A hotel spokesman said: 'The Hoxton is located in the heart of Edinburgh's West End, where Victorian and Georgian architecture rules, having been a hub for the city's expansion in the 19th century. 'A stone's throw from the city centre, the hotel serves as an ideal base to visit iconic cultural hotspots such as nearby New Town, Murrayfield Stadium, Castle Rock and Arthur's Seat. The Hoxton was launched by co-founder of sandwich chain Pret A Manger Sinclair Beecham when its first hotel was opened on the grounds of a former car park in Shoreditch, London, in 2006. The brand has since opened more than a dozen sites across the world, including in Amsterdam, Paris, Chicago, Los Angeles, Berlin and Rome. Guests at the Edinburgh branch can dine in trattoria-style bistro Patatino, where classic Italian cuisine meets traditional Scottish fayre. A luxury hotel chain has opened their first Scottish spot, as Edinburgh welcomes The Hoxton. With 214 rooms, the transformed townhouses are split over both sides of Grosvenor Street. The hotel is also home to an Italian restaurant, ballroom events space, an 'intimate' screening room and three houses. The Hoxton has hotels across the world including Vienna, Amsterdam, Chicago, Portland, Paris, Rome and more. The main building houses 150 rooms, with the remaining 64 in the townhouse across the road. They're split into categories - snug single, bunk rooms, cosy, roomy and 'biggy'. A spokesperson for the chain said: "Design throughout all rooms play into the building's Georgian-influenced architecture, with original features meticulously preserved by AIME Studios to celebrate the heritage of the property and Edinburgh as a whole. Walls are two toned in light and dark sage and divided by a dado rail, with whimsical touches such as pineapple coat hooks and fringe skirted armchairs offering a playful nod to the heritage of the townhouses." The restaurant, styled like a 'classic Italian trattoria', brings the Amalfi Coast energy to Edinburgh. The Hoxton Edinburgh is set to open on 1 July along with its modern Italian restaurant Patatino which is inspired by the trattorias of Sorrento. From 1 to 6 July the restaurant is offering 50% off all food. Patatino takes its name from an Italian term of endearment (literally 'little potato') and will offer 'joyous hospitality and a laid-back romantic atmosphere', and the menu combines hearty Italian dishes with local Scottish produce – many with a creative twist, including: Deep fried spaghetti squares with tomato and spicy basil pesto Linguine with shellfish bisque, Eyemouth crab and Amalfi lemon Pizza with 'nduja, haggis, jalapeño, hot honey and fior di latte Panettone pudding To start, menu highlights include Deep Fried Spaghetti Squares with Tomato and Spicy Basil Pesto; Arancini with Slow-Cooked Brisket, Pea and Smoked Tomato and Charcoal are followed by pastas including Linguine with Shellfish Bisque, Eyemouth Crab and Amalfi Lemon and Bucatini Cacio e Pepe, as well as sourdough pizzas topped with Scottish Buffalo Mozzarella, Tomato and Basil Pesto or, for the more adventurous, 'Nduja, Haggis, Jalapeño, Hot Honey and Fior di Latte. Desserts include a traditional Tiramisù, made to a recipe shared by the Hoxton's chef in Florence and Rome, and a Panettone Pudding, an Italian take on a bread and butter pudding. Seafood – including lobster and Scottish langoustines – is sourced from John Vallance fishmongers, while meat comes from third generation family butcher John Gilmour, which sources grass-fed beef from sustainable farms in Scotland. The drinks list offers creative spins on quintessential Italian cocktails, including spritzes – from the classic Aperol and Hugo serves to a refreshing Grapefruit and Olive Spritz – as well as 'House Special' negronis, finished tableside with a choice of peach, strawberry or Amalfi lemon mist garnishes. These sit alongside a signature selection of 'Made in Italia' serves created for Patatino by The Hoxton's bar teams in Rome and Florence, including a Pata-tini with Gin, Cocchi Rosa and RinQuinQuin, and the Solemn Pomace with strawberry-infused grappa, lime and sugar. The all-Italian wine list is split by region, mixing bottles from Italy's most respected winemakers with wines from up-and-coming artisan producers. To reach the restaurant diners may enter through the hotel lobby or from the street entrance which will be unmistakable with a scalloped stripe awning and dramatic florals. Inside the decor is vibrant hot pink with dramatic lighting. At its heart, a bite-sized interpretation of a Baroque-style Italian fountain is surrounded by banquettes upholstered in rich tones of mid-blue velvet, navy leather, and dark-stained timber. Patatino will open at The Hoxton, Edinburgh on Tuesday 1st July. The eatery will welcome customers on July 1, eight days after The Hoxton begins operating on June 23 2025 in the capital's West End. Lifestyle and leisure hospitality company Ennismore has signed four new hotel properties in Mexico. This expansion illustrates the company's commitment to growing its footprint in the Americas, now boasting over 70 operational and pipeline properties in the region. The new signings in Mexico represent landmark entries for Ennismore's various brands. Delano East Cape in Los Cabos will offer 117 guest rooms and 60 branded residences, set to open in 2029 with a 100-meter beachfront, multiple dining options, event spaces, and a wellness centre. Hyde Mexico City, opening later this year, will introduce 215 bohemian-inspired rooms, restaurants, bars, and wellness facilities. The Hoxton and Mama Shelter are also set to make their Mexican debut in Mexico City, with openings slated for 2028 and late 2025, respectively. Further expansion in the Americas includes Hyde Mazatlan and The Hoxton Nashville, both scheduled to open in 2027. The former will feature 150 guest rooms and 22 suites on Mexico's western coast, while the latter will offer over 200 guestrooms in Nashville. The company has also announced the integration of Balfour Miami Beach into the Morgans Originals collection. Balfour Miami Beach showcases 82 rooms and a rooftop pool deck. Ennismore's growth extends to the branded residence market, with more than 45 residential projects across 20 countries, including the US, Spain, Mexico, Saudi Arabia, and the United Arab Emirates. The company is known for its 25hours, Hyde, and Rixos brands, which it is now bringing to homeownership. In April 2025, Ennismore entered exclusive negotiations with Royal Holiday Group to add six all-inclusive resorts with over 1,600 rooms to its ALL Inclusive Collection. Three resorts in Puerto Vallarta, Cozumel, and Cancun will be renovated and rebranded as Rixos Hotels, marking Ennismore's arrival in Mexico. The remaining properties will retain their existing brand. Ennismore is also making its mark in Jamaica, collaborating with LCH Development to introduce two brands across three buildings, including luxury residences, private villas, and a 240-key branded luxury hotel.
