive. Most often, recently, that's meant burger reverie. You can, of course, get great hamburgers on the road. Try the Red Rooster on Route 22 in Brewster, N.Y., or the Fat Boy on Bath Road in Brunswick, Maine. But behind the wheel, I dream most often of being home in front of the grill, cooking patties for my family and myself, in advance of a nap in an Adirondack chair, free of deadlines and appointments. Kenji López-Alt has been of great assistance in this regard. He's put together a terrific new Cooking 101 guide to cooking burgers, and accompanied it with recipes that deliver blue-ribbon results. I like his instructions for a smash burger (above), worth doubling up if you're hungry. (I cook that one on a griddle on my grill, though you could certainly use a cast-iron pan in the kitchen.) Also, his diner-style burger to recall the crusty, beef-forward one served at J.G. Melon in Manhattan, and his backyard burger, dimpled at the center, thick and tender, with a smoky char. I serve each of these beneath cloaks of cheese, on toasted potato buns, with a swipe of mayonnaise (Duke's or bust!) and a couple of bread-and-butter-pickle chips and Melissa Clark's lemon potato salad with mint on the side. I hope you'll join me in making one or more of these this weekend. Want all of The Times? Subscribe.

How to apply for the new series of Big Brother as Jack P Shepherd wins celebrity version
Celebrity Big Brother is over for another year but it won't be long until AJ Odudu and Will Best are back on our screens for another offering of the civilian version of the ITV reboot If you think you have what it takes to be a legendary Big Brother housemate and take part in the ultimate social experiment, now is the time to apply. Applications for the 2025 series of the ITV reboot are now open. Celebrity Big Brother came to an end earlier this evening, with Jack P Shepherd being crowned the winner. Fans of the show won't have to wait too long to see co-hosts AJ Odudu and Will Best on our screens again, with the regular version for series planned to air in the summer. "We want to hear from the UK's most interesting, funny and stand-out characters from all walks of life," the application page reads. "Clever tasks, nail-biting nominations and live evictions - have you got what it takes to be crowned the winner?" Big Brother hopefuls looking to follow in the footsteps of winners Jordan Sangha and Ali Bromley need to fill out the application form here and include a recent picture of themselves alongside a short video clip. Forensic psychologist Ali Bromley won Big Brother last year and became the first lesbian to win the show. Jordan Sangha was crowned the winner in 2023 - the first series to air on ITV after the format was axed by Channel 5 in 2018. During his time in the Big Brother house, Jordan formed a relationship with housemate Henry Southan. They were questioned about the nature of their relationship throughout the series as fellow housemates watched their friendship blossom into a romance. The pair, who finished first and third respectively, announced their split on Tuesday to shocked fans. In a post to his Instagram story, Henry wrote: "After a lot of thought, Jordan and I have decided to go our separate ways. "It's incredibly sad, and we're both hurting, but we know it's the right step. We're so grateful for the love and support you've shown us – thank you. Please give us some space as we figure things out privately." Jordan wrote in a separate post: "After many happy times, memories and precious experiences, Henry and I have parted ways. I wanted to thank everyone who has supported us. We will always remain close friends. Cheers X." After the show finished in late 2023, Jordan posted a picture of him with Henry to his Instagram and wrote that he had "found a handsome, intelligent, and debonair fellow". In November 2024 the pair announced they would be hosting a podcast together called Club Sandwich. They also recently appeared on Celebrity Big Brother: Late And Live, the companion show to the main ITV1 series.

