Dominic Franks' viral onion tart sparks Upside Down Cookbook
In May 2023, UK-based food writer Dominic Franks posted a reel on his Instagram page featuring an upside-down puff pastry onion tart. Topped with cream cheese, layered banana shallots, the golden squares went viral overnight. With over a million likes, the reel has since got 40 million views, and counting. And this reel is what led Dominic on the path to turning author, and his recently-launched debut cookbook Upside Down Cooking (published by Dorling Kindersley) is an ode to the viral onion tart. While Dominic has been known for whipping up seasonal and rustic British recipes, he created the onion tart as he wanted 'a savoury version of the tart tatin' that he loved the concept of. 'I've always wanted to write a book, but I could see the potential of the 'upside down' concept as it was so popular on my social media. It took me roughly six months to write the book in the summer of 2024. I had many of the recipes already from trials on social media,' he says. The 'upside down' method is a culinary technique wherein ingredients are layered in a pan or dish in reverse order, and the dish is flipped before serving. Dominic adds that the onion tart aside, other popular recipes were the beetroot, red onion and feta tart, and the upside down tomato tart. 'The upside-down concept is so simple and once you try it you can see how easily adaptable and versatile it is for savoury and sweet recipes. They're also very easy and quick to create which is why the amateur cook likes it.' Featuring 85 recipes, Upside Down Cooking includes many of his inverted treats, smaller pies, family-sized pies, and desserts. 'Many people asked me what to serve with the pies and tarts so I wanted to create a selection of side-dishes such as fresh salads, soups. These are perfect to serve with my upside down creations,' says Dominic, who draws inspiration from old cookbooks such as Delia Smith's Complete Cookery Course, and television shows by Nigella Lawson, Jamie Oliver, and Rick Stein. 'I am very much an 'in the moment' cook so I don't spend a lot of time testing recipes,' says Dominic, 'I tend to make something, and if it works it's a go and if it doesn't then I don't include it. I think this is more realistic to how people cook in their everyday life. So, for the book, I would think of my favourite foods and imagine if they would work upside down. If they worked they were in the book!' And recipes that did make the cut include upside-down versions of an apricot, polenta, and almond traybake cake; spanakopita; banana toffee tart; beetroot tart tatin, among others. A surprising find was the upside down samosa. 'I grew up in London in the 1970s with many Indian friends and so Indian food was always a part of my life. I knew I wanted to include some recipes that reflect that in the book. My favourite Indian dish is the korma and I am working on an upside down version of that,' says Dominic, who is now working on his second book on the same concept. She also earned the Grandmaster title—becoming India's 88th GM and only the fourth Indian woman after Humpy, Harika Dronavalli, and Vaishali to do on 9 December 2005 in Nagpur, Divya grew up in a household of achievers. Her parents, Dr. Jitendra and Dr. Namratha Deshmukh, both medical professionals, never pushed her into chess. However, a four-year-old Divya picked up the the age of ten, she was flying out to represent India in age-group world tournaments. School, meanwhile, never took a backseat. Studying at Bhavans Bhagwandas Purohit Vidya Mandir, Divya juggled exams and tournaments like pieces on a sets Divya apart from other prodigies is her choice to pursue both education and chess—not as rivals, but as allies. After acing her Class 12 board exams, she chose distance learning to continue her academic she's studying sports psychology, performance science, and data analytics in chess—subjects she believes will sharpen her game and mindset.'It definitely means a lot. There's a lot more to achieve. I'm hoping this is just the start,' she said after her World Cup didn't enter this tournament as the top seed. In fact, in the 2023 Tata Steel Women's Rapid, she was a last-minute entry and the lowest-rated player in the field. Yet she finished ahead of world champion Ju 2024, she clinched the World U-20 Girls Championship with a commanding 10/11 score. And in 2023, she bagged the Asian Continental Women's win was quiet, calculated, and consistent—like her victory over Humpy wasn't just a win over a great—it was a passing of the baton. The same Koneru Humpy, who once inspired young Indian girls to take up chess, now stood across from one of her successors. That 54th move may have been a small error, but it became the move that shifted Indian chess history With the World Cup in her pocket, Divya now qualifies for the Women's Candidates Tournament, the gateway to challenge Ju Wenjun for the world title. Mallika Sherawat denies joining Bigg Boss 19: Not doing and never will
New Delhi, Jul 29 (PTI) Bollywood actor Mallika Sherawat said she won't be a part of the upcoming reality show 'Bigg Boss 19" and has no plans to be in it in the future. The 'Murder" actor shared a post on her Instagram story on Monday. Following the rumours around her possible appearance in the show. 'Putting an end to all the rumours, I am NOT doing 'Bigg Boss' and NEVER WILL. THANK YOU," she wrote in the post. The actor has, however, appeared in the show last year for the promotion of the film 'Vicky Vidya Ka Woh Wala Video", which released in October 2024. 'Bigg Boss 19" is set to premiere in the late August and is an Indian adaptation of the American show 'Big Brother". The upcoming season was announced by the makers last week and have also introduced the new logo for the show. Sherawat's latest work is 'Vicky Vidya Ka Woh Wala Video". Also starring Tripti Dimri, Rajkummar Rao and Vijay Raaz, the film was directed by Raaj Shaandilyaa. It revolved around a freshly married couple, who gets threatened after a CD containing their private clips goes missing. Sherawat essayed the role of Chanda Rani in the film.
