Ottawa-born Tex-Mex restaurant sells more than 1 million fajitas a year

(Peter Szperling/ CTV News Ottawa) Maple syrup and poutine are dishes that are as Canadian as it gets, but fajitas, salsa and chips? Lone Star Texas Grill is not only Canadian, but began in Ottawa nearly 40 years ago, and now has 22 locations in Ontario. The restaurant started in 1986 when two football players, Val Belcher and Larry Brune from Texas, found themselves in the nations' capital playing in the CFL on the Ottawa Rough Riders 'They came to Ottawa to play for the Rough Riders, really enjoyed the city. And, they thought there was one thing missing though – The Texas flavour was missing. So, they took it upon themselves to open up, the first Lone Star Cafe, which is now Lone Star Texas Grill,' says Michael Caruso, regional director. 1.8 million people dined at Lonestar last year, according to the restaurant. 'I think it's just unique. And, I mean, a bunch of other companies tried along the way to, to do it. And I think something we have going for us is we haven't gone anywhere, and we've been we've been relevant. We've been present,' says Caruso. Known for their sizzling fajitas – the restaurant sold 1.2 million for dine in and takeout last year. Other items that make the restaurant famous are daily house-made Salsa and Chips, Cheesy Queso and margaritas. 'We were the first restaurant in Canada to bring Corona across the border,' says Caruso. 'We are also the number one purchaser for tequila, across restaurants in Canada as well.' It looks like a sunny weekend is in store for Waterloo region and there are lots of events to get you outside. Learn how to salsa in front of Kitchener's city hall Friday night at the Latin Heat event. Mark Eid Mubarak at Schneider Haus on Saturday with live music, dancing, henna, outdoor games and refreshments. At the Cambridge Butterfly Conservatory, Bumble the blue-tongued skink will celebrate his seventh birthday on Saturday with special events, a birthday card and treats. There's a Borscht Festival at the Ukrainian Catholic Centre, 15 Michael St., Kitchener Saturday afternoon. There will be different borscht to try for a fee, plus live music. The Guelph Handmade Market in the Park will take place on both Saturday and Sunday in Royal City Park. An art exhibition by Nehad Abdulkader called Childhood Roots will take place at 44 Gaukel St. in downtown Kitchener Saturday afternoon. The Royal City Roller Derby is holding a Pride Bout with the Rum Rollers taking on the Durham Region Roller Derby and Our Ladies of Pain facing the Georgina Roller Derby. Doors open at 3:30 p.m. Saturday at the Victoria Road Recreation Centre in Guelph. The Kitchener Panthers have two away games this weekend: Friday they're in London, then Sunday they'll head to Brantford. The Guelph Royals host the Brantford Red Sox Saturday at 1 p.m., then head to Welland on Sunday. Also, don't forget it's Father's Day this weekend. Inside city hall there will be literary artists doing readings and talks and visual artists will be set up around the atrium and the Bowman Room. City of Cambridge event page YKF turns 75 Saturday 10 a.m. to 3 p.m. Region of Waterloo International Airport The airport is hosting an open house to mark its 75th anniversary. Here will be a chance to tour the airport, see artwork in the airport and talk to the artists who did the work, and there will be several displays including a corporate jet, the Air Canada motorcoach and planes owned by the Waterloo Warbirds. Open Streets Saturday 12 p.m. to 6 p.m. Uptown Waterloo There will be live music, arts and crafts and games in Waterloo Public Square and Willis Way. The K-W Breakers will perform, Waterloo Kung Fu Academy will put on a demonstration, you can paint-a-rock with Button Factory Arts, or visit the art market with 20 local vendors. There will also be a knitting circle to mark World Wide Knit in Public Day.

Article content Salsa Daddy emanates happiness. Rick Martínez 's new cookbook is filled with light and levity, bright colours and vibrant flavours. Having recently marked five years of living in the Sinaloan town of Mazatlán on Mexico's Pacific coast, it reflects his love of salsa as much as it does his state of mind. Article content Article content Researching his first book, Mi Cocina (2022), took Martínez to 156 cities and all 32 Mexican states. He first visited Mazatlán in pursuit of its 'incredibly sweet shrimp' and chose not to return to New York City, where he'd lived for 20 years. That decision changed his life. 'I'm so happy,' says Martínez. 'It's been an incredible ride.' Article content Article content Part of Martínez's aim with the book was to create an escape. He frequently whips up salsa for one but recognizes that, more often than not, people make it for a crowd. 'There's an inherent joy and happiness that goes around salsa because it's communal. And you're typically very happy while you're eating it and probably drinking something that's going to make you even happier. And so, I wanted the book to be kind of the pre-game to that and start that festive, happy vibe.' Article content Martínez dedicated his second cookbook to salsa mainly because of feedback from his fans and followers. He featured 16 salsa recipes in Mi Cocina, thinking that would satisfy his audience's appetite, but they wanted more. 'I also just personally love making salsas,' says Martínez. Adding to his inspiration, he'd noticed a trend since moving to Mazatlán. Article content Article content 'Whenever I was invited to a family gathering or carne asada (barbecue), the thing I noticed about the family dynamic is that the elder folk in the family usually have the dishes they always cook. So it's like, 'My tía makes the rice, this cousin makes the beans, Abuelita (Grandma) makes the tamales.' And nobody steps on those toes. You step away. So, it doesn't really leave that much for the younger folks to make.' Article content Article content As a result, kids from 10 years old to young adults in their 20s are typically tasked with bringing salsa. Which makes sense, Martínez emphasizes — it's a relatively low-risk, low-investment dish, and you don't have to be an experienced cook to make it. More importantly, salsa is an opportunity for expression.
