
Griddled yogurt-marinated chicken with bulgur wheat and sour cherries

For the chicken
8 chicken thigh fillets
300g Greek yogurt
¾ tsp ground cayenne
1¼ tsp ground cumin
2 garlic cloves, grated to a purée
2 tbsp olive oil
finely grated zest of 1 lemon and juice of ½
For the bulgur
70g dried sour cherries
about 100ml fresh apple juice, or as needed
200g bulgur wheat
250ml stock, or boiling water
70g pistachios, toasted and roughly chopped (keep them chunky)
2 spring onions, finely chopped
20g flat-leaf parsley, leaves picked and chopped
20g mint, leaves picked and chopped
1 tbsp pomegranate molasses
1 tbsp honey
juice of ½ lemon
1 tsp ground cinnamon
1 tsp ground cumin
2 tbsp extra-virgin olive oil
Method
Step
Put 8 chicken thigh fillets on one side of a large sheet of baking parchment. Fold the other side of the parchment over the top.
Step
Bash the chicken pieces with a rolling pin until they are of an even thickness.
Step
In a large dish or bowl, mix together 300g Greek yogurt, ¾ tsp ground cayenne, 1¼ tsp ground cumin, 2 garlic cloves grated to a purée, 2 tbsp olive oil, and the finely grated zest of 1 lemon and juice of ½.
Step
Add the meat to the bowl, turning it over to coat fully.
Step
Season, cover with cling film and put it in the fridge to chill. Leave the chicken to marinate for anything from 2 hours to overnight.

Put 70g dried sour cherries into a small saucepan and add enough fresh apple juice (about 100ml) to cover.
Step
Bring it to the boil then pull off the heat and leave the cherries to plump up for 20 minutes.
Step
Meanwhile, put 200g bulgur wheat and ¼ tsp salt in a medium bowl and pour over 250ml stock or boiling water.
Step
Cover the bowl with cling film and leave for about 20 minutes.
Step
Remove the cling film and, using a fork, fluff up the wheat to separate the grains. Season.
Step
Add the sour cherries with their juice, 70g toasted and roughly chopped pistachios, 2 finely chopped spring onions and 20g each of chopped flat-leaf parsley and mint, then toss to mix.

Put the 1 tbsp pomegranate molasses, 1 tbsp honey, juice of ½ lemon, 1 tsp each of ground cinnamon and ground cumin and 2 tbsp extra-virgin olive oil into a small jug and whisk everything together.
Step
Pour this on to the grain salad and mix well. Cover. It will be served at room temperature.

Put an ovenproof dish into the oven at a low heat (160C/150C fan/gas mark 3 is fine).
Step
Heat a griddle pan until very hot – if you sprinkle on some water it should sizzle.

Shake the excess marinade off each piece of chicken and cook them on the dry griddle pan, cooking as many as you can at one time and putting the pieces into the dish in the oven as soon as they're ready (about 5 minuted on each side – they must be cooked through).
Step
Arrange the chicken on a warmed platter and serve with the bulgur.

I present to you my new favourite summer burger, which has been on our menu at home ever since its arrival in my kitchen. It's one of those recipes where the ease is almost embarrassing. How can something so delicious be so straightforward? The burgers themselves are a simple food processor job; if you don't have one, use chicken mince and make sure you really mix in the curry paste and courgette by hand. The accompaniments are also key: the lime-pickled shallots, the abundance of herbs and the creaminess of the mayo all work so well together. Turn up to a barbecue with a tray of these and I guarantee you'll be dishing out the recipe in no time. Prep 10 min Cook 30 min Makes 4 3 shallots, peeled and finely slicedSea salt and black pepper2 limes500g skinless and boneless chicken thighs1 courgette (about 250g), trimmed and coarsely grated2 tbsp red Thai curry paste 4 burger buns 4 tsp chilli jam 4 tbsp mayonnaise, to serve½ 25g bunch each fresh coriander and mint, leaves picked Put the sliced shallots in a small bowl and season with a good pinch of sea salt. Squeeze over the juice of one and a half limes, toss and set aside to pickle. Seven injured in Fourth of July boat explosion on Georgia lake
Seven people in Georgia were hospitalized on the Fourth of July after a boat explosion on Lake Lanier. Around 7 p.m., Hall County Fire Rescue responded to reports of the 23‑foot cabin cruiser ablaze on Landshark Cove. The incident, caught on video, sent flaming debris shooting into the air, with flames reaching almost five feet high. The seven people aboard the boat, which was being towed, sustained second or third-degree burns. According to the Georgia Department of Natural Resources and Hall County Fire officials, the victims ranged in age from 5 to 45 years old. "The operator towing the boat rescued all seven people and took them to waiting paramedics at Margaritaville," DNR officials said. Initial reports listed five injured, but that number later rose to seven as rescue crews assessed all passengers. Four injured people were transported to the Grady Memorial Hospital in Atlanta, with one of those being airlifted. Another passenger was taken by ambulance to Northeast Georgia Medical Center in Gainesville. Alongside these hospitalizations, two other people received treatment and were stabilized on-site. Officials confirmed that all seven were in stable condition when they left the scene. Hall County Fire Rescue did not provide any further updates when contacted by The Independent on Saturday. Fire crews from Hall County and Gainesville quickly brought the flames under control using a portable pump and a marine rescue boat. After extinguishing the fire, responders towed the smoking vessel to shore. The Hall County Fire Marshal's Office has launched an investigation to determine the cause of the explosion. As of now, no official cause has been identified.
