This own-label white chocolate tastes better than a Milkybar: 29 supermarket bars tried and tested
Purists may claim that it isn't chocolate at all, but the sweet, mild flavour of white chocolate is curiously comforting. According to Chantal Coady, the chocolate maker and retailer known as 'the Chocolate Detective', it's actually not that surprising: the sweet lactic notes 'might be the closest thing to breast milk', she explains, and trigger a subliminal sense of childlike bliss – for some of us at least. White chocolate is legally chocolate as long as it contains at least 20 per cent cocoa butter and 14 per cent dry milk solids, but there's another reason that connoisseurs should not completely dismiss it, says Spencer Hyman, the co-founder of speciality chocolate retailer Cocoa Runners. 'Even though it doesn't have the tannins and anthocyanins that you get in dark or milk chocolate, the cocoa butter itself actually has some flavour and aromas,' Hyman says. This is especially true when the cocoa butter hasn't been industrially deodorised to remove its natural scent, although sadly most has (want to taste the real deal? Having tasted 29 bars from the high street (saving a high-end product taste test for another day), I can confirm that there are still good options to be found on supermarket shelves to satisfy that white chocolate craving – including cooking chocolate. Brantford Bulldogs name new director of goaltending, has ties to Kitchener Rangers

(Shelby Knox/CTV News) The Brantford Bulldogs have announced Franky Palazzese, a former Ontario Hockey League (OHL) player, as the club's new director of goaltending. Bulldogs General Manager Spencer Hyman made the announcement on Monday. 'I am excited to work with current elite goaltenders Ryerson Leenders and David Egorov, and to build a great future stable of strong goaltending for years to come,' Palazzese said in a media release. 'I look forward to helping contribute to the goal of bringing an OHL Championship to Brantford.' Prior to his new role, Palazzese was the goaltending coach for Sarnia Sting for six years and a coach with the University of Toronto's Varsity Blues (Ontario University Athletics). Palazzese was also a former hockey player. From 2009 to 2014, he played with the Kingston Frontenacs, the Sudbury Wolves and the Kitchener Rangers. He played a total of 193 OHL games during his time. He also had stints with the American Hockey League and the East Coast Hockey League. The OHL's regular season begins in September.

Brantford Bulldogs announces new hockey operations team

It was announced Thursday that Spencer Hyman, the team's vice-president and chief operating officer, will be taking over as General Manager. Justin Ismael, the current Director of Hockey Operations, has been promoted to Assistant General Manager, while Mike Galati will become Director of Hockey Operations and Scouting. The Bulldogs also have two new Directors of Player Development, Adrian Vilaca and Gary Roberts. Roberts was in the National Hockey League (NHL) for 21 seasons. He played for the Calgary Flames, Carolina Hurricanes, Toronto Maple Leafs, Florida Panthers, Pittsburgh Penguins and Tampa Bay Lightning. Before joining the NHL, he played one season with OHL's Guelph Platers. 'This new and exciting addition will add tremendous value to the Bulldogs by leveraging their storied reputations as the go-to on and off-ice development team; a team that calls some of the best current and developing hockey players in the world as their clients,' a press release said. 'We are thrilled to welcome them to the Bulldogs.'
