Japan Tourism / Shirobara Dairy Factory Offers Visitors a Sweet Taste of Tottori Prefecture

When traveling in Tottori Prefecture, you're likely to see a lot of dairy products in adorable retro packaging labeled 'Shirobara Milk.' Locals are very familiar with Shirobara (White rose) — the milk is served with school lunches in all elementary and junior high schools in the prefecture. I visited the factory where it is produced to find out the secrets behind its delicious taste.
Located in central Tottori Prefecture, the town of Kotoura is at the foot of Mt. Daisen, the highest mountain in the Chugoku region of western Japan. In one corner of an expanse of farmland where grasses and corn are grown for cattle feed, stands the Daisen dairy agricultural cooperative's factory, which produces Shirobara milk. All dairy farmers in the prefecture are members of this cooperative, whose special focus on dairy farming makes it a rarity in Japan.One thing that sets this cooperative apart is their consistent practice of conducting monthly 'herd tests,' which include checking various factors about each cow, including its milk yield and milk composition and quality, as well as its reproductive status. Their motto is, 'There is no better product than milk.'
'The test is like a health checkup for the cows. Data in February show that the national average implementation rate (percentage of farmers conducting the test) is 51.3%, while the rate in Tottori Prefecture is 91.7%. The prefecture's rate has been maintained at over 90% in recent years and has ranked first in the country for 24 consecutive years,' Katsufumi Enokida, the head of the cooperative's sales division, said proudly.
One of the tests checks the somatic cell count (the numbers of white blood cells and cells shed from the mammary gland in the milk). This can increase due to disease or stress, so measuring it lets farmers quickly understand the physical and nutritional condition of their cows. Somatic cell counts in raw milk produced in Tottori Prefecture tend to be lower than the national average because dairy farmers in the prefecture identify cows that need treatment at an early stage and improve their conditions. For that reason, it is said that the prefecture's milk has a distinctly sweet taste with low levels of bitterness, odd flavor and astringency.
Support for farmers
The cooperative's dairy farming guidance department helps dairy farmers to keep their cows healthy. 'Our professional staff, including veterinarians, provide comprehensive support for about 90 dairy farms in the prefecture, from feed preparation and cow health management to milking hygiene,' Enokida said with a smile. The steady efforts of dairy farmers to carefully raise healthy cows, and the cooperative's support system, must be the secrets behind the delicious taste of Shirobara milk.
The factory has obtained FSSC22000 certification (an internationally recognized standard for food safety management systems), verifying its thorough level of quality control. The cows are milked twice a day, once in the morning and once in the evening, and the raw milk is transported to the factory. Only milk that meets strict standards is used in production. This ensures the delivery of safe, reliable and delicious milk.Factory tour
I took the Shirobara factory's popular tour. While tasting some Shirobara milk, we participants watched a video about the work of dairy farmers and the factory's production process. We saw the production lines for milk and yogurt while listening to explanations by the staff. The way the packages were quickly filled with milk emphasized the factory's commitment to freshness and quality control.After the tour, we had another glass of Shirobara milk at Cowy's Milk House, a shop operated by the cooperative on the premises of the factory. This second glass was even sweeter and tastier than the first! The shop sold dairy drinks, yogurt and sweets made from the milk. It really was full of 'white roses.'With summer already here, it's the right time for ice cream. The Shirobara two-layer coffee ice cream bar launched in March has a coffee flavor that makes the milk's richness stand out. The Shirobara blueberry and cream cheese premium ice cream showcases a perfect match between richly flavored ice cream and the sour taste of a sauce made from locally grown blueberries. The limited-edition Shirobara milk fresh rolled cake is also good as a souvenir.

