Chicken sandwich hotspot opening first S.F. location
Gregoire, a Berkeley favorite for French-influenced chicken sandwiches and lunch, is expanding into San Francisco this year. Owner Gregoire Jacquet confirmed to the Chronicle he is opening a franchise location at 1300 Ninth Ave., a former Jamba juice shop at the intersection with Irving Street. Inside, the menu will include favorites such as Jacquet's potato puffs, salads and more. Plans are to open in November. 'I'm very excited,' Jacquet said. 'San Francisco is where I first landed, so it's near and dear to my heart.' Jacquet has been working to franchise Gregoire for roughly three years, and has plans for more locations. To help, he has leased a commissary kitchen in Emeryville to prepare all ingredients for each future outpost. The idea is to offer items that change each quarter but to reduce cooking and labor as much as possible for operators: just assemble and serve. 'It's the best way of having consistency. You don't need chefs, and it helps keep the footprint small,' he explained. Jacquet arrived in the Bay Area from his native France in 1989 with a background in fine dining. His first local job in the industry was under famed chef Jacky Robert at his restaurant Amelio's, later cooking at the San Francisco Ritz-Carlton. (He also cooked at the luxury hotel's locations in Boston and Puerto Rico before settling down in the Bay Area.) He later opened the first Gregoire alongside his wife Tara in 2003. While some were skeptical of the fine dining chef turning to a casual model, the potato puffs and sandwiches won people over. 'I remember a guy telling me it's never going to work. But we're still here after 23 years,' Jacquet said. Jacquet has expanded in the past. The couple ran a second location in Oakland from 2006 through 2017. They chose to close the location, which served as a commissary for the two restaurants, due to burnout and to spend more time with their children. 'Now that my kids are gone, my wife and I decided we need to grow again,' he said. This isn't the Gregoire brand's first foray into the city. A Gregoire food truck serving sandwiches and potato puffs is regularly stationed outside Salesforce Tower and Levi's Plaza during the midweek lunch hour, and it often makes other appearances around the Bay Area.

Researchers stunned by discovery after sifting through illegal online marketplaces: 'Society has underestimated the threat'
Researchers from the University of Miami sifted through thousands of online listings that are enabling the trafficking of endangered species. In their recent study, they identified 546 listings for endangered or trade-restricted animals representing 83 species. The researchers developed a tool that automatically collects data across 148 English-text online marketplaces to analyze online sales of threatened animal species, according to their writeup published by The tool was used to search for online sales of 13,267 animal species classified as at risk of global extinction by the International Union for Conservation of Nature and 706 animal species listed in Appendix I of the Convention on International Trade in Endangered Species. The search was conducted over a period of 15 weeks in 2018. Their study revealed that the shortfin mako is one of the most targeted threatened species in online wildlife trafficking. The endangered shark species is exploited for its jaws and other body parts, which are sold on hundreds of social media sites and open markets. The researchers also identified other threatened shark species through their study, including the longfin mako, scalloped hammerhead, sandbar, and pelagic thresher. Sharks represented nine of the 10 most threatened species identified in this study. According to the World Wildlife Fund, not all wildlife trade is illegal, but it becomes a serious problem when it overexploits species and threatens their survival in the wild. Efforts to crack down on wildlife trafficking have been implemented, but online trafficking is hard to address. Professor Jennifer Jacquet, one of the authors of the study, explained that online platforms typically aren't held legally responsible for sales since they're considered marketplaces where buyers and sellers can connect for transactions. Wildlife trafficking poses a threat not only to the endangered species but also to humans. Illegally traded species may become invasive when introduced to unfamiliar environments. Some species may carry zoonotic diseases that could transfer to humans and threaten global health. Trafficking can also negatively impact biodiversity. According to the WWF, species and organisms in the wild work together to maintain balance in ecosystems, where we get food and clean water. According to Jacquet, there's a small number of people who are "obsessed with buying animal parts," which has fueled online wildlife trafficking and illegal hunting of endangered species. She suggests that stigmatizing the ownership of wildlife trophies could help curb trafficking. "We need governments and civil society groups to stigmatize the wildlife trade as a whole rather than deal with the problem species by species in a legislative way," she said. Chinese companies extend electric vehicle range with petrol generators
Chinese companies have turned to an old-school solution to extend the range of their newest electric vehicle models - the petrol generator. The small petrol generator is connected to cars' batteries and feeds them only when needed. At the huge industry show Auto Shanghai this week, BYD's luxury Yangwang U8 SUV and other electric models such as Chery's Exeed ET promised an unusually long range of more than 1 000 kilometres. The secret is a small petrol generator, known as a range extender, which is connected to the cars' batteries and feeds them only when needed. Because the range extender is not connected to the wheels, the vehicles, known as EREVs, always run in 100% electric mode even though they consume petrol and emit toxic gases. This technology grew faster in China last year than any other type of powertrain, the system that propels a vehicle forward. More than one million EREVs were sold, representing a total market share of 6%, according to the McKinsey consultancy. Range extenders are rare elsewhere at the moment but that could soon change. Volkswagen has plans to launch an EREV Scout pickup in the United States after unveiling an EREV SUV at Auto Shanghai as part of its renewed push into China. Horse Powertrain, a joint venture between France's Renault and China's Geely, also presented an engine that can be installed in an electric model. Global expansion? EREVs fall into the category of rechargeable hybrids, which are seen by manufacturers as a good bet in Europe and North America where electrification has been slower than expected. They pollute less than petrol cars if they are properly charged, while also assuaging driver concerns about range. According to a survey published by McKinsey on Tuesday, once the concept has been explained, almost a quarter of customers questioned in Europe and the United States said they would consider choosing an EREV as their next car. "This is a real use identified for the United States, for very American needs," said Stellantis' Sebastien Jacquet. They are suitable for long journeys but also work well for "pick-ups for towing boats, for example". While an electric vehicle has towing capacity, its battery only lasts 100 kilometres, Jacquet said. Unlike in the United States, there is a planned transition to a 100% electric car market, warned Alexandre Marian of AlixPartners, "the cut-off point of 2035". "Who would now invest into new capacities if you know that there's a natural end to it in 2035?" asked Holger Klein, head of German equipment manufacturer ZF. "That's why we need to solve this very soon," he said. Range extenders are a "very good opportunity to reduce the entry cost for people to come to electric mobility", said Volkswagen boss Oliver Blume on Tuesday. However, "in the long term I see the electric mobility as superior", he said.
