Brisbane's newest restaurant might have the most breathtaking backdrop in the entire city

The River City is gunning for gold in Australia's dining scene, with a slew of world-class restaurants opening in recent months. But Brisbane's latest claim to fame? One of the city's newest riverside eateries, Supernormal Brisbane, was just named among the world's best new restaurants of the past year. And the city's culinary scene is showing no signs of slowing down, welcoming its latest dining venue, The Summit Restaurant, atop Mt Coot-tha last month. Perched on the edge of Brisbane's highest peak, The Summit Restaurant boasts some of the most sublime views of the city skyline out to Moreton Bay. The multi-million-dollar revitalisation of the heritage-listed venue – including a refined dining room, a vibrant brewpub-style public bar and an expansive verandah – has been brought to life by Mantle Group, whose resume includes The Charming Squire, The Sound Garden, Babylon and Tai Tai. At the kitchen's helm is Queensland hospo legend Kym Machin, who brings more than 30 years of culinary experience from top venues, such as Urbane, Bare Bones Society and Same Same But Different. Sustainability and seasonality are at the heart of the menu, which traverses Queensland's diverse climates, regions and native ingredients. Diners are encouraged to journey through themed sections titled Sea, Air, Land, Earth and Garden, with small plates to start and sweets to round out the experience. Machin said, 'When you're standing at The Summit, you can see for miles – from the city to the bay and out to the hinterland – and we wanted the menu to reflect that sense of scale and beauty.' Bread is baked in-house daily and paired with cultured butter, smoked salt and honey harvested from The Summit's own beehives. Other standout starters, including Elliott Heads' spanner crab salad and ocean trout gravlax, are served with fresh herbs picked from the restaurant's edible garden. Mains are best enjoyed as a share-style feast, with highlights including Moreton Bay prawns topped with native herb chimichurri, roast duck smoked over paperbark, almond-fed pork with pickled apples and pumpkin agnolotti in brown butter sauce. If you get decision anxiety, the kitchen can take the reins with two chef-curated tasting menus ($79 and $99). Or you can simply drink in the ripper views with a cocktail and a casual bite from the bar menu. The opening of The Summit Restaurant marks just the first stage of this multi-million-dollar transformation at Mt Coot-tha summit. While still in the planning stage, the team hopes to deliver the full transformation ahead of the Brisbane 2032 Olympic and Paralympic Games – complete with a two-level Pavilion venue, a boutique gin distillery and a cultural tourism experience that honours the mountain's rich history and significance.

The Australian dining scene has been recognised by Conde Nast Traveller as being among the best in the world, as two restaurants of our very own made the 2025 Hot List. Restaurateur power couple Josh and Julie Niland's innovative venue Saint Peter at The Grand National Hotel in Sydney has made the list. The 'nose-to-tail' seafood restaurant moved into the Paddington venue in mid-2024, an upgrade from its previously much smaller location on Oxford St. The Grand National has 14 luxury bedrooms within the boutique hotel as well as a walk-in bar for those who may desire a nightcap. Us Sydneysiders are a pretty lucky bunch. We're home to some of the most beautiful beaches on Earth, one pretty sweet white house with sails – and many of the world's greatest restaurants. Plus, we've got more new restaurants than we can throw a Croc at. We've always known our dining scene is world-class, and so do the reviewers at Condé Nast Traveller. Last week, the award-winning travel publication dropped its 2025 Hot List of the best new restaurants that have opened (or reopened) in the past 12 months – and one Sydney venue made the cut. Saint Peter, Josh and Julie Niland's game-changing seafood palace in Paddington – and Time Out Sydney's Best Special Occasion Restaurant 2025 nominee – was named as one of the best new restaurants in the world (read our five-star review here). And while the OG Saint Peter opened on Oxford Street way back in 2016, Saint Peter 2.0 reopened in 2024 at a brand-new address inside The Grand National Hotel. A project five-and-a-half years in the making, the new Saint Peter came complete with a slick bar and a 14-room luxury boutique hotel. The revolutionary scale-to-tail restaurant has changed the way we view and consume creatures of the sea – while championing sustainability one delicious bite at a time – with Niland serving up a dazzling menu featuring noodles made from coral trout bones, charcuterie from fish offcuts and Murray Cod fat caramel. Though this is special-occasion dining – the nine-course tasting menu will set you back $275 per person – the good news is you can drop in to the more casual bar area and enjoy Niland's creations (hello, yellowfin tuna cheeseburger) with a frosty Martini. Australians are pretty lucky to have many of the world's greatest restaurants right on our doorstep. With new venues swinging open their doors each month, we're almost too spoilt for choice. We've always known our restaurant scene is world-class, and so do the reviewers at Condé Nast Traveller. Last week, the award-winning travel publication dropped its 2025 Hot List of the best new restaurants that have opened (or reopened) in the past 12 months – and two of our very own Aussie venues made the cut. The first is Saint Peter at the Grand National, a revolutionary 'nose-to-tail' seafood restaurant by Australia's most celebrated chef, Josh Niland, and his wife, Julie. Unsurprisingly, this restaurant also features on our list of the best restaurants in Australia – and you can check out the full round-up here. In mid-2024, Saint Peter found a beautiful new home in Paddington's Grand National Hotel, which also features a walk-in bar and a 14-room luxury boutique hotel. The restaurant was previously located in a much smaller venue, just down the road on Oxford Street. While the second act of Saint Peter has found a new address, the game-changing dishes very much remain – think coral trout bone noodles, John dory liver pâté tarts, 12-day dry-aged yellowfin tuna, and even a sweet fudge made from the tuna's bone marrow. The Nilands are proving unstoppable too, having just opened another brand-new restaurant, Catseye Pool Club, this week. Located at The Sundays – a sparkling new $30 million hotel on Hamilton Island – the venue stays true to Saint Peter's nose-to-tail ethos, while expanding the menu to feature premium land-based proteins and fresh produce from the Queensland coast. The second Australian venue included in Condé Nast's list of the hottest new restaurant openings from the past year is Supernormal Brisbane – an Asian-influenced riverside eatery by hospo legend Andrew McConnell (the mastermind behind Gimlet, Apollo Inn, Marion, Builders Arms Hotel). While it shares its name with McConnell's beloved Melbourne original, which opened a decade ago, Supernormal Brisbane has been given a tropical makeover to match its breezy riverside setting. Melbourne favourites, like the famous New England lobster rolls, have made their way onto the menu, but there's also plenty of new dishes to try, including roast Yamba prawns with a tangy shio koji sauce and a slow-cooked Szechuan lamb shoulder served with spiced chickpea and coriander.