Big Brother star takes a shock swipe at CBB housemate Angellica Bell - hours before announcing split from boyfriend Jordan Sangha
Big Brother's Henry Southan has taken an unexpected swipe at celebrity housemate Angellica Bell in a new TikTok video on Monday. The reality star, 26, took to his social media to share his current ranking of the Celebrity Big Brother castmates, ahead of the live evicton on Tuesday. Starting from ninth place, he chose TOWIE 's Ella Rae Wise, explaining: 'Unfortunately, I just keep thinking she's very bitter about Chris (Hughes) and JoJo's (Siwa) relationship.' He then revealed radio star Angellica was next on his list as he said: 'She does seem really lovely.' Henry awkwardly paused before continuing: 'I'm wondering if this is more my personal interaction with Angellica. 'I don't think I should say too much more. But all I can say is those times where you see her perhaps be... actually, I'm just going to leave this.' He then ranked Chesney Hawkes in sixth place, followed by Chris and Jack P Shepherd. Next came Patsy Palmer in fourth place, Danny Beard in third, JoJo in second, and Donna Preston in first. Following the revelation, fans took to the comment section and urged the reality star to elaborate on his cryptic swipe at Angellica. They said: 'So now we know there's untold stories on both Angellica and Nathan from last year … please tell us one day; 'Can we go back to Angelica for a sec; 'You can't just tease us with that Angellica beef and not spill; 'Henry! tell us about Angelica; 'Henry!!! Angelica?? You can't say it without saying it?! Come on now spill the tea; Following the revelation, fans took to the comment section and urged the reality star to elaborate more on his cryptic swipe at Angellica 'Don't be shy tell us more about Angelica; 'You can't just leave us hanging like that. Tell us about Angellica; 'Henry spill the Angellica tea.' Henry's post came just hours before he shared the 'incredibly sad' news that he and he had split from his boyfriend Jordan Sangha after 17 months together. The food critic shared the announcement in a post on his Instagram Stories. He wrote: 'After a lot of thought, Jordan and I have decided to go our separate ways. 'It's incredibly sad, and we're both hurting, but we know it's the right step. 'We're so grateful for the love and support you've shown us - thank you. Please give us some space as we figure things out privately.' Jordan went onto share news of the break-up in his own post, writing: 'After many happy times, memories and precious experiences, Henry and I have parted ways. 'I want to thank everyone who has supported us. We will always remain close friends. Cheers.' Just nine days before announcing their split, Jordan and Henry's romance seemed to be stronger than ever, as they made a joint appearance on Celebrity Big Brother: Late and Live, where they recreated their steamy hot tub smooch. However, they had announced earlier this month that their joint podcast, Club Sandwich, would be going on a hiatus for the current series of Celebrity Big Brother, simply saying at the time they were working on an 'exciting new series.' Jordan left viewers gripped when their close friendship blossomed into romance on ITV's first series of BB in 2023, and just a week after the series ended, they made their relationship official. While they began as close pals, things took a turn when Henry admitted he was developing feelings for Jordan, despite the latter's confession he had his own confusing connection with housemate Matty. Elsewhere, Angellica confronted Patsy for snapping at her during face to face nominations during Monday's episode of CBB. The housemates were forced to turn on each other as they each pick two people to nominate and tell them the reasons to their faces. Despite sharing a bed and seemingly getting on well during the scenes, Angellica chooses to nominate Patsy during the awkward task. The former Blue Peter presenter told her that she felt like she 'sometimes snaps at her' and she also 'doesn't feel confident helping her in the kitchen'. The housemates were each given a basket with two eggs inside and must place an egg in the basket of the housemates they wish to nominate and explain their reasons. When it comes to her nomination, Angelica said: 'My first nomination is for you, Patsy. You're my bed buddy. And we've grown very close, and shared stories. 'But I'm nominating you because sometimes I feel you snap at me. And sometimes I don't feel confident to help you in the kitchen – a space that I like as well.'

Big Brother stars Jordan Sangha and Henry Southan SPLIT: Stars share 'incredibly sad' news their 17-month relationship is over after meeting on the ITV show
Big Brother stars Jordan Sangha and Henry Southan have split after 17 months together. The pair, who formed a surprise romance after meeting on the ITV show, announced the 'incredibly sad' news that they'd decided to go their separate ways. Henry announced the split on Instagram Stories on Tuesday, writing: 'After a lot of thought, Jordan and I have decided to go our separate ways. 'It's incredibly sad, and we're both hurting, but we know it's the right step. 'We're so grateful for the love and support you've shown us - thank you. Please give us some space as we figure things out privately.' Jordan and Henry left viewers gripped when their close friendship blossomed into romance last year, and just a week after their BB exit, they made things official. The duo sent fans into a frenzy back in November with how they debuted their podcast. Taking to Instagram to share a surprise new clip, Jordan and Henry sent fans wild by hinting that they had got engaged, a little over a year to the day since they departed the BB house. However, all was not as it seems, as the tongue-in-cheek post was actually announcing their Club Sandwich podcast. In the weekly series, fans join Henry and Jordan's world every week as they delve deeper into their daily life and hilarious differences, through the lens of their shared obsession. The clip showed a loved-up Henry and Jordan enjoying a romantic stroll together, before the food writer suddenly got down on one knee. However, instead of presenting him with a ring, Henry offered his boyfriend a sandwich instead, before announcing that the launch of their new podcast was just hours away. Sharing the clip on both of their accounts, the post was captioned: 'We said yes!' '…but not to what you think!' We're thrilled to announce @ClubSandwichpod, our brand-new podcast that's (kind of) about sandwiches, but really about so much more. Join us every Wednesday as we serve up laughs, stories, and dish out the goss!' While many fans were quick to share their delight at the podcast's announcement, others confessed that they were initially excited by news of an engagement. Comments under the post included: 'If this is the reaction to a podcast, what are we all going to be like when u actually get engaged; However, all was not as it seems, as the tongue-in-cheek post was actually announcing their new podcast together, Club Sandwich 'I thought Henry was gonna propose; I was more than excited then!! However I am so, so excited for the podcast, made my day, proud of you both; 'For goodness sake guys!!! You almost made my Tuesday morning! But excited to listen; Oh my God I got way too giddy when u went down on one knee Henry!' Back in March, Jordan and Henry shared how they were 'taken aback' to see the 'endearing' reactions from fans of their romance on social media. Jordan and Henry have kept fans well-updated with their romance on social media, and the former lawyer, despite earning an army of fans for his sarcastic sense of humour, is no stranger to sharing romantic poems about his boyfriend. After celebrating Jordan's Big Brother victory at a boozy wrap party, the pair revealed that it took just three days for them to reunite after leaving the house.
