Michelin-starred Hong Kong restaurants Amber and The Chairman team up for lunch items
At the beginning of this year's Lunar New Year, a fortune-teller told Richard Ekkebus, culinary director of the Landmark Mandarin Oriental hotel in Hong Kong, that he would reach new heights in 2025. This came as no surprise to the chef, who also happens to be a prolific mountaineer; at the time, he was already planning his next expedition. So, it was a pleasant surprise when new heights came in the form of a third Michelin star for his restaurant Amber, after 17 years of sitting on two. To celebrate the occasion and to shine a light on his industry friends in Hong Kong, Ekkebus has launched a series of crossover products with gastronomic movers and shakers – such as May Chow of Little Bao and Lorenzo Antinori of Bar Leone – that are being sold at the hotel's grab-and-go concept, LMO Freshly Baked, and will raise funds for charity. One of Ekkebus' most unexpected collaborations is with Danny Yip, owner of acclaimed Hong Kong restaurant The Chairman. The duo have created a series of East-meets-West lunch items, including Sichuan spicy peppercorn beef pie; lotus root and celtuce salad with pine nut dressing; and a char siu sauce chicken thigh sandwich with caramelised onion. Photo: LMO Freshly Baked Proceeds from the series will go to Mindset, a Hong Kong-based charity that supports mental health – something that is close to Ekkebus' heart.

Michelin Guide Hong Kong and Macau 2025 full list: Amber gains third star after 17 years
The 17th edition of the Michelin Guide Hong Kong and Macau was announced today at an awards ceremony hosted at the Grand Lisboa Palace Resort Macau, crowning 95 restaurants in both cities with stars. Advertisement One of the highlights of the evening was Amber – at the Landmark Mandarin Oriental hotel in Hong Kong's Central business district – finally getting its third Michelin star after first entering the guide in 2008. Long-time Amber frontman and culinary director Richard Ekkebus told the assembled crowd that he was thrilled and that 'it's the ultimate pinnacle of a lifetime's work'. Macau Casino Dining Rooms Win Big in the Latest Michelin Guide
The Michelin Guide delivered good news to restaurants in Hong Kong and Macau in its most recent guide. There's a brand new three star restaurant, Amber in the Landmark Mandarin Oriental, Hong Kong from chef Richard Ekkebus. His sustainably-minded menu features dishes like Bluenose sea bass with juniper, fermented cabbage and Kintoa bacon with vegetarian alternatives and starts at HK $2,058 ($265). Amber was promoted from two stars; it also has a Michelin green star, it's eco-minded award.
