She showed off her huge sparkling ring as well as loved-up snaps with her mystery fiancé as they celebrated on a yacht in the United States.
Ellie wrote: "My most confident yes."
Ellie, who starred in the 2018 series of the ITV2 reality show, went public with her man last January as they puckered up during a windswept outing to the seaside.
Since her time on series four of Love Island, Ellie hasn't had the best of luck when it comes to romance.
In the villa, she fell for London socialite Charlie Brake.
The couple continued with their relationship on the outside, before he reportedly dumped her on Instagram while she was sat in the cinema with her pal Laura Anderson.
Ellie went on to enjoy a relationship with fellow Love Island alumni Michael Griffiths, who starred in the 2019 series.
The pair hit it off after they filmed Ex On The Beach together but their romance was rocky. Days after Michael said Ellie was The One, the couple split.
They briefly rekindled their romance, but it wasn't to be and they broke up for good.
Then, in 2021, Ellie found herself in the headlines thanks to a night out with England footballer Jack Grealish.
The pair were seen chatting together at a party before hitting the clubs in Manchester.
But it was all innocent, with Jack's childhood sweetheart Sasha Attwood confirming days later that they were still very much together.

Love Island fans speculate on future of show as Toni and Cach crowned 2025 winners
Love Island has crowned their 2025 winners as fans speculate what ITV has in store for the future Love Island 2025 has officially finished and with a bang, as the 2025 winners were announced on Monday night. After a rollercoaster of a season packed with unexpected twists, unlikely connections and plenty of drama, fan favourites Toni and Cach were crowned the winners of series 12. The pair beat runners up Harry and Shakira for first place, stealing the hearts of the public despite their rocky relationship. Toni, originally from Connecticut, flew over from the US to take part in the UK edition of the show and the gamble seems to have paid off as she found herself a real connection. The couple met in Casa Amor, when Cach came in as a Casa boy and they quickly became fan favourites. Though the pair are from opposite sides of the world, they have stated they plan to give their relationship a go outside the villa, with Toni, 24, moving to London to be closer to Cach. Despite their fair share of drama, particularly surrounding Harrison and Toni's previous connection, the couple revealed to host Maya Jama that they had dropped the "L-bomb" privately the night before the final. Following the result, viewers have been taking to Reddit to discuss whether series 12 will reshape the whole formula of the show moving forward after a raft of dramatic moments this time round. From Casa Amor boys being overwhelmingly popular this season, as three of them made it to the final, to an OG couple rekindling things a week before the series ended, this season changed the usual format of the show. Additionally, outspoken finalist Yasmin challenged the show's typical casting choices, bringing a completely different Islander attitude to any before - which was an instant hit with viewers. One user asked the question: "Do you think series 12 will change the way people approach being on Love Island in future? I feel like we had a decent amount of things happen this year that usually don't." The question sparked a huge reaction from other fans who speculated about the future of the show. One fan replied: "I hope so. The show was getting to be boring and too formulaic with everyone only staying in their original couples to be safe... The CASA boys were universally liked and made it to the finals. I loved the shake up!" Another viewer was unsure whether the shift would be a good or bad thing, writing: "I think messy authenticity won this season, and that will have an impact. However, whether that's a good impact (people being vulnerable and taking risks) or a bad one (people trying to perform or narrate their own messiness), I don't know." For others, season 12 will be one to beat considering all the drama. One fan stated: "This season was chef's kiss. It was SO good. It's gonna be hard to top honestly... Maybe in previous ones they've chosen people who would get along in the villa but after the success of this season, they may just bin that idea and go with the drama lol." One viewer pointed to the fact the show needs a 'villain' to keep things interesting, penning: "TO BE HONEST, you need some proper dirty dogs in the show. Yes, they aren't likeable, but f**k me it spiced it up. This series was the first back to its old ways." Still not everyone was keen on how divided the islanders seemed this year, as one viewer hoped this wouldn't be the case going forwards. They wrote: "I'm looking forward to not seeing another DIVIDE once was triggering enough!"

Love Island fans convinced show couple have secretly SPLIT after spotting tell-tale sign
Click to share on X/Twitter (Opens in new window) Click to share on Facebook (Opens in new window) LOVE Island fans have been left convinced that one show couple have already split as the show comes to an end. Eagle-eyed viewers think it is all over for one recently rekindled pair who were dumped from the ITV2 show just days before the final. In a telling move, Conor failed to acknowledge or thank his villa partner Megan in his post-villa social media message. Taking to Instagram after being booted and just moments before the final, Conor wrote: "The craziest 8 weeks of my life. Thank you so much for all the support. "Hope I did all you guys proud, especially my Irish people." Conor went on to share a series of snaps with his fellow axed Islanders but failed to post a photo with Megan. He further congratulated winners Toni and Cach in another social media snub to Megan. Viewers watching along at home were also left trying to spot them together in the audience with many claiming they could not be seen - fuelling further speculation that the pair could have secretly split over the weekend. One fan wrote online: "I havent seen Conor and Megan together all night!!" As another added: "Anyone spotted that Conor and Megan were sat apart?!" Elsewhere, when Megan was brought up to the sofa to be interviewed by Maya, she was not joined by Conor. Love Island champs Toni and Cach reveal how they'll spend £50k winnings as they beat Shakira and Harry Fellow couples Tommy and Lucy and Ben and Andrada were featured together in the segment. Megan and Conor were dumped from the villa just days before the final after failing to be voted as one of the most compatible couples in the villa. Following their show axe, fans noticed how Megan and Conor did also tellingly not return for the show's final vote - which resulted in the axe of Dejon and Meg. On Sunday night, 18 former Islanders returned to the villa to vote out one couple from the new bottom two, which comprised of Angel & Ty and Meg & Dejon. Fans quickly noticed the couple's absence and questioned why they did not take part despite still being in Spain and appearing on After Sun. The Sun can now reveal the real reason why Megan and Conor were absent from casting a vote with the other Islanders. "They were dumped as part of the public vote that also decided who was in the bottom two couples - so it wouldn't have been fair to let them vote," a source told the The Sun. "The vote was only for people who had been axed in previous dumpings, not the current one." 4 Megan was not joined by Conor in her first screen interview Credit: Shutterstock Editorial

Ahead of their victory, Toni and Cach spoke to former Islanders and Aftersun hosts Indiyah Polack and Amy Hart. After ours, of course…' Last night saw Toni and Cach congratulated by their co-stars as news of their win sunk in. But it seemed not everyone was happy for them. Blu Chegini appeared to totally dismiss their win and not celebrate with the others. Viewers know that Blu tried to get to know Toni, but she wasn't interested. The pair clashed more than a few times as they kept butting heads. Blu questioned Toni's intentions and accused her of playing a game to stay in the villa.
