Denver Mussel Club is all for the love of mussels
The mussels arrive in a pile, their black shells glinting after a bath in a French sailor-style broth, a delectable sip of which is served in a cup on the side. One twist of a fork and they come free.
Dig in: Alex Bair and friends love the mollusks so much they created the Denver Mussel Club for fellow admirers. "We are passionate about how delicious they are," Bair tells us.
The vibe: The crew is hosting pop-up events in Denver to spread that love.
The most recent one at Latchkey, a 17th Street uptown bar, drew dozens of seafood fans and sold out within hours.
The boats of bivalves, grown in cold Maine waters, came with French-style potato salad and a hunk of bread with butter.
Between the lines: For years, Bair and friends, all of whom have hospitality experience, have dreamed about opening a seafood restaurant.
To make it happen, they pivoted to one-off events with a laid-back atmosphere that feels like a backyard hang.
