Get Some Halloumi and Get Griddlin'
Good morning. I put a griddle on my propane grill a few years ago and haven't looked back. The flat surface is perfect for smash burgers and fillets of fish, for breakfast pancakes cooked alongside bacon and fried eggs, for seared lamb chops, for a butterflied pork loin and cut peaches. One other great use of the outdoor griddle? Melissa Clark's recipe for halloumi with corn, cherry tomatoes and basil (above), or indeed any halloumi recipe that strikes your fancy. You could absolutely make it in your kitchen, in a pan. But I love the theater of making it on a sheet of steel instead, under lights strung up between trees, and using my spatula to pile the cooked ingredients onto a platter warmed by the heat of the grill. The cheese gets crisp and browned (and deeply melty within), and plays beautifully with the corn and tomatoes. A little jalapeño and some raw sliced red onions add zing. As for the rest of the week. … There's perhaps no simpler meal to prepare on a weeknight than Eric Kim's recipe for gochujang buttered noodles, which scales up or down beautifully. New burger joint opens in heart of city
A NEW burger joint has opened up in the heart of the city and, if you like your patties smashed, it could be the place for you. Smashing Stack opened on Friday, June 27 and, after a slow beginning, its owner is proud that his blood, sweat, and tears are paying off. "I've lived in Salisbury for years, and I wanted to offer something different," said Kai White, the owner. Mr White said it was "smash burgers" that gave him an edge on his burger-flipping rivals. He said: "There's only one other place that does them. We got the idea from Hungary. He continued: "The way it's cooked, the burger caramelises on the outside and locks in the flavour. There's no seasoning, no extra ingredients, just the beef." Despite only being 29, the businessman has years of experience in food and hospitality, having worked in some Salisbury hotels and for household names, like Domino's - where he was an area manager. He said: "I've always worked in hospitality, and I used to work in hotels. I want to do something for myself instead of working for other people." He took the plunge to open his takeaway restaurant after Lee's Fish Bar closed. Mr White said: "The opportunity came up and we said, 'Let's go for it.'" The name of the restaurant has no particular significance. According to the owner, he "thought it was quite a nice name." It is also the name of the takeaway joint's signature burger, the 'Smashing Stack Burger', which has three patties, "triple cheese" and bacon. Asked if, a week in, he was still sure of his choice to open his own business, Mr White said he was "happy." Burger and loaded fries takeaway will open late to serve Chapel clubbers
A NEW burger takeaway is coming to Salisbury – and it plans to open late on Friday and Saturday nights to feed hungry clubbers. Smashing Stack will open at 37 Milford Street, directly opposite The Chapel Nightclub, at the end of June. The building used to be Lee's Fish Bar, which closed suddenly at the start of this year. It is understood that the owners have retired. Paper signs in the window say the new venture will offer smash burgers and loaded fries, and the 'best deals' will be available online. The new business is 'opening soon' (Image: Newsquest) The signs say Smashing Stack will open until 3.30am at weekends, allowing it to serve Chapel-goers when they leave the club. A website, does not have any more information about the venture. Companies House says it will be run by Salisbury local Kai White. When Lee's closed, one customer said: 'I heard he shut and is not re-opening; just going to enjoy retirement. Such a shame. Fantastic food and such a lovely couple.'
