Three Easy Dishes to Make for a Crowd This Summer
When the chef Scott Clark is cooking for a big bunch of friends, his goal is always to deliver a dish that's 'more than delicious,' he says. 'It should also show off.' For Clark, 39 — who owns Dad's Luncheonette, a diner in a historic train car in Half Moon Bay, Calif. — that might mean trying a new technique (making custard with Earl Grey tea, for instance) or plating with a little pageantry, like dolloping yogurt on a slice of cake before finishing it with a sprinkle of citrus zest. - A Danish jewelry designer's long midsummer lunch. - In the Caribbean, a couple's laid-back birthday party with their young son. - A group of trans artists and activists' Filipino feast on Fire Island. - In a Georgian vineyard, a meal inspired by a painting. - A guide to sharing a vacation rental (and remaining friends with your housemates). - Chefs' favorite recipes for large groups. - An easy, crowd-pleasing cocktail to make in big batches. For our Summer Entertaining Issue, we asked Clark and two other Bay Area chefs to share foolproof but impressive recipes that can be scaled up, prepped ahead or pulled together in a flash — ideal dishes, in other words, for feeding a crowd on vacation. For the chef Nite Yun, 42, who runs the Cambodian restaurant Lunette in San Francisco's Ferry Building, no big group meal is complete without a generous portion of quick-cooking greens. They 'pair with almost anything,' she says. When cooking for his friends, Geoff Davis, 37, the chef and owner of the soul food restaurant Burdell in Oakland, serves family-style platters that highlight summer produce, like blackened fish with sweet corn grits and tomato vinaigrette. And Clark prefers his summer spreads capped off by something cold, celebratory and indulgent, like his nostalgic icebox pie flecked with tea leaves. The rest of the menu, he says, 'depends on how much I like the people.' Geoff Davis's Blackened Cod With Sweet Corn Grits This recipe is adapted from a fish and grits dish that appeared on the opening menu at Burdell. The grits can be made up to a day in advance and reheated, and because the fish is blackened, it's nearly impossible to overcook. 'You're burning it on purpose,' says Davis. 'It's pretty easy to pull off and you look like a rock star.' For best results, Davis recommends waiting until Sungold tomatoes and sweet corn are at their peak in your region. Aussie dad's fight against invasive threat spreading 'everywhere' in our waterways
Invasive fish like European carp, tilapia and even goldfish are a growing threat in Australia's rivers and freshwater systems. Debate rages over what to do about the ever-spreading issue, including introducing a virus into the water, but wholesale solutions are seemingly far off. In the meantime, one Gold Coast dad is taking matters into his hands and doing something about it. Armed with a $6 Kmart fishing net, Scott Clark is single-handedly scooping up a host of water-based invaders choking water systems from creeks, rivers and even stormwater drains in his local area. They are "everywhere", he told Yahoo News of the growing threat. "It's quite sad." It started out as a hobby for Scott, collecting small fish to feed his pet turtle, but quickly developed into a deeper purpose when videos of his efforts went viral online with millions of views. Sadly, after 15 years exploring Queensland's fresh water, he no longer sees native fish in local water systems — something that experts warn is a direct result of invasive species taking over. "A lot of smaller catchments like storm water retentions and lakes are absolute breeding grounds," he explained. Tilapia, which is native to Africa, South and Central America, Southern India and Sri Lanka, was first introduced into Australia in the 1970s. They're particularly sinister because they compete for resources with native fish, and the effective way they reproduce. The adults carry their eggs and small fry in their mouths, and these can survive for a long time after the adult dies. In order to reduce any value being associated with the species, fishers are banned from eating the species, using it as bait or returning it to the water dead or alive. It's not a rule that Scott agrees with, arguing that in countries like the Philippines, where tilapia is also invasive, citizens are allowed to eat the species. "They eat it by the bucketload," he said, having recently returned from the country. Scott explained he visits a number of locations around his local area, with impressive results. "If I find a place fully infested, I'll attack it multiple times until it's under control," he said. One particular creek in the Gold Coast used to have "thousands" of tilapia in it and now when he visits, he only gets a "handful", suggesting his efforts appear to be making a big difference. What's more, people who watch his videos are starting to get out into nature and do the same. "I'll go out now and six other people will be there and say hello," he said. Bring Scott Clark's Pre-Surf Fire Cider To The Beach This Weekend
Scott Clark knows a little about being on the coast. His restaurant, Dad's Luncheonette, is a train caboose parked on the Pacific Coast Highway in Half Moon Bay. This casual destination, which serves simple but thoughtfully prepared sandwiches, bowls of soup, and slices and pie, overlooks the Pacific Ocean. 'That's the water I'm in every day of my life, fishing and kayaking, foraging and surfing,' Clark writes in his recent cookbook Coastal: 130 Recipes from a California Road Trip. It is a decidedly different life than the one he was leading as chef de cuisine of Saison in San Francisco, a restaurant with three Michelin stars and ranked 27 on the list of the World's 50 Best Restaurants while he was there. The grueling workload of fine dining doesn't leave much time for surfing in the Pacific Ocean or, as the name of his train caboose restaurant suggests, being a parent. The recipes in Coastal illustrate Clark's decision to leave behind fine dining in 2017 and embrace a more casual lifestyle with his family, without forgetting the knowledge and skills that made him a great chef. It's the perfect companion to an early-morning beach trip, when you need a sip of something to warm you up and get you ready to dive into the cold waters of the Pacific Ocean. It's also a sophisticated, cheffy spin on the health-conscious fire cider trend, which leans on insights from folk medicine to boost the immune system. 'This is a digestive, immune-boosting ripper. I go nuts for it. I chug a hefty pour before surfing because it gets me loose,' Clark writes. 'You can also slam it into cold water, pour it over ice, make a tea with it, whisk it into salad dressing, or if you're feeling real frisky, blend it into a Bloody Mary. But beware: It's not the easy sipper you're looking for; it's a shot of nature's high-octane fuel.' Pre-Surf Fire Cider Ingredients 2 cups unfiltered raw apple cider vinegar ½ cup unpeeled, chopped fresh ginger ½ cup peeled, chopped fresh horseradish root ½ cup garlic cloves, peeled and smashed ¼ cup peeled, chopped turmeric 3 Tbsp honey, plus more as needed 2 serrano chiles, halved lengthwise Peel of 1 lemon, preferably Meyer, pith removed Peel of 1 navel orange, pith removed Peel of 1 grapefruit, pith removed ½ tsp black peppercorns ½ tsp pink peppercorns ¼ tsp fine salt, such as Maldon Instructions In a large mason jar, combine all the ingredients. Use a wooden spoon to push the solids down to submerge them in the vinegar. Crank a lid on the jar, give it a good shake, and store it somewhere dark and cool for 4 weeks. Pour the cider through a fine-mesh strainer lined with cheesecloth into a clean mason jar. Discard the solids. Taste the cider and add more honey, as needed, 1 teaspoon at a time, until it's perfect for you. The cider keeps, in the fridge, for a few months.
