While most fruits and vegetables are better out of the fridge, where their sugars become deadened in the cold, I think the cucumber actively benefits from being eaten iced. Peeled, cored, chopped and left to sit in a bright green dressing of coriander, basil, lime and sweet chilli, and it becomes about the most refreshing way you could eat a cucumber. Ingredients 5 tbsp extra virgin olive oil A small bunch of coriander A small bunch of basil 2 limes, juice 4 tsp sweet chilli sauce (or a little honey and a pinch of chilli flakes) 2 cucumbers 6 apricots, halved and destoned 1x 225g block of halloumi, cubed 5 tbsp natural or Greek yoghurt 1 tsp Tajin (chilli and lime seasoning) Method Step Put 4 tbsp extra virgin olive oil in a blender with a small bunch each of coriander and basil, juice of 2 limes, 4 tsp sweet chilli sauce and plenty of salt and black pepper. Blend until smooth. Step Peel 2 cucumbers – either entirely or in alternate stripes. Halve each lengthways and remove the watery centres. Cut into 1cm slices. Put the cucumbers in a big bowl with all but 2 tbsp of the dressing. Mix well, cover and put in the fridge for at least 30 minutes, more if you like. Step Meanwhile, set a small frying pan over a medium heat with 1 tbsp oil. When hot, add 6 halved and destoned apricots cut side down. Cook for 2 minutes, or until browned, then flip and cook for another minute. Transfer to a plate and sprinkle with salt. Step Add 1x 225g block of halloumi, cubed, to the pan. Cook, using tongs to turn the pieces occasionally, until well browned all over. Set aside. Step Mix the remaining green dressing with 1 tbsp extra virgin olive oil, a pinch of salt and some more black pepper. Dot extra spoonfuls of dressing on the apricots. Sprinkle 1 tsp Tajin over everything and serve straight away.

CDC Issues New Salmonella Warning Over Cucumbers Sold In 18 States

A salmonella outbreak linked to cucumber items has reached 18 states, according to a Friday update from the Centers for Disease Control and Prevention, which identified the outbreak last week and said recalled cucumbers should no longer be on sale. The outbreak has been traced to cases in 18 states. (Photo by) The recall targets whole fresh cucumbers grown by Bedner Growers Inc. distributed between April 29 and May 19 to stores and businesses like Target, which issued its recall of the cucumbers on May 19. The outbreak has infected 45 people and hospitalized 16 across 18 states, according to the CDC, which noted the recalled cucumbers are not organic. The Food and Drug Administration said the cucumbers 'may have been sold individually or in smaller packages, with or without a label that may not bear the same brand, product name, or best by date.' Cases linked to the recall have been identified in California, Colorado, Kansas, Illinois, Indiana, Michigan, Ohio, Pennsylvania, New York, Massachusetts, Kentucky, Virginia, Tennessee, North Carolina, South Carolina, Alabama, Georgia and Florida, according to the FDA. States with the highest number of cases are Georgia and Florida, the latter of which is the headquarters of Bedner Growers. This is a developing story. Check back for updates.

Target recalling over 40 cucumber products as Salmonella outbreak spreads to 18 states: Update

The FDA recalled a series of non-organic cucumbers grown by Bedner Growers, Inc. that are currently under investigation for a salmonella outbreak. And now, Target is included in the cross-fire. At this point, the outbreak has affected 45 people in 18 states, and has almost doubled in three days ago. Target initially announced a recall of cucumbers and items containing the cucumbers on May 19, though Target specifically was mentioned in the FDA update on May 30. Compared to other companies that have recalled just one cucumber product, like Walmart, Target's recall list contains over 40 different products purchased between May 7 and May 21. Two of them are regular cucumbers, two are chicken salad products, and a whopping 38 of the recalled products are a sushi variety. The outbreak has resulted in 16 hospitalizations and zero deaths.

Earlier this month, the Food and Drug Administration (FDA) and the Centers for Disease Control and Prevention (CDC) announced a multistate investigation of a Salmonella outbreak linked to cucumbers believed to have been grown by Bedner Growers Inc. of Boynton Beach, Florida. That outbreak has so far sickened 26 people in 15 states. And now, that outbreak has caused Walmart to recall a select cucumber product from some of its stores. Here's what you need to know about Walmart's cucumber recall. What's happened? On May 22, Walmart announced that it was recalling a select cucumber product over fears that it had the possibility of being contaminated with Salmonella. The notice about the recall was published by the FDA a day later. According to the notice, Walmart is voluntarily recalling a cucumber product because it is believed Bedner Growers, Inc. may have supplied the cucumbers in the product. What cucumber product is Walmart recalling? The recall involves just one cucumber product—Marketside Fresh Cut Cucumber Slices that were produced in select Texas-area stores between May 13, 2025 and May 20, 2025. Here are the details of that product: Product Description: Marketside Fresh Cut Cucumber Slices UPC/PLU: 62969 Av. Unit Weight: 1.5 lbs Date Codes: All date codes up to 5/24/2025 A photo of the recalled Marketside Fresh Cut Cucumber Slices can be found here. Has anyone been harmed by the recalled product? Unlike with the wider cucumber recall, no known illnesses have been specifically linked to the recalled Walmart cucumber product. More than two dozen individuals are known to have been sickened by the cucumbers involved in the wider recall. What should I do if I have the recalled Walmart cucumber product? If you have the recalled Marketside Fresh Cut Cucumber Slices, you should not consume them or let them be consumed by anyone else, nor should you give them away. Instead, you should throw out the product or return it to Walmart for a refund. The recall notice also states that you should clean and sanitize surfaces that the recalled product has come into contact with in order to reduce the chances of cross-contamination. What is Salmonella? Salmonella is a bacterium that can cause potentially fatal infections in people. While most Salmonella infections can resolve within a week, individuals who are young or elderly, or those who have weakened immune systems, can experience more severe consequences from a Salmonella infection.
