Holywell: Owner shares vision for The Burnt Sausage bistro

Stephen (Stevie) Quinn and Lindsey Walton-Quinn, of Holywell, formerly ran the Bakehouse café in Greenfield Valley.
And after taking a rest from the eatery trade, they have now picked up the keys for their latest endeavour; The Burnt Sausage, formerly Kassidy's, on Holywell High Street.
Stevie, aged 54 and originally of Chester, said: "We're going to be doing nice, local, quirky food in there.

"It's going to include traditional sandwiches, breakfasts and flatbreads - and Lindsey will make all the cakes.
"We will be able to seat 50 inside and will be open for private parties.
"In terms of the name, it was between The Burnt Sausage and The Rusty Kettle - we thought Burnt Sausage stands out.
"For anyone who orders the big breakfast, I'm going to do a little chipolata and make it quite toasty."

Stevie explained how the Bakehouse café wasn't his and Lindsey's first foray into the food industry - as they met while working as touring caterers for worldwide music stars.
He said: "Bands and artists I cooked for on tour included Robbie Williams, Kylie Minogue, Coldplay, U2 - I cooked for the bands, the entourage and the production team.
"Lindsey's Canadian but we met in New York. She was a caterer too, but she also did logistics on the tours."
The couple, supported by their ten-year-old twin girls Ezmay and Rowann, have plenty of work to do in the coming weeks with painting and cleaning.
They hope to open the doors at The Burnt Sausage in the next three to four weeks.

"We're working on the menus now and have our first drafts done.
"It's opening as a quirky café bistro, but what it turns into we will have to wait and see!"
