Instead, he embraces the time-honoured recipes many Thais grew up with – the kind you'd find at the street-side eatery – and brings them into a stylish, sit-down setting without losing their soul.
Sure, the dishes might not look exactly like what you'd find at a local stall, as they're a lot more polished. But the heart of each plate is still the same. Take sai krok Isan, for example, that classic fermented pork sausage you often see sizzling on street corners across the Big Mango. Chef Lek gives it an upgrade by using fragrant garlic from Phetchaburi and top-quality jasmine rice from Sisaket. It's served with all the familiar sides such as fresh cabbage, ginger, peanuts and herbs – just the way you remember it, only a little more dressed up.
When it comes to Thai classics, you just can't skip curry. And chef Lek doesn't disappoint. You'll find tom kha gai made with tender Korat free-range chicken in a rich coconut and galangal broth with local mushrooms, fragrant Bang Chang dried chili and a sprinkle of fresh coriander on top.
Then there's moo palo, a slow-braised pork belly stew made with kurobuta and served with an organic duck egg. The broth is deeply aromatic, thanks to Jim Thompson's signature seven-spice blend, with black and green cardamom adding that warm, lingering depth.
To finish the meal, there's a good selection of desserts to choose from. But the bread with ice cream and Thai red syrup is worth trying. It's soft bread topped with the homemade 'ice cream of the day' and drizzled with sweet, sticky red syrup. It's such a simple treat, but it brings back those sweet childhood memories.

What's happening between Thailand and Cambodia? Relations between two countries have been tense since a soldier was killed during gunfire over a disputed area in late May, but things deteriorated severely yesterday (Thursday July 24) with more fire exchanged over several different border zones after Thailand accused Cambodia of laying landmines in disputed areas. The affected areas reported are: along Thailand's Surin province and Cambodia's Oddar Meanchey (near the ancient Prasat Ta Moan Thom temple) and near Thailand's Ubon Ratchathani and Cambodia's Preah Vihear province (which is close to the Prasat Ta Krabey site). The Independent reports that according to the Thai health ministry, 14 civilians and a soldier have been killed and 46 people have been injured. Is it safe to travel? Since the exchange of fire began, Thailand has ordered the closure of its entire 817km border with Cambodia, and several countries, including Australia, New Zealand, Singapore, China, Hong Kong, the US, and the UK, have warned against travelling to the areas nearby. The Australian government has updated its travel advice for Cambodia and Thailand, amid growing armed conflict between the two countries. Weeks of tension over a border dispute between the south-east Asian neighbours escalated into deadly clashes that killed at least 12 people on Thursday. It comes after Thailand recalled its ambassador to Cambodia and planned to expel Cambodia's envoy in Bangkok, after a second Thai soldier in the space of a week lost a limb to a landmine. The Department of Foreign Affairs' Smartraveller website was updated on Thursday night to reflect the concerning developments. Impacted Cambodian provinces include Preah Vihear and Oddar Meanchey, where there are a number of famous temples popular with foreign tourists. 'We now advise to reconsider your need to travel to the border areas of the northern and north-western provinces,' Smartraveller states. 'Armed conflict between Thai and Cambodian military forces along the Thai-Cambodian border has increased. 'This includes reports of military strikes, violence, and the use of landmines in the border areas.' Tourists are urged to follow the advice of authorities, monitor local media for updates, and pay close attention to their personal security. Land border crossing points along the Thai-Cambodian border remain closed. Aussies should exercise normal safety precautions in other parts of Cambodia. Aussies travelling to the Thai provinces of Buriram, Si Saket, Surin and Ubon Ratchathani should also reconsider plans.
