Corkman University College Cork graduate and Kerry native Sean O'Sullivan has been awarded the Local Enterprise Office High Achieving Merit Award for an innovative business venture – aiming to develop a new category of sustainable plant-based snacks with a line of mushroom-based jerky! The product from his company Lion's Reign is made from lion's mane mushrooms, which offer a protein-rich alternative to traditional meat snacks while helping vegans, vegetarian and environmentally conscious consumers meet their protein goals.
