Ingredients
Crust
3/4cup - oats — rolled
2/3cup - desiccated coconut
1/2cup - dates — Medjool, pitted
1/4cup - macadamia nuts
2Tbs - water
Filling
1 1/2cup - bananas — chopped
1/2 - avocado — large
2Tbs - sugar free peanut butter — extra
2Tbs - coconut oil — melted
1Tbs - cocoa powder
Method
For the crust, place everything in a food processor and blend until smooth. Grease an 18cm loose-bottom cake tin with some cooking spray.
Press the mixture into the tin to form an even layer.
For the filling, place everything in a food processor and blend until smooth.
Spread this over the crust and smooth it out.
Add a tablespoon or two of peanut butter on top of the cheesecake and ripple it in using the tip of a small knife.
Refrigerate for at least 2 hours or overnight before serving in slices.
Tip: You can garnish the cheesecake with salted peanuts, macadamias or edible flowers, if you prefer.

When I published my first book about my eating disorder at 30, I had to face some pretty uncomfortable truths about myself. That process cracked me open in the best way. Whether it's apologizing when I snap at a loved one or admitting when fear is driving my decisions, I've learned that taking ownership of my flaws helps me grow and connect more deeply with others. Don't be jaded I get it. Life throws punches. Maybe your parents had a rough marriage. Maybe your ex cheated. Maybe your former partner betrayed your trust. Being flexible allowed me to reinvent myself again and again. Make your five-year plan, but don't be afraid to rewrite it halfway through. Develop a hobby Hobbies aren't just for fun. They're lifelines. They give us a creative outlet, a way to cope with stress, and sometimes even lead to new opportunities. I've had many: sketching, salsa dancing, yoga, writing fiction, and starting a blog. When I hit a low point in my 40s, it was blogging that helped me climb out of it, and it eventually became my career. You never know where a hobby might take you. But even if it never leads to anything more, it's still worth it. Joy matters. Count your blessings Gratitude won't erase hardship, but it will help you through it. When I was a newly single mom on welfare, I started keeping a gratitude journal. Some days, all I could write was, 'I showered today.' Other times it was, 'A friend bought me gas,' or 'I got a new freelance gig.' Slowly, those moments stacked up and helped shift my focus. Officials are warning the public to stay out of the water near a popular resort on Lake Tahoe's Southern shore this weekend after detecting 'high levels' of E. coli bacteria Friday after a sewage leak. Water quality samples collected near the Camp Richardson Resort revealed elevated levels of Escherichia coli, commonly known as E. coli, according to the U.S. Forest Service's Tahoe Basin Management Unit. Immediately after the E. coli was detected, the resort conducted a sewer line inspection, located a leak and began repairs, the forest service said. Read more: 'This fire could have been prevented': How utilities fought removal of old power lines 'Although no illnesses have been reported, the public should avoid recreational waters that have been tested and found to have high levels of E. coli,' the forest service said in a news release. The forest service is advising swimmers, paddlers and boaters to stay out of the water from Jameson Beach to the Valhalla Boathouse in South Lake Tahoe, even though levels of E. Coli in test results for samples collected near the boathouse and Jameson Beach do not exceed state standards. One of California's most beloved summer destinations, Lake Tahoe saw officials close beaches on its northern shore last summer after a private contractor drilled through a sewer pipeline in Carnelian Bay, spilling 85,000 gallons of raw sewage into Lake Tahoe. The Lahontan Regional Water Quality Control Board conducted an investigation into the incident and last month Caltrans and the North Tahoe Public Utility District agreed to pay an $850,000 fine. Neurologist solves New York woman's mystery illness 6 years after her symptoms started

After many years and multiple doctors visits, a New York woman finally has answers to a medical mystery that drastically altered her life. Maureen Henry, of Rockland County, said she experienced uncontrollable cognitive problems, extreme fatigue, and involuntary face and body tics, but none of her doctors were able to pinpoint the problem until now. "Living with a mystery illness, it's very isolating," said Henry, who went six years without any answers to what was causing her symptoms. Uncontrollable symptoms forced Henry to quit her job at a hospital as a newborn photographer, the 58-year-old mother of four told CBS News New York. "They were constant, relentless," she said. "It was really hard. Once I stopped working, things got worse." The symptoms started at a very stressful time in her life, Henry said. They came on after she lost her parents to different illnesses on the same day. "Something in my brain just switched off," she said. Henry's medical mystery was finally solved by Dr. Christian Amlang, a neurologist and movement disorder specialist with Maimonides Health, she said. Amlang diagnosed Henry with functional neurological disorder, or FND, after she said she saw seven other doctors and took many medications over the years. "It is a condition that affects the brain communication. So there's a breakdown of certain, we call it, networks in the brain, and the result is that there is a disconnect between different parts of the brain, and the brain and the body," Amlang said. "We're not quite sure [what causes FND]. We do think that there are a lot of predisposing factors ... you know, trauma and psychological triggers." FND treatment does not include medication, the doctor said. It takes a multidisciplinary approach, including psychotherapy and neurological physical therapy, he said. "The point is not to necessarily be right or be good at these [exercises]. It's to be super engaged, mind and body," Henry said. "It's not a quick fix. It takes a lot of work." Henry said it took roughly four months of physical therapy before she started feeling more like herself. Now, Henry says she's "feeling amazing" and hoping to empower others when it comes to their health. "Be persistent. Keep advocating for yourself," she said. In fact, since finding the right doctor, she says she traveled, got trained in scuba diving and started living life to the fullest.
