The Carbone crew will helm restaurants in the $8 billion Citi Field-adjacent Metropolitan Park

The team behind Carbone is stepping up to the plate in Queens. Major Food Group (Torrisi, The Grill, Sadelle's) has signed on to operate a slate of restaurants and bars within the forthcoming Hard Rock Hotel and Casino at Metropolitan Park, an $8 billion mega-development slated to rise near Citi Field by 2030. While MFG won't operate every eatery on the property, its involvement is a strong signal that this won't be your average food court casino. Expect a stylish blend of fine dining and high-end casual concepts, with menus that reflect Queens' rich culinary heritage—and a personal connection, too. Co-founder and chef Mario Carbone hails from the borough. The move is part of a broader, international partnership between Major Food Group and Hard Rock International, formalized in early 2024. Under the deal, MFG serves as culinary advisor across Hard Rock's portfolio, including properties in Hollywood, Tampa, Atlantic City and upcoming outposts in Athens and Barcelona. The team even staged a Carbone residency at Seminole Hard Rock Hollywood in Florida last December. 'This is a truly unique opportunity,' said MFG co-founder Jeff Zalaznick in a press release announcing the partnership last year, 'to bring MFG's deep expertise and innovation together with a hotel and casino leader to provide incredible food and beverage experiences for Hard Rock guests at locations both here and abroad.' Metropolitan Park itself is a massive swing at reimagining the 50-acre sea of parking lots around the Mets' home turf. In addition to the casino and hotel, the project includes new parks, sports fields, a live music venue and a 30,000-square-foot food hall called Taste of Queens, a curated lineup of more than 20 vendors from across the borough, in the spirit of Queens Night Market (but indoors and year-round). Backed by Mets owner Steve Cohen, the proposal has faced its share of scrutiny, including environmental concerns and community opposition to the development of a casino. Still, several Queens community boards approved the plan in November 2024 and a final decision from the state's Gaming Facility Location Board is expected by the end of 2025.

Major Food Group Teams Up With NY Mets Owner's Huge Queens Development Hotel

A red-hot NYC restaurant group will run the hotel and casino restaurants and bars in billionaire New York Mets owner Steve Cohen's forthcoming mixed-use development surrounding baseball stadium Citi Field in Flushing Meadows-Corona Park, Queens. Major Food Group will oversee the restaurants and bars inside the Hard Rock Hotel and Casino Metropolitan Park, the group's next location inside the sprawling project that has yet to break ground, with a projected opening year of 2030. Outside of Hard Rock's hotel and casino, Metropolitan Park will also include a 30,000-square-foot food hall, Taste of Queens, which will have 20 or so restaurants and food vendors from the borough. It's a similar concept to the Queens Night Market, which operates a stone's throw away. Major Food Group's restaurant and bar lineup isn't finalized; the company also isn't going to run every single dining and drink space in the property. It's fair to expect a mix of fine-dining and casual. A rep for the development writes to Eater that the hospitality business's goal is to 'curate food experiences that celebrate Queens as one of the most vibrant and diverse culinary capitals on the planet,' and also notes that chef and co-owner Mario Carbone is from Queens himself. This Queens team-up isn't the first time Major Food Group has partnered with Hard Rock. The New York-founded restaurant group previously partnered with Hard Rock Hotel in Times Square in 2022, splitting its loyalty in a Yankees-themed steakhouse. The two companies made the partnership official in 2024, turning Major Food Group into Hard Rock's culinary consultant. Overall, the Metropolitan Park would transform the parking lots around the stadium into a 50-acre mixed-use development, featuring parks and sports fields. The Hard Rock will also include event spaces and a live music venue. Cohen's lofty dream of developing the area surrounding his baseball stadium into an $8 billion multifaceted destination isn't without its controversies, with concerns about its impact on current residents and the environment. The casino would be the first of its kind in downstate New York, but some don't agree that it should happen at all. Nevertheless, several Queens community boards bordering the property voted their approval of the park proposal in November 2024. But there are more hurdles to come, including recommendations from the New York Gaming Facility Location Board and the license decision by the New York State Gaming Commission by the end of 2025. Once all of that is approved, construction will begin. See More: Coming Attractions NYC Restaurant News

It's hard to imagine a more well-connected couple than Mario Carbone and Cait Bailey. Carbone is the man whose restaurants draw clients including Barack Obama, Leonardo DiCaprio and Kim Kardashian week after week. Bailey, meanwhile, has been called 'a networker like no other' and been known to help out the likes of Google co-founder Sergey Brin when his pals can't get into exclusive parties. What is Cait Bailey's backstory? Celebrated publicist Cait Bailey. Photo: @orlandopelagio/Instagram According to her profile in The New York Times, 35-year-old Bailey grew up in Baltimore, Maryland, and was sent to a private Catholic school before heading south to Georgia for university. After graduating she reportedly planned to return home, 'marry a lacrosse player' and raise children to go to the same school as she did. In other words, she certainly didn't envisage the life she has now. Her mother (sort of) chose her career Mario Carbone and Cait Bailey on vacation with friends in Naples, Italy. Photo: @mariocarbone/Instagram So what changed? According to The New York Times, it was her mother, Patti Caudill, who helped set her on a completely different path. Caudill decided to take part in – and won – a charity auction offering an internship at a major New York PR firm called PMK-BNC.