Annapolis Valley community gathers to help pod of dolphins trapped in mud

A community near Canning, N.S., rallied on Sunday to help a pod of dolphins stranded in mud. Melissa Pineo and her family noticed about a dozen white-sided dolphins in the water near Pineo's home. They were enjoying the moment Sunday morning until the tide went out and the dolphins got stuck. "More and more of them were getting stuck in the mud and my partner and my dad and a couple other people from the community jumped in and kind of pulled them down into the water," said Pineo. Pineo said the dolphins were making high-pitched sounds of distress. Her mom, Kim, started making calls to anybody who might be able to help, including 911. A group of people tried to help the dolphins, using their bare hands and even pieces of rope. As word spread, more people arrived to offer assistance. "It wasn't the way I planned to spend my Sunday, but it was really cool to see the community come together like that," said Melissa Pineo. Members of the Marine Animal Response Society also responded. They said it became easier for the dolphins to escape after the tide came back in. "We were able to work with a local marine and diving company who had a boat to take some of our responders out," said Tonya Wimmer, the organization's executive director. "We had the right equipment and everything else to … try to wiggle [the dolphins] out of the mud." Wimmer said there were also concerns about people getting stuck in the mud as well. The Canning fire department arrived to help with that. Eventually, the dolphins were corralled back into deep water using the dive boat. "They're overheating, their ears are kind of not sensing where upright is yet," said Wimmer. "But between them and the local company with the vessel, they were able to encourage the animals to go back out and head out into the proper part of the [Bay of Fundy]." Wimmer says this type of event is common in the area as marine mammals move to find food. "They may not be able to figure out how deep the water is and just get caught out when the tide goes down," said Wimmer. Kim Pineo said her family members don't regret their efforts. "They were covered in mud, but it was quite an event. But ... they all said they would do it again even though they're quite tired and sore today," he said. MORE TOP STORIES

AMD to report Q2 earnings as Wall Street looks to AI, PC sales growth

AMD (AMD) will report its second quarter results after the bell on Thursday, giving Wall Street a better understanding of the AI chip market ahead of rival Nvidia's (NVDA) report later this month. The company stands to benefit from the resumption of its chip sales in China after the Trump administration briefly banned them in April, as well as the potential for pull-forward in CPU sales as manufacturers built up inventory to fend off the impact of tariffs on PC sales. AMD shares are up 47% year to date and 34% over the last 12 months, while Nvidia shares are up 33% and 66%, respectively. For the quarter, AMD is expected to see adjusted earnings per share (EPS) of $0.49 on revenue of $7.4 billion, according to Bloomberg consensus estimates. That would represent a 29% decline in EPS but a 27% jump in revenue. Part of the reason for that is that AMD is expected to take a $700 million hit from the Trump administration's ban on the sale of the company's MI308 AI chips for China. That's far lower than the $4.5 billion write-down Nvidia took in Q1 and the $8 billion it said it would take in Q2 due to the impact of the ban on its own China-specific chip. Trump reversed course on the ban last month, which should help make up for some of those losses in the coming quarters. AMD should also benefit from the launch of its MI350 line of AI chips, designed to go toe-to-toe with Nvidia's Blackwell-powered chips. According to AMD, the MI350 line, which includes the MI350X and MI355X, offers four times the AI compute performance and a 35x increase in inferencing capabilities versus its predecessors. 'We expect AMD to post higher results and higher guidance, as we see improving traditional server demand and latest generation share gains, as well as strong demand for MI355,' KeyBanc Capital Markets analyst John Vinh wrote in an investor note ahead of the company's earnings. AMD's Data Center segment is expected to bring in $3.2 billion in the quarter, up 14% year over year from Q2 2024 when the business generated $2.8 billion. Beyond the Data Center segment, AMD's Client business, which includes sales of CPUs for desktops and laptops, is expected to see $2.5 billion. That's a massive 71% jump versus the $1.4 billion it brought in during the same quarter last year. That anticipated increase is thanks to the anticipated pull-forward in laptop and desktop shipments to combat the Trump administration's tariffs. But it will also hurt sales in the back half of the year. 'Similar to [Intel], we expect AMD Client to benefit from tariff-related pull-in of demand in Q2, and that same benefit to likely reverse in 2H, leading to below-seasonal Q3/Q4,' BofA Global Research analyst Vivek Arya wrote in an investor note. 'For [Intel], new Street estimates for [Client Computer Group] now point to +4%/+2% [quarter-over-quarter growth] in Q3/Q4, below +7%/+4% prior to Q2 earnings and also below typical +9%/+4%,' Arya added. 'However, for AMD, we highlight Street estimates already embed the demand normalization, with Client estimates of +2%/+0% in Q3/Q4 well below typical +15%/+14%.'
